Blackened Salmon with Lima Bean Smashed Potatoes image

1 pound baby red-skinned potatoes, halved or quartered
Kosher salt
1 1/2 cups frozen baby lima beans (about 6 ounces), thawed
1/2 cup fat-free sour cream
2 tablespoons unsalted butter
Freshly ground black pepper
1 tablespoon paprika
2 teaspoons chopped fresh thyme
1 teaspoon cayenne pepper
4 skinless center-cut wild salmon fillets (about 4 ounces each)
1 tablespoon vegetable oil
3 scallions, sliced
Lime wedges, for serving

Steps:

  • Put the potatoes in a saucepan; cover with cold water by 1 inch and season with salt. Bring to a boil, then reduce the heat to medium and simmer 8 minutes. Add the lima beans; simmer until the potatoes are fork-tender, 4 minutes. Reserve 1/4 cup cooking water, then drain and return to the pot. Add the sour cream, 1 tablespoon butter and the reserved cooking water. Season with salt and pepper and smash.
  • Combine the paprika, thyme, cayenne and 1 teaspoon salt in a bowl; sprinkle on both sides of the salmon. Heat the vegetable oil in a large skillet over medium heat. Add the salmon and cook until browned and just cooked through, 3 to 4 minutes per side.
  • Stir the scallions into the potatoes and top with the remaining 1 tablespoon butter. Serve with the salmon and lime wedges.

  • Put 1 1/2 pounds baby potatoes in a saucepan; cover with 2 cups water and 1 1/2 cups white vinegar plus 2 pinches of salt. Reduce to a simmer and cook until tender, 12 to 15 minutes; drain. Toss on a baking sheet with 2 tablespoons olive oil. Flatten with a spatula and drizzle with 2 tablespoons more olive oil; season with salt. Broil, flipping, until crisp all over, 15 to 20 minutes.

2 pounds medium red-skinned potatoes, scrubbed
2 teaspoons kosher salt, plus additional for salting water
1/2 cup milk
3 tablespoons unsalted butter
Freshly ground black pepper
2 to 4 scallions (white and green parts), finely chopped

Steps:

  • Put the potatoes in a medium saucepan, cover with cold water, and season with salt. Bring to a simmer over medium heat and cook until potatoes are very tender, about 20 minutes.
  • Heat the milk and butter in a small small saucepan until hot. With a potato masher or large fork, roughly smash the potatoes, while adding the hot liquid. Stir in half of the scallions, season with the salt and pepper, to taste. Transfer to a serving bowl and scatter the remaining scallions on top before serving.

1 1/2 pounds baby red-skinned potatoes
Kosher salt
1 cup fresh parsley
1 scallion, roughly chopped
1 small jalapeno pepper, seeded and roughly chopped
1 clove garlic, smashed
Finely grated zest and juice of 1/2 lemon
1/4 cup extra-virgin olive oil
1 1/4 to 1 1/2 pounds flank steak
Freshly ground pepper

Steps:

  • Put the potatoes in a medium pot and cover with cold water by 1 inch; season with salt. Bring to a boil and cook until fork-tender, 15 to 20 minutes; drain.
  • Meanwhile, combine the parsley, scallion, jalapeno, garlic, lemon zest and juice, 2 tablespoons olive oil and 1/2 teaspoon salt in a mini food processor; pulse until finely chopped. Transfer to a small bowl and set aside.
  • Heat a large skillet over high heat and add 1 tablespoon olive oil. Season the steak with salt and pepper. Add to the skillet and cook until browned, 5 to 6 minutes per side for medium rare. Transfer to a cutting board and let rest 5 minutes.
  • Add the remaining 1 tablespoon olive oil and the potatoes to the same skillet; gently smash the potatoes with the back of a wooden spoon. Cook, stirring occasionally, until golden brown and slightly crisp, about 5 minutes. Season with salt and pepper.
  • Thinly slice the steak against the grain. Top with the parsley sauce and serve with the potatoes.

1 small potato, peeled and diced
1 onion, chopped
2 cloves garlic, minced
¼ pound fresh crabmeat, drained and flaked
salt and pepper to taste
1 small tomato, diced
1 (1.5 ounce) box raisins
¼ cup peas
1 red bell pepper, chopped
3 eggs, beaten

Steps:

  • Heat olive oil in a skillet over medium heat. Fry the potato in the hot oil until fork-tender, 5 to 7 minutes. Transfer the potatoes to a plate lined with paper towels and set aside. Return the skillet to medium heat. Cook the onion and garlic in the remaining oil until tender, about 5 minutes. Add the crab to the skillet and season with salt and pepper; stir.
