Got this receipe from a cookbook "The Baldpate Collections". The Baldpate Inn is a wonderful bed and breakfast/lodge nestled in the Rocky Mountains near Estes Park, Colorado. If you are in the area, the Baldpate is a MUST see....and eat!

1 lb breakfast sausage, browned and drained (we like sage flavor)
0.5 (1 ounce) dry vegetable soup mix (Mrs. Grass, Knorr's)
1 cup swiss cheese, shredded
2 cups milk
1 cup baking mix
4 eggs, beaten or 4 egg substitute, equilvalent beaten

Steps:

  • Preheat oven to 400 degrees.
  • Mix together sausage, dry soup mix and cheese.
  • Spread evenly in a well-greased 9-inch glass pie pan.
  • Stir together the baking mix, milk and beaten eggs, pour over sausage mixture.
  • Bake for 30-40 minutes until golden.
  • After removing from oven, brush with melted butter.

1 9" unbaked pie shell
1/2 cup mayonnaise
3 beaten eggs
1 2/3 cups crabmeat
1/3 cup sliced red onion
2 tablespoons flour
8 ounces grated swiss cheese
1/2 teaspoon fresh thyme leave

Steps:

  • Combine ingredients and spread in pie shell.
  • Bake in 350° oven for 40-45 minutes.
  • Garnish each slice with fresh sprig of thyme.
  • Enjoy!

This recipe came from The Baldpate Inn, Estes Park, Colorado. Its a very hearty cornbread, practically a meal in itself. Goes great with stew or chili. Definitely not for the diet conscious.

1 cup butter or 1 cup margarine, at room temperature
1 cup sugar
4 large eggs
2 cups canned creamed corn
1/2 cup monterey jack cheese, shredded
1/2 cup cheddar cheese, shredded
1 cup flour
1 cup yellow cornmeal
4 teaspoons baking powder
1/4 teaspoon salt

Steps:

  • Heat oven to 350°F.
  • Grease a 13 x 9 inch baking pan.
  • Using an electric mixer, beat butter and sugar until blended and smooth. Add eggs, one at a time, beating after each. Gradually beat in corn and cheeses. Stir in remaining ingredients.
  • Spread evenly in prepared pan.
  • Place in oven, close door, immediately reduce heat to 300°F and bake 1 hour or until pick inserted in center comes out with moist crumbs. Top will still look moist.
  • Serve warm.

I saw this prepared on a morning talk show by a local bed and breakfast inn. This has a rich, wonderful flavor. Easy to prepare and only 5 ingredients!

1 jar dried beef
4 boneless skinless chicken breasts
4 slices bacon
1 (10 ounce) can cream of mushroom soup
8 ounces sour cream

Steps:

  • Preheat oven to 300 degrees.
  • Lightly spray 6X9 glass baking dish with Pam.
  • Line bottom of dish with dried beef slices.
  • Wrap 1 slice bacon around each breast (no need to secure with toothpicks).
  • Place chicken over beef.
  • Mix soup and sour cream together.
  • Spoon over chicken.
  • Cover loosely with foil.
  • Bake for 1 hour.
  • Excellent served over rice and with green beans.
