Easiest Ever Baked Stuffed Apples image

4 McIntosh apples
1/2 lemon
4 tablespoons butter, softened
3/4 cup whole-grain cereal with dried fruit (recommended: Mueslix)
2 tablespoons dark brown sugar
1/4 cup chopped walnuts
1 pint vanilla ice cream

Steps:

  • Heat the oven to 425 degrees F.
  • Trim the tops and scoop out the center and the seeds of each apple and rub the edges of the trimmed fruit with the lemon. In a medium bowl, combine the butter, cereal, sugar, and walnuts. Fill the apples with the cereal mixture. Set the apples upright in muffin tins and bake until tender and bubbly, about 20 minutes. Transfer to serving dishes, top with ice cream and serve hot.

You can use this recipe to make stuffed baked apples with my delicious cinnamon and brown sugar mixture and nuts of your choice, or you can make baked sliced apples, tossed with the same delicious brown sugar mixture. Either way, serve your baked apples warm. This recipe is vegan and gluten free, but if you like, you can serve the cooked apples with a good scoop of your favorite ice cream!

3 to 4 large baking apples, (such as honeycrisp, jonagold, or pink lady)
¼ cup brown sugar
1/2 cup lightly crushed nuts, (I used 1/4 walnuts and 1/4 cup pistachios)
¼ cup raisins, (cranberries, or other chopped dried fruit of your choice)
1/2 to 3/4 tsp ground cinnamon
1/4 tsp cardamom
1 to 2 tbsp Extra virgin olive oil,

Steps:

  • Heat the oven. Preheat the oven to 375 degrees F and adjust a rack in the center
  • Make the cinnamon and brown sugar mixture. In a small bowl, combine the sugar, nuts, raisins or dried fruit of your choice. Add the cinnamon and cardamom. Mix well.

6 -8 medium baking apples, cored but left whole and unpeeled
1/3 teaspoon cinnamon
1/3 teaspoon allspice
1/3 teaspoon clove, crushed
2 tablespoons butter
1/2 cup water

Steps:

  • Mix raisins and sugar together in a small bowl, and stand apples on bottom of slow cooker.
  • Spoon raisin/sugar mixture into centers of apples, dividing evenly among apples.
  • Sprinkle stuffed apples with cinnamon allspice and clove mixture, and dot with butter.
  • Add water along the edge of the cooker.
  • Cover, and cook on low for 3-5 hours or on high for 2 1/2 -3 1/2 hours, or until apples are tender, but not collapsing.
  • Serve warm as is, or with ice cream or frozen yogurt.

These apples are wrapped in crispy, buttery layers of phyllo dough and are stuffed as well as topped with a sweet mixture of oats and spices, which resemble "fruit crisp" topping. This is a relatively easy to assemble dessert with an eye-appealing presentation.

4 apples, medium, peeled and cored (Macintosh)
1 cup oats, rolled, old fashioned
1 cup brown sugar, loosely packed
1 teaspoon cinnamon, ground
1/4 teaspoon nutmeg, ground
1/4 teaspoon clove, ground
1/2 cup butter, melted
8 ounces phyllo pastry sheets, thawed (half of a box, found in the frozen desserts section of your grocery store)

Steps:

  • Preheat oven to 350°F.
  • In a medium mixing bowl, combine oats, brown sugar, cinnamon, nutmeg and cloves. Stir in 1/4 cup butter, tossing with a fork until crumbly texture achieved.
  • Place one phyllo leaf on a dry kitchen towel and lightly brush with butter, using remaining 1/4 cup of melted butter. Place a second leaf on top of first phyllo leaf and brush with butter. Repeat until four leaves have been used.
  • Place peeled and cored (whole) apple in center of layered phyllo. Gently pick up sides of phyllo and gather evenly around apple. Do not enclose apple. Leave the top of the apple exposed and the phyllo edges open. Brush butter lightly around exterior of apple. Repeat process with remaining three apples.
  • Pack oat stuffing mixture into cored center of each apple. Mound remaining stuffing atop exposed portion of apple.
  • Place each wrapped and stuffed apple in a baking dish, leaving space between so they do not touch.
  • Bake for 40-45 minutes or until phyllo and topping are golden brown and crisp, and apple is tender.
  • Serve warm.

1/8 c stevia
1/2 tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp ground cloves
2 Tbsp chopped almonds ( optional)
4 medium tart apples
3/4 c boiling water
1 pt nonfat vanilla frozen yougart

Steps:

  • 1. Preheat oven to 375 degrees Mix brown sugar and stevia together, add cinnamon, allspice, cloves and chopped almonds. Core apples and fill the cavities with the brown sugar mixture. Place the apples upright in the baking dish and pour the water around them. Bake until tender about 30 min. Transfer the apples to individual serving plates and serve with frozen yogurt.

1 teaspoon ground cinnamon
1 pinch ground nutmeg
1 tablespoon white sugar
2 tablespoons cream cheese
1 tablespoon dried cranberries

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cut the stem out of the apple and hollow out the center until it is about 1 1/2 inches wide without going through the bottom. In a small cup, stir together the cinnamon, nutmeg and sugar. Set aside half of this mixture, and mix the rest with the cream cheese and dried cranberries.

1 egg
1/4 cup Brown Sugar
1 Tbsp Cinnamon
Powdered Sugar as desired

Steps:

  • Cut off the top of four apples and remove the hearts.
  • Chop the pecans and the extra apple into small pieces. In a small bowl, mix the apple and the pecans with cinnamon and sugar. Add the vanilla and the egg and whisk them for a few seconds.
  • Fill the four apples with the pecan mix.
  • Bake the apples in a preheated oven (350°F) for 30 minutes.
