4 large potatoes (about 2 pounds), peeled and quartered
1/4 cup whole milk
1/2 teaspoon salt
2 tablespoons butter, melted divided
1 large egg, beaten
1 cup sour cream
1 cup cream-style cottage cheese
5 green onion, finely chopped
1/2 cup crushed butter-flavored crackers

Steps:

  • Cook potatoes until tender; drain. Place in a large bowl. Add milk, salt and 1 tablespoon butter; beat until light and fluffy. Fold in egg, sour cream, cottage cheese and onions. Place in a greased 1-1/2-qt. baking dish. Combine the cracker crumbs and remaining butter; sprinkle over potato mixture. Bake, uncovered, at 350° for 20-30 minutes or until crumbs are lightly browned.

  • Preheat the oven to 500 degrees F. Place 6 medium russet potatoes directly on the oven rack and bake until soft, about 35 minutes. Split each potato in half and scoop out the flesh; transfer to a large bowl. Add 1½ cups warmed heavy cream, 1 stick cubed salted butter, 1 1/2 teaspoons kosher salt and a few grinds of pepper to the bowl and mash well. Top with more butter.

8 ounces sour cream

2 teaspoons onion salt

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Place potatoes in a large pot of lightly salted water. Bring to a boil, and cook until tender, about 15 minutes. Drain, and mash.
  • In a large bowl, mix mashed potatoes, cream cheese, sour cream, milk, onion salt, and pepper. Transfer to a large casserole dish.
  • Cover, and bake for 50 minutes in the preheated oven.

2 lbs white potatoes, peeled and chunked
8 ounces cream cheese, divided
salt and pepper

Steps:

  • Cook potatoes in separate pots until soft enough to mash.
  • Drain, saving 3/4 c cooking water from each potato pot.
  • Mash potatoes and sweet potatoes, adding 4 oz cream cheese to each.
  • Add cooking water, salt and pepper to taste.
  • Spoon potatoes, alternating each kind into shallow 2 and 1/2 quart microwave safe dish.
  • Lightly mix with tip of fork.
  • Either bake at 350 degrees, covered for 40 minutes to 1 hour, or microwave on high for 8 minutes.
  • Potatoes can be refrigerated for up to 2 days.

I was first served this dish at a holiday dinner and begged the hostess for the recipe. It is a rich and delicious way to serve two favorite potatoes in a single dish. It tastes wonderful and presents well. Your guests will rave over this one.

1 ½ pounds medium baking potatoes, peeled and quartered
3 large sweet potatoes, peeled and quartered
¼ cup salted butter
4 large shallots, minced
1 cup heavy cream
1 cup sour cream
½ teaspoon salt
¼ teaspoon ground white pepper, or to taste
⅛ teaspoon ground nutmeg
6 tablespoons salted butter, melted
½ cup dry bread crumbs
¼ cup minced fresh parsley

Steps:

  • Place white potatoes in a large pot and cover with salted water. Place sweet potatoes in a second pot and cover with salted water. Bring both pots to a boil. Reduce heat to medium-low and simmer, uncovered, until tender, about 25 minutes. Drain and set aside to cool in 2 separate bowls.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • While potatoes are cooling, melt butter in a small pan over medium heat. Add shallots and cook until tender, about 5 minutes. Remove from the heat.
  • Mash potatoes with a potato masher or ricer.
  • Beat cream in a chilled glass or metal bowl with an electric mixer until soft peaks form. Whisk sour cream into whipped cream.
  • Stir 1/2 of the shallot mixture into each bowl then gently fold in. Gently fold 1/2 of the cream mixture into each bowl. Divide salt, pepper, and nutmeg evenly between the two bowls. Taste and adjust seasoning.
  • Place 1/2 of the sweet potato mixture in a 2-quart baking dish. Layer 1/2 of the white potato mixture on top. Repeat layers once more, then swirl with a spatula to create a marbled effect.
  • Mix melted butter, bread crumbs, and parsley for topping together. Sprinkle topping mixture over potatoes.
  • Bake in the preheated oven until topping is golden brown and potatoes are hot all the way through, 30 to 35 minutes.

1 cup whole milk
1/2 cup (1 stick) butter, melted
1 1/2 cups grated mozzarella
1 cup freshly grated Parmesan
Salt and freshly ground black pepper
2 tablespoons plain dry bread crumbs

Steps:

  • Preheat the oven to 400 degrees F. Coat a 13 by 9 by 2-inch baking dish with 1 tablespoon of butter and set aside.
  • Cook the potatoes in a large pot of boiling salted water until they are very tender, about 15 minutes. Drain; return the potatoes to the same pot and mash well. Mix in the milk and melted butter. Mix in the mozzarella and 3/4 cup of the Parmesan. Season, to taste, with salt and pepper. Transfer the potatoes to the prepared baking dish.
