BAKED SWEET POTATOES WITH TOPPINGS
You don't have to wait until Thanksgiving to enjoy sweet potatoes-try them in a salad, as a side dish, or for dessert.

Steps:
- Preheat oven to 400 degrees. Pierce 4 medium sweet potatoes (2 1/2 to 3 pounds) several times with a fork; place on a rimmed baking sheet. Bake until tender, 45 to 60 minutes. With a paring knife, cut an X in the top of each potato, and spread open. Add desired topping, and serve immediately.
- BASIC: Dot with softened butter, and season with coarse salt and ground pepper.
- SOUTHWESTERN: Layer with black beans, salsa, shredded Monterey Jack, and chopped cilantro.
- FRENCH: Crumble blue cheese over top, then sprinkle with chopped toasted pecans.
- ALL-AMERICAN: Dollop with sour cream; sprinkle with crumbled bacon and chopped chives.

- Preheat the oven to 425°F. Line a baking sheet with parchment paper or foil, for easy clean up.
- Clean the sweet potatoes by scrubbing underneath running water. Dry the skin.
- Poke each sweet potato with the tines of a fork.
- Place on baking sheet and bake for 50-65 minutes or until the thickest part can have a fork inserted with no resistance.
- Remove from oven and let cool slightly.
- Serve with butter, salt and pepper, or marshmallows, or brown sugar and cinnamon.

- Preheat oven to 475 degrees. With a fork, poke potatoes in several places. Arrange on a foil-lined baking sheet; bake until tender, about 40 minutes.
- Cut a deep cross in the top of each potato, and push the ends together to make an opening. Sprinkle inside with salt and pepper; dot each potato with 1 tablespoon butter and 2 teaspoons sugar. Serve.
