Tasty pickles that take some time, but are easy to make. One crunch and you'll agree they are worth the wait!

10 cucumber, sliced
4 cups sliced onions
⅓ cup pickling spice
4 cups water
2 teaspoons ground turmeric
1 teaspoon celery seed
6 cups white sugar
2 quarts distilled white vinegar

Steps:

  • Place the cucumber, onions, pickling spice and water in a large bowl. Allow the mixture to stand 6 to 8 hours, or overnight.
  • Drain liquid from mixture. In a large saucepan, mix the cucumber mixture, turmeric, celery seed and white sugar. Pour in the vinegar, adjusting the amount so that it covers the mixture. Bring to a boil. Transfer to sterile jars. Store in the refrigerator.

Classic 'bread and butter' pickles are perfect with lunches, picnics and barbecues.

4 pounds 4- to 6-inch cucumbers, cut into 1/4-inch slices
2 pounds onions, thinly sliced
½ cup canning salt
2 cups sugar
2 tablespoons mustard seed
2 teaspoons turmeric
2 teaspoons celery seed
1 teaspoon ginger
1 teaspoon peppercorns
3 cups vinegar
Ball® Pickle Crisp® Granules
7 Ball® or Kerr® Pint (16 oz) Jars with lids and bands

Steps:

  • Combine cucumber and onion slices in a large bowl, layering with salt: cover with ice cubes. Let stand 11/2 hours. Drain; rinse; drain again.
  • Combine remaining ingredients except Pickle Crisp in a large saucepot; bring to a boil. Add drained cucumbers and onions and return to a boil.
  • Pack hot pickles and liquid into hot jars, 1/2-inch headspace. Add rounded 1/8 tsp Pickle Crisp® Granules to each jar. Remove air bubbles. Adjust two-piece caps.
  • Process 10 minutes in a boiling-water canner, adjusting for altitude.

Crunchy classic dill pickle slices bring extra zing to an ordinary sandwich.

2 tablespoons Ball® Mixed Pickling Spice
2 ½ cups cider vinegar
2 ½ cups water
½ cup granulated sugar
⅓ cup Ball® Preserving & Pickling Salt
3 bay leaves
3 garlic cloves
1 ½ teaspoons mustard seeds
3 heads fresh dill
8 cups sliced, trimmed pickling cucumbers (1/4-inch slices)
⅛ teaspoon Ball® Pickle Crisp® Granules
3 Ball® or Kerr® Pint (16 oz) Jars with lids and bands

Steps:

  • Prepare stockpot/canner and jars as directed in step-by-step instructions
  • Tie pickling spices in a square of cheesecloth, creating a spice bag.
  • Combine vinegar, water, sugar, pickling salt and spice bag in a medium stainless steel saucepan. Bring to a boil over medium-high heat, stirring to dissolve sugar and salt. Reduce heat and boil gently for 15 minutes, until spices have infused the liquid.
  • Place 1 bay leaf, 1 garlic clove, 1/2 tsp mustard seeds and 1 head of dill into each jar. Pack cucumber slices into hot jars, leaving 1/2 inch headspace. Add rounded 1/8 tsp Pickle Crisp® Granulates. Ladle hot pickling liquid into jars, leaving 1/2 inch headspace. Remove air bubbles; re-measure headspace. If needed, add more cucumbers to meet recommended headspace. Wipe rim; center lid on jar. Screw band until fingertip-tight.
  • Process filled jars in boiling water for 15 minutes. Remove stockpot lid. Wait 5 minutes, then remove jars, cool and store.
