BANANA BREAD MUG CAKE
The most fun way to use up that last single banana just waiting to be consumed. 1 mug, 5 minutes, and a delicious single-serve mug cake!

Steps:
- Spray a microwave safe mug with cooking spray.
- In a bowl, or right in the mug, whisk flour, sugar, salt, baking powder, and soda. Add egg and combine until just incorporated with dry ingredients. Mix in vanilla, oil, milk and mashed banana.
- Pop into the microwave for up to 3 minutes, with no fear to stop and check after 90 seconds for doneness.
- Like all magical things that come out of the microwave, the inside of this will be hotter than the surface of the sun when you first remove it from the microwave. Give it a few minutes.
- Seriously, that easy.

Steps:
- Grease a microwave safe bowl or mug.
- In a small mixing bowl, combine your mashed banana and coconut flour and mix very well. Add your nut butter of choice and mix into it- It should be a VERY thick batter.
- Using a tablespoon at a time, add milk of choice until you reach a thick batter. Stir through the chocolate chips is desired.
- Microwave for 1 minute, or until cooked through.

- Combine ripe banana, brown sugar, white sugar, salt, baking powder, baking soda, melted butter, milk, and vanilla in a mixing bowl; use a potato masher to mash the mixture into a smooth puree. Add flour and mix until just combined. Stir in walnuts and chocolate chips until evenly mixed.
- Transfer batter evenly into two lightly buttered coffee mugs or cups. Tap a few times on a towel to settle everything down and ensure there are no air pockets.
- Microwave cups, one at a time, until a toothpick comes out clean, about 1 minute.
- Let cool before serving.
- Optional: Garnish each with banana slices and dust with sugar. Brulee the tops with a blowtorch.
