Nonstick baking spray, for the pan
1 3/4 c. all-purpose flour, spooned and leveled
1 (3.4-ounce) box instant butterscotch pudding mix
1 tsp. baking powder
1 tsp. baking soda
1/2 c. (1 stick) unsalted butter
2 large, ripe bananas, peeled and halved lengthwise
1 c. packed dark-brown sugar
3 large eggs, lightly beaten
1 tsp. pure vanilla extract
1 tsp. kosher salt
Dulce de leche, toasted coconut, and flaked sea salt, for serving

Steps:

  • Preheat oven to 350°F with rack in the middle position. Coat a 10- to 12-cup Bundt pan with baking spray. Whisk together flour, pudding mix, baking powder, and baking soda in a bowl.
  • Melt butter in a large skillet. Add bananas and cook, stirring occasionally, until golden brown, 4 to 5 minutes. Sprinkle with sugar and cook until bananas break down. Transfer to a bowl; mash until smooth.
  • Whisk eggs, vanilla, and kosher salt into bananas. Add to flour mixture and stir until incorporated. Transfer to prepared pan; gently tap to release air bubbles.
  • Bake until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool in pan on a wire rack for 15 minutes, then invert onto a wire rack to cool. Drizzle with dulce de leche and sprinkle with coconut and flaked sea salt.

●1 package (18.5 ounces) yellow cake mix
●4 large eggs
●3/4 cup or 2 medium mashed ripe bananas
●1/2 cup vegetable oil
●1/4 cup water
●1/4 cup granulated sugar

Steps:

  • Preheat oven to 375° F. Grease 10-cup Bundt or round tube pan.
  • Microwave 1 1/3 cups morsels in medium, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10 to 15-second intervals, stirring just until morsels are melted. Combine cake mix, eggs, bananas, vegetable oil, water and granulated sugar in large mixer bowl. Beat on low speed until moistened. Beat on high speed for 2 minutes. Stir 2 cups batter into melted morsels. Alternately spoon batters into prepared baking pan.
  • Bake for 35 to 45 minutes or until wooden pick inserted in cake comes out clean. Cool in pan for 20 minutes; invert onto wire rack to cool completely.
  • Place remaining 1/3 cup morsels in small, heavy-duty plastic bag. Microwave on MEDIUM-HIGH (70%) power for 30 seconds; knead. Microwave at additional 10- to 15-second intervals, kneading until smooth. Cut tiny corner from bag; squeeze to drizzle over cake.

Warning! Addictive! This is such a delicious version of traditional banana bread and is extremely popular whenever I make it that I had to share it on Allrecipes! I got it from an old Bed and Breakfast recipe from a place in Maryland and make it every year around the holidays! I don't use the walnuts, but I hear that it is really good for those that like them. This recipe has definitely become a new tradition!

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup butter
¾ cup white sugar
1 large egg
3 ripe bananas, mashed
¾ cup butterscotch chips
½ cup chopped walnuts

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease 2 9x5-inch loaf pans. Set aside. Sift the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a bowl. Set aside.
  • Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Beat in the egg, then stir in the mashed bananas. Pour in the flour mixture, mixing until just incorporated. Fold in the butterscotch chips and walnuts; mixing just enough to evenly combine. Pour the batter evenly into the prepared pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 28 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

1 (15 ounce) yellow cake mix
1 (3 ounce) butterscotch instant pudding mix
1 cup water
3 eggs
⅓ cup oil
3 ripe bananas (mashed)
1 Tablespoon butter (melted)
2 Tablespoons milk
⅓ cup light brown sugar
¾ cup powdered sugar

Steps:

  • Preheat oven to 350 degrees. Grease and flour (or spray with non-stick cooking spray) a bundt pan and set aside.
  • In a large bowl, mix together the dry cake mix (don't prepare it as directed on the box), dry pudding mix (don't prepare it as directed on the box), water, eggs, and oil. Combine until fully incorporated.
  • Add the mashed bananas into the bowl and mix until combined.
  • Pour the batter into the greased bundt pan and bake for 45-48 minutes (or until a toothpick inserted in the middle comes out clean).
  • Pull the cake out of the oven when finished baking and let cool for about 45 minutes before inverting onto a plate.
  • When the cake has cooled, top with Butterscotch Glaze and serve.

1 3/4 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2-1 teaspoon cinnamon

1/4 cup butter, melted
1/4 cup milk
1 cup nuts, chopped (optional)
6 ounces butterscotch chips

Steps:

  • Mash the ripe bananas; set aside.
  • Sift together the flour, baking powder, baking soda, cinnamon, nutmeg and salt; set aside.
  • Combine mashed bananas, sugar, eggs and melted butter. Blend well.
