These stuffed jalapenos make a great party appetizer. The recipe can easily be doubled for a crowd.

Steps:
- Preheat oven to 450 degrees. In a small bowl, mix together cream cheese and cheddar. Season with salt and pepper. With a small spoon, fill each jalapeno half with about 1 tablespoon cheese mixture. Place peppers on a parchment-lined baking sheet and bake until cheese is browned and bubbling, about 10 minutes, rotating sheet halfway through.

- Preheat oven to 400°. Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes (the longer you boil the peppers, the milder they become). Drain and rinse in cold water; set aside., In a small bowl, beat the cream cheese, cheddar cheese and Worcestershire sauce until smooth. Spoon 2 teaspoonfuls into each jalapeno; sprinkle with bacon. Arrange on greased baking sheets. Bake until filling is warmed, 3-5 minutes.

- Slice peppers lengthwise, remove seeds and core; fill with cheese.
- Roll out sausage with rolling pin, between two layers of plastic wrap. Remove plastic from sausage, and wrap a thin coating of sausage around each jalapeno.
- Roll peppers in spicy seasoned coating mix.
- Bake at 350 degrees F (175 degrees C) for 15 to 25 minutes or until brown and sizzling and cheese is melted.

One of my favorite recipes! I love jalapenos and make these when nothing else hits the spot. Topped with sour cream or ranch dressing and chopped fresh chives, this is a great appetizer or snack. Serve with homemade sangria. Also great on the grill.

- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
- Place bacon in a skillet over medium heat, working in batches, and cook until bacon is translucent and still flexible, about 2 minutes per side. Set bacon aside.
- Trim membranes from jalapeno pepper halves to reduce heat. Rinse peppers and set aside.
- Place whipped cream cheese and Cheddar cheese into a bowl and mix until well blended; stir in Worcestershire sauce. Spoon cheese mixture into a pastry bag fitted with a large tip. Pipe the cheese filling generously into the pepper halves. Top each filled pepper with a precooked bacon strip and arrange onto prepared baking sheet.
- Bake in the preheated oven until cheese filling is bubbling and the bacon strips are lightly browned, 8 to 14 minutes. Serve hot.

When working with jalapeños, it helps to wear disposable latex or vinyl gloves. If you don't have gloves be sure not to rub your eyes until you wash your hand thoroughly with warm soapy water.

- 1. Preheat the oven to 375°. Line a baking sheet with foil.
- 2. Slice jalapenos in half lengthwise. Scrape out all the seeds and ribs from each jalapeño with a spoon.
- 3. Mix together all the filling ingredients except the jack cheese. Cut the jack cheese into 24 2- inch sticks. Pack the filling into the peppers and nestle a stick of jack cheese onto the filling of each one.
- 4. Arrange the peppers on prepared baking sheet and bake for 20-30 minutes, or until the cheese is bubbly and lightly browned, and the peppers are cooked.
- 5. Allow to cool for 5 minutes before serving.

- Cover a large baking sheet with foil; set aside.
- Cut each pepper in half lengthwise; remove the seeds and membranes (I always were plastic gloves for this, as the seeds are VERY hot, do not touch your eyes!).
- Stir together the cheddar cheese, cream cheese and Italian seasoning and fresh garlic in a medium mixing bowl.
- Spoon some of the cheese mixture into each pepper half.
- Beat together the eggs and milk in a small mixing bowl.
- Place the bread crumbs in a shallow bowl.
- Dip each pepper half into the egg mixture; and then roll in the crumbs to coat all sides.
- Place pepper halves (filled side up), on a prepared baking sheet.
- Bake at 325°F for 30 minutes, or until tender and heated through.
- Serve with guacamole or sour cream.

- Either slice the jalapeños in half lengthwise or slice off the top ⅓ (lengthwise) of each jalapeño to make a boat shape out of each pepper. Halved jalapenos will serve more, while boat-shaped peppers will have more filling.
- If making the boats, mince the tops and add them to the filling for some extra heat, or save them for another recipe. In either case, scrape out all the seeds and ribs from each jalapeño with a spoon (a grapefruit spoon works great).
