- Preheat oven to 450°. Place squash in a large bowl. Add oil and seasonings; toss to coat., In a shallow bowl, mix bread crumbs and cheese. Dip squash in crumb mixture to coat both sides, patting to help coating adhere. Place on parchment-lined baking sheets. Bake 20-25 minutes or until golden brown, rotating pans halfway through baking.

Steps:
- Slice squash and onion to 3/16-inch thickness using a mandolin.
- Melt butter and canola oil over medium heat in a large skillet. Add squash and onion to the hot pan and season with salt and pepper. Saute until vegetables begin to soften, about 10 minutes. Sprinkle with 3 tablespoons Parmesan cheese, reduce heat to low, and continue cooking for 5 minutes.
- Remove skillet from heat and sprinkle with additional tablespoon Parmesan cheese prior to serving.

- Cut peeled squash into 1" pieces.
- Place olive oil in a large bowl along with the garlic.
- Season with salt and pepper.
- Toss well and place into a greased shallow oven proof baking dish.
- In a small bowl, combine breadcrumbs and cheese and sprinkle over squash.
- Bake at 375*F for 35-45 minutes or until squash is tender and the topping is light brown.

- Wash squash and slice off the ends. Cut in half from stem end to tip. Remove the seeds with a spoon and either save for roasting or add to your compost. Lay halves cut side down on cutting board and slice crosswise into 3/4 inch slices.

- Wash the squash, cut off both ends, and cut each piece of squash in half lengthwise (or not if your squash is small.) Cut the squash into slices about 3/4 inch thick.
- Peel garlic if needed, and cut some of the bigger cloves in half. (Next time I'd definitely use the larger amount of garlic!)
- Toss squash and garlic with all the olive oil and then with the Italian Herb Blend (affiliate link), making sure all the squash pieces are lightly coated with oil.
