Baked Mustard-Crusted Salmon with Asparagus and Tarragon image

Gently baking salmon in a low-temperature oven ensures a moist and succulent fillet and only takes about 15 minutes. The asparagus cooks on the same baking sheet, making clean-up a breeze.

1 bunch thin asparagus (about 1 pound), trimmed
3 tablespoons olive oil, divided
3/4 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
4 (6-ounce) skin-on salmon fillets
8 teaspoons country-style or whole-grain Dijon mustard
3 tablespoons panko (Japanese breadcrumbs)
1/4 teaspoon smoked paprika
2 tablespoons chopped fresh tarragon

Steps:

  • Preheat oven to 275°F. Line a rimmed baking sheet with parchment paper. Toss asparagus with 2 Tbsp. oil, 1/2 tsp. salt, and 1/4 tsp. pepper on prepared sheet, then arrange in a single layer on one half of baking sheet. Bake asparagus 5 minutes.
  • Meanwhile, spread each salmon fillet with 2 tsp. mustard. Sprinkle fillets with 1/4 tsp. salt and 1/4 tsp. pepper total. Toss panko with remaining 1 Tbsp. oil in a small bowl. Sprinkle panko mixture evenly onto salmon fillets, then dust with smoked paprika.
  • After asparagus has baked for 5 minutes, remove baking sheet from oven. Place prepared salmon fillets skin side down on empty half of baking sheet. Return to oven and bake until salmon is firm but still pink in the center and asparagus is tender, 14-16 minutes more for medium rare salmon. Divide salmon and asparagus among four plates and top with tarragon.

1 tablespoon mayonnaise
¼ teaspoon lemon juice
1 teaspoon dried tarragon
1 teaspoon dried dill
¾ cup shredded mozzarella cheese
1 tablespoon grated Parmesan cheese, optional
4 (4 ounce) salmon fillets, skin removed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a glass baking dish by spraying with nonstick cooking spray.
  • Mix together yogurt, mayonnaise, lemon juice, tarragon, dill, mozzarella, and Parmesan in a small bowl. Place fish fillets into prepared baking dish, and spread evenly with cheese mixture.
  • Bake in preheated oven until fish flakes when tested with a fork, about 15 minutes.

One of my favorite things to eat is a beautiful piece of salmon, simply prepared allowing the fish to shine on it's own. This is just such a recipe.

4 salmon fillets
1 small onion, finely chopped
2 slices bacon, diced
3 ounces butter
1/4 teaspoon dried tarragon
2 tablespoons lemon juice

Steps:

  • Pre-heat oven to 400°F.
  • Butter (or spray with non-stick spray) one side of a large sheet of aluminum foil (double the size needed to hold the salmon fillets in one layer); place in a baking dish (butter side up) large enough to hold the salmon (again, in one layer).
  • Fry the finely chopped onion in butter in a frypan until soft and golden but not brown.
  • Add the bacon and tarragon and cook for another two minutes.
  • Stir in the lemon juice and remove from heat.
  • Place the salmon fillets on the foil in the baking dish.
  • Cover each fillet with some of the onion/bacon mixture and drizzle any pan juices over as well.
  • Fold the foil over the fish and seal to make a parcel.
  • Bake for 15-20 minutes, or until fish flakes easily with a fork.
  • May be served with a dollops of thick cream or creme fraiche (but I personally don't think it needs it!).

4 tablespoons butter
1 1/2 lbs salmon fillets
salt, to taste
1/4 cup white wine
1/2 teaspoon dried tarragon
4 teaspoons Dijon mustard

Steps:

  • Preheat oven to 400 degrees.
  • Melt 2 T. of the butter in a roasting pan large enough to hold the fish.
  • Put the fish in the butter and turn to coat. Sprinkle with salt.
  • Bake 20 minutes, turning once.
  • Meanwhile, in small saucepan, combine wine, tarragon, and mustard and bring to a boil over medium heat. Simmer for 2 minutes.
  • Remove from heat and swirl in the 2 T. remaining butter until melted.
  • Divide fish into 4 servings and top with the sauce.

1/4 teaspoon white pepper
2 tablespoons white wine or chicken broth

2/3 cup 2% milk

Steps:

  • Place salmon in a greased 2-qt. microwave-safe dish; sprinkle with salt and pepper. Pour wine over top. Cover and microwave on high for 4-6 minutes or until fish flakes easily with a fork. Baking salmon in kitchen foil seals in the juices and flavour of the fish and the tarragon. The quantities below are sufficient for four people.

4 salmon fillets
1 small onion, finely chopped
2 slices bacon, diced
3/8 cup butter
1/4 teaspoon dried tarragon
2 tablespoons lemon juice
heavy cream

Steps:

  • Pre-heat the oven to 400°F Fry the finely chopped onion in butter in a pan until soft and golden (but not burnt).
  • Add the bacon and tarragon and cook for another two minutes; then stir in the lemon juice.
  • Place a large piece of buttered kitchen foil in an ovenproof dish, place the salmon fillets on this and cover with the onion and bacon mixture. Fold over the foil and seal to make a parcel. Bake for 15-20 minutes.
  • Serve with a teaspoonful of heavy cream or creme fraiche and fresh vegetables.

1 1/2 lbs fresh salmon fillets, 1 inch thick,cut into 4 portions
1 tablespoon orange rind, finely shredded
1/4 cup orange juice
2 tablespoons olive oil
1 tablespoon fresh tarragon, chopped or 1/2 teaspoon dried tarragon
1 teaspoon fresh ginger, grated or minced (not from a jar please)
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Mix together orange zest, orange juice, oil, tarragon, ginger, salt, and pepper in a resealable plastic bag.

2 tablespoons olive oil
salt and ground black pepper to taste
1 medium lemon, sliced
1 teaspoon minced fresh tarragon
½ cup mayonnaise
½ cup sour cream
2 tablespoons minced fresh tarragon
2 tablespoons dill pickle relish
2 tablespoons drained capers, minced

1 tablespoon white wine vinegar
1 tablespoon minced lemon zest
1 teaspoon Dijon mustard

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Remove salmon skin and any pin bones; pat dry. Rub both sides with olive oil and season with salt and pepper. Arrange on the baking skeet.
  • Roast in the preheated oven until the thickest part is still translucent and an instant-read thermometer reads at least 125 degrees F (52 degrees C), about 15 minutes; salmon will continue to cook once out of the oven.
  • While salmon is roasting, prepare tartar sauce: combine mayonnaise, sour cream, tarragon, relish, capers, shallot, white wine vinegar, lemon zest, Dijon, sugar, Worcestershire, hot sauce, salt, and pepper in a bowl; mix until blended. Chill to blend flavors until salmon is ready.
