MAPLE-CINNAMON BANANA-PEAR BAKED OATMEAL WITH WALNUTS
Baked oatmeal is like having dessert for breakfast! Made with healthy ingredients-bananas, pears, oats, nuts and maple syrup, it will leave you satisfied all morning.

- Preheat the oven to 375° Lightly spray a 8 x 8″ or 9 x 9″ ceramic baking dish with cooking spray; set aside.
- Arrange the banana slices in a single layer on the bottom of the ceramic dish. Top with the pears, 1/4 teaspoon of the cinnamon, 2 tablespoon of the maple and cover with foil.
- Bake 20 minutes, until the bananas get soft.
- Meanwhile, in a medium bowl, combine the oats, half of the walnuts, baking powder, 1/2 teaspoon cinnamon, and salt; stir together.
- In a separate bowl, whisk together the remaining maple syrup, milk, egg, and vanilla extract.
- Remove the fruit from the oven, then pour the oat mixture over the baked fruit.
- Pour the milk mixture over the oats, making sure to distribute the mixture as evenly as possible over the oats.
- Sprinkle the remaining 1/4 teaspoon cinnamon and walnuts over the the top.
- Bake the oatmeal for about 35 minutes, or until the top is golden brown and the oatmeal has set. Serve warm from the oven.

- Preheat oven to 350 degrees F (175 degrees C).
- Cut top quarter of pears off; create a well by scooping out the core, being careful not to puncture the bottom of the pear. Arrange pears in a shallow baking dish.
- Drizzle maple syrup over pears. Place 1 tablespoon brown sugar and 1 tablespoon butter in each pear; sprinkle with cinnamon.
- Bake in preheated oven until pears are easily pierced with a fork, 35 to 50 minutes. Serve with ice cream.

PEAR BANANA BREAD
A nice change from regular banana bread--it's super moist and the pears really boost the flavor. I developed this by combining the best elements of banana and fruit bread recipes. As one of the reviewers discovered, this recipe doesn't work with hard pears--they have to be soft so they can be mashed in with the bananas to form a puree. Also, this can be cooked more quickly in a muffin tin (about 20 minutes).

- Preheat oven to 375 degrees. Put pear wedges in an 8-inch baking dish. Cover with foil, and bake until beginning to soften, about 20 minutes. Add banana; dot with butter. Bake, uncovered, until fruit is softened and pale golden, 20 to 25 minutes more.
- Process dates, lemon juice, and cinnamon in a food processor until dates are coarsely chopped. With machine running, gradually add 1 cup cold water; process until smooth. Transfer to a saucepan. Bring to a simmer over medium-high heat; cook until thickened, 3 to 5 minutes. Serve immediately, or refrigerate, airtight, up to 2 days; reheat before serving.
- Divide fruit between 2 plates. Drizzle with date sauce; sprinkle with walnuts. Top each with 2 tablespoons yogurt.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Peel and core pear. Grate pear flesh into a bowl.
- Mix brown sugar and butter in a bowl with an electric mixer until well blended. Mix in eggs, then add bananas and pear. Gradually mix in flour and baking soda. Add vanilla, cinnamon, ginger, and almond extract; mix until just combined. Pour into the prepared loaf pan.

- Combine apples and bananas and put into a shallow baking dish.
- Sprinkle with lemon juice.
- Combine remaining ingredients except vanilla in a saucepan and boil until sugar is dissolved.
