The batter for this easy-to-make banana bread is enriched with sour cream, which gives it a subtle tang and super moist texture. In order to avoid this quick bread becoming tough and chewy, don't overmix the batter.

1/2 cup (1 stick) butter, at room temperature, plus more for pan
1 cup sugar
2 large eggs
1 1/2 cups unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup mashed very ripe bananas
1/2 cup sour cream
1 teaspoon pure vanilla extract
1/2 cup chopped walnuts or pecans

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch loaf pan; set aside. In an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs and beat to incorporate.
  • In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture and mix until just combined. Add bananas, sour cream, and vanilla; mix to combine. Stir in nuts and pour into prepared pan.
  • Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 10 minutes. Let rest in pan for 10 minutes, then turn out onto a rack to cool.

I have been making this banana bread for years now.It comes from the Fanny Farmer Baking Book. I've tried others but none come close to this one. It is moist and flavorful. Wrapped tightly, it can be kept for a few days (If it lasts that long), and freezes well also. My kids like when I add about a half a cup of mini chocolate chips to this also.

Number Of Ingredients 9

2 1/2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
1 cup vegetable shortening
2 cups sugar
2 cups mashed ripe bananas (about 6 medium)
4 eggs, slightly beaten
1 teaspoon vanilla (my own addition;feel free to omit)
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a 9X5 loaf pan.
  • Stir together the flour, salt and baking soda.
  • In a large bowl, mix the shortening, sugar, banana, eggs, and walnuts (and vanilla if using).
  • Add the combined dry ingredients and stir just until the batter is thoroughly blended.
  • Do not overbeat as that will make your bread tough.
  • Pour into a prepared pan and bake for about 65 to 70 minutes or until a skewer inserted in the center of the bread comes out clean.
  • You may have to cover the bread with foil at some point during the baking to prevent over browning.
  • Remove from the oven and let cool for about five minutes in the pan, then turn out onto a rack to finish cooling.

1 cup sugar
2 eggs
1 cup mashed banana
1 cup flour
1 cup whole wheat flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup milk
1/3 cup of melted butter
3/4 cup brown sugar
3 tablespoons 15% cream

Steps:

  • Preheat oven to 350°F.
  • In a bowl, cream sugar with 1/2 cup of butter.
  • Add the eggs, one at a time, beating between each addition.
  • Incorporate bananas.
  • In a seperate bowl, mix flours, bake powder, baking soda, and salt.
  • Incorporate into previous preparation, alternating with the milk.
  • Pour into a greased 13"x9" pan.
  • Bake 40 minutes, until a toothpick comes out clean.
  • Mix melted butter with brown sugar and cream, pour over cake.
  • Return to oven on broil until the sauce is bubbling (do not overcook), approximately 5 minutes.

Adapted from Dr. Cookie's Cookbook, I've been asked to bake this banana bread instead of birthday cake for two friends. If there's a banana or two left from a bunch that end up too soft, into the freezer they go! When we have enough frozen bananas and a rainy afternoon, the fruit is thawed and used in this recipe.

1 1/2 cups canola oil
1 1/2 cups honey or 1 3/4 cups sugar plus 1/3 cup water
3 eggs
3 cups whole wheat flour
1 1/2 cups unbleached all-purpose flour
1 tablespoon baking soda
1 1/2 teaspoons salt
3/4 cup buttermilk
4 cups mashed ripe bananas (about 9)
1 tablespoon vanilla
optional - 1-1/2 cup chocolate chips (we prefer chocolate) or 3 cups walnuts (we prefer chocolate)

Steps:

  • Preheat oven to 350° F and grease two 9-inch loaf pans for bread OR.
  • preheat oven to 400° F and line three 12-cup muffin pans with paper liners.
  • Sift dry ingredients into a medium bowl; set aside.
  • In large bowl, mix oil, honey, and eggs; stir in buttermilk, bananas, and vanilla. Add dry ingredients and mix just until combined.
  • Fold in chocolate chips or walnuts and spoon batter into prepared pans or muffin cups.
  • Bake two loaves at 350° F for 75 minutes or until a skewer inserted in the center comes out mostly dry.
  • Bake 36 muffins at 400° F for 15-18 minutes.
  • NOTES: when frozen, banana peels will turn black. After thawing, simply snip off one end of the fruit with kitchen shears and "squish" the banana right out into the bowl for mashing. The bread will be a darker color than if fresh ripe bananas are used.
  • Do not use honey for children under the age of two.
