MEXICAN SOUR CREAM RICE



Mexican Sour Cream Rice image

Baked rice with cheese, diced chiles, cilantro, corn, and sour cream. Would be great served with green enchiladas!

Number Of Ingredients 8

1 cup uncooked long grain white rice
1 (14 ounce) can chicken broth
1 cup reduced fat sour cream
1 (4 ounce) can diced green chile peppers
1 cup shredded Monterey Jack cheese, divided
1 (8.75 ounce) can whole kernel corn, drained
¼ cup finely chopped fresh cilantro
salt and ground black pepper to taste

Steps:

  • In a large pot, bring the rice and chicken broth to a boil. Reduce heat to low, cover, and simmer 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 1-1/2 quart casserole dish.
  • In the pot with the cooked rice, mix the sour cream, green chile peppers, 1/2 cup Monterey Jack cheese, corn, and cilantro. Season with salt and pepper. Transfer to the prepared casserole dish, and top with remaining cheese.
  • Bake uncovered 30 minutes in the preheated oven, until cheese is bubbly and lightly browned.

2 fresh poblano chilis
2 cups water
1 1/2 TBL butter
1 tsp salt
1 cup long grain white rice
1 TBL veg oil
1/2 cup chopped onion
garlic / fresh cilantro
1cup can corn
1/2 cup sour cream
2 1/4 cup sharp cheese

Steps:

  • char chilies, wrap in plastic for 10 min, peel, seed & chop. cook water butter salt & rice, fluff & cool. sautee onion & garlic, add chilis and corn to rice. mix sour cream cilantro some onion and cheese. Stir all together and bake in greased dish at 325 for 25 min.

1 lb hamburger
1 (10 ounce) can enchilada sauce or 1 (10 ounce) can salsa
1 (8 ounce) can tomato sauce
1 (15 ounce) can pinto beans
6 ounces corn chips (crushed)
2 cups cheddar cheese, shredded
1/2 teaspoon minced onion
1 cup sour cream

Steps:

  • Brown hamburger and drain.
  • Put into 1 1/4 quart.
  • casserole dish and add tomato sauce, beans, enchilada sauce, and onion and 1 1/2 cups cheese and corn chips.
  • Bake at 350 for 30 minutes.
  • Remove from oven and sprinkle whole corn chips around edge of casserole and put 1 sour cream in center.
  • Bake for 2-3 minutes longer.
  • Sprinkle remaining cheese on top of sour cream and serve.

1 -2 can chopped green chili
6 cups cooked rice
1 tablespoon vegetable oil
1/2 cup onion, minced
2 cloves garlic, minced
1 can whole kernel corn, drained
1 cup sour cream
1/4-1/2 cup chopped fresh cilantro
3 -4 cups grated white cheddar cheese (or to taste, may use White American or Monterey)

Steps:

  • Spray or butter a shallow baking dish.
  • Heat vegetable oil in skillet over medium heat.
  • Add onion and garlic and saute until tender.
  • Add chopped chilies and saute for 1 minute.
  • Mix chili onion mixture and corn into rice.
  • Combine sour cream and cilantro in a small bowl.
  • Add to rice and mix well.
  • Stir in cheese.
  • Transfer rice mixture to baking dish.
  • Bake at 325° for about 25 minutes.
  • (Can be prepared 1 day ahead).
  • Refrigerate.
  • Let stand 1 hour at room temperature before baking.
