Quick Penne Pasta Salad with Balsamic Vinaigrette image

Convenient Muir Glen® diced tomatoes make this pasta salad super easy. Tossing it with a balsamic salad dressing gives it a tangy new twist!

Ingredients

8 oz cooked penne pasta
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, any flavor
1/2 cup balsamic vinaigrette
4 oz. fresh mozzarella cheese, diced (1 cup)
Chopped fresh basil for garnish, if desired

Steps:

Chop fresh basil for garnish, if desired.
In large bowl, toss pasta, tomatoes and vinaigrette. Serve immediately, or cover and refrigerated until serving.

Ingredients

1/3 cup balsamic vinegar
3 tablespoons olive oil
1/4 teaspoon pepper
2 garlic cloves, minced
2 teaspoons dry basil
2 teaspoons parmesan cheese
1 1/2 cups small shell pasta, of choice uncooked
3/4 cup broccoli, chopped into small flowerettes
1 red pepper, chopped fine
1 green onion, sliced fine

Steps:

Whisk first 6 ingredients together to prepare the dressing mix, set aside.
Cook the pasta of your choice.
While pasta is cooking, chop broccoli and blanch for 2 minutes.
Combine cooked pasta, blanched broccoli, chopped red pepper and sliced green onion.
Pour dressing mix on top of pasta mixture; toss to coat.
Chill until ready to serve.
**Note: Preparation can be accomplished while pasta is cooking, making this a very quick dish**.

I have been working on this most of the summer. I am using a balsamic vinaigrette called Cheltam House. Most definitely a sweeter vinaigrette than most! I have never liked "dry" pasta salad--I prefer most pasta salads mayo-based, but I love this salad dressing and wanted to try it on something other than a lettuce salad. I also prefer more veggies than pasta, so adjust the pasta to your style. I also hate soggy cheese and tomatoes in any salad, so I only make enough to eat in one sitting.

Ingredients

1 (16 ounce) box pipettes pasta or 1 (16 ounce) box bow tie pasta
1 (8 ounce) bottle balsamic vinaigrette
2 cups chopped ham
2 large tomatoes, chopped and seeded
2 cups lightly steamed asparagus
1 cup chopped black olives
1/2 chopped yellow pepper
1 large carrot, shredded
2 cups shredded smoked gouda cheese

Steps:

Clean and chop all veggies.
Boil pasta till al dente.
Add any veggies that you prefer lightly cooked to boiling pasta in the last 3 minutes of boiling (mine would be asparagus and carrots).
Drain pasta/veggies and rinse in cold water to stop cooking.
Add all veggies to pasta and mix.
Add ham.
Pour balsamic vinaigrette onto the pasta and mix--you can use less than the whole bottle but I prefer mine "soupy".
Serve immediately with the Gouda sprinkled over the top.
