- Cook pasta according to package directions. Meanwhile, in a blender, combine the egg, sour cream and cottage cheese; cover and process until smooth. Transfer to a large bowl; add American and cheddar cheeses. Drain pasta; stir into cheese mixture until evenly coated. , Transfer to a greased shallow 3-qt. baking dish. Bake, uncovered, at 350° for 15 minutes; stir. Bake 15-20 minutes longer or until bubbly and edges begin to brown.

TRIPLE-CHEESE SPIRALS

- Bring a pot of salted water to a boil; add the pasta and cook until al dente, about 8 minutes. Meanwhile, melt 1 tablespoon butter in a saucepan over medium heat. Add the flour, mustard and cayenne and stir with a wooden spoon to make a paste. Cook, stirring, until the paste puffs slightly, about 1 minute. Whisk in both milks and 1/2 teaspoon salt and simmer, whisking occasionally, until slightly thickened and creamy, 6 to 7 minutes. Add the cheddar and jack cheeses and all but 2 tablespoons of the parmesan and whisk until melted; keep warm. Combine the panko, herbs and/or scallions, 1 tablespoon butter and the remaining parmesan in a microwave-safe bowl and microwave until the butter melts, about 1 minute; toss. Drain the pasta, reserving about 1 cup cooking water, and return to the pot. Toss with the remaining 1 tablespoon butter, then stir in the cheese sauce, adding the reserved cooking water if needed. Season with salt and top with the breadcrumb mixture.
CHEESY BEEF SPIRALS
"My mom shared this easy-to-assemble casserole years ago," recalls Brenda Marschall of Poplar Bluff, Missouri. "It's very good with garlic toast," she adds. Large shell macaroni or ziti noodles can be used instead of spiral pasta.

- Cook pasta according to package directions. Meanwhile, in a large saucepan, cook the beef, onions and garlic over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce and mushrooms; bring to a boil. Reduce heat; cover and simmer for 20 minutes., Place 1/2 cup of meat sauce in a greased shallow 2-1/2-qt. baking dish. Drain pasta; place half over sauce. Top with half of the remaining meat sauce; spread with sour cream. Top with process cheese and remaining pasta and meat sauce. Sprinkle with mozzarella cheese. , Cover and bake at 350° for 25-30 minutes. Uncover; bake 5-10 minutes longer or until bubbly. Freeze option: Freeze individual portions of cooled pasta mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little spaghetti sauce if necessary.

- Cook pasta according to package directions. Meanwhile, in a Dutch oven, melt 3 tablespoons butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add 2 cups cheddar cheese, 1/2 cup Parmesan cheese, salt and pepper., Drain pasta. Add to cheese mixture; toss gently to coat. Transfer to a greased 11x7-in. baking dish. Melt remaining butter; add bread crumbs and remaining cheddar and Parmesan cheeses. Sprinkle over top. Bake, uncovered, at 400° for 20-25 minutes or until golden brown.

- Drain well.
- Melt butter in small fry pan and saute onions for 4 minutes till tender.
- Stir buttered green onions through hot pasta.
- Add cream cheese, blue cheese and grated cheese.
- Blend well, season to taste.
- Spoon into shallow ovenproof dish.
- Bake in moderate oven 180 C for 15 minutes till all cheese is melted.
