Baked Rock Oysters With Bacon, Cabbage and Guinness Sabayon image

A great dish for St. Patrick's Day --or any other day for that matter. From "The New Irish Table" by Margaret Johnson.

Number Of Ingredients 9

2 egg yolks
1/2 cup Guinness stout
1 dash fresh lemon juice
salt & freshly ground black pepper
1 cup unsalted butter, melted
4 outer green cabbage leaves, finely shredded
1 teaspoon canola oil
4 slices bacon, chopped (use traditional Irish or Canadian bacon)
24 oysters, in the shell

Steps:

  • To make the sabayon, in a double boiler, whisk the egg yolks, Guinness, lemon juice, salt and pepper together.
  • Place over barely simmering water, and whisk for 3 to 5 minutes, or until the sauce begins to thicken.
  • Remove from the heat, and gradually drizzle in the melted butter until the sauce is well blended.
  • Cook the cabbage in salted boiling water for 1 or 2 minutes, or until slightly wilted. Drain, and immerse in cold water. Drain again.
  • In a small skillet, heat the oil over medium heat. Cook the bacon until crisp. Using a slotted spoon, transfer to paper towels to drain.
  • Preheat the broiler. Shuck the oysters over a small bowl. Reserve the deeper half of each shell, and rinse them under cold water.
  • Place the shells on a bed of rock salt in a small, sided baking sheet.
  • Divide the cabbage among the shells; put an oyster on top of each, and sprinkle the bacon over the oysters. Spoon some of the sabayon over each.
  • Place under the broiler 4 inches from the heat source, and cook for about 3 minutes or until the sauce is browned and bubbling.
  • Serve immediately.

4 pieces thick slab bacon, pieces sliced into strips
1 large onion, sliced
1 large green cabbage head, core removed and sliced
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups water or 1 1/2 cups chicken broth

Steps:

  • Instructions.
  • In a heavy pot, cook the bacon until slightly crispy and add onions. Cook over low heat until softened. Add cabbage, water, and seasonings and cook over medium heat for 45 minutess until cabbage is very tender.

Found on California tourism website. Evidently this recipe won first prize in a Guinness St. Patrick's Day cookoff.

2 cups water
2 cups Guinness stout
3 tablespoons dark brown sugar
3 tablespoons light molasses
1/4 cup salt
6 -8 garlic cloves
3 teaspoons black pepper
2 teaspoons salt
2 teaspoons sage leaves
4 thick cut pork chops

Steps:

  • For brine, combine water, Guinness, brown sugar, molasses and salt. Soak the pork chops in mixture for at least 4 hours Overnight is fine.
  • Combine garlic, pepper, salt and sage to create rub.
  • Remove pork chops from brine and pat dry. Rub with the rub mixture on both sides. Grill chops until they are done to your satisfaction. Serve and enjoy.

Steps:

  • Preheat oven to 500°F.
  • Open shells; remove from shells and drain.
  • Place each oyster on a half shell with a small piece of bacon on top.
  • Sprinkle with salt, pepper and parsley.
  • Bake for 10 minutes; serve at once in the shells.
