1 package (16 ounces) uncooked elbow macaroni
1/3 cup plus 1/4 cup butter, divided
3/4 cup finely chopped onion
6 tablespoons all-purpose flour
1 teaspoon ground mustard
3/4 teaspoon salt
1/4 teaspoon pepper
4-1/2 cups 2% milk
4 cups shredded sharp cheddar cheese
3/4 cup dry bread crumbs

Steps:

  • Preheat oven to 350°. Cook macaroni according to package directions for al dente; drain., In a Dutch oven, heat 1/3 cup butter over medium heat; saute onion until tender. Stir in flour and seasonings until blended; gradually stir in milk. Bring to a boil, stirring constantly; cook and stir until thickened. Stir in cheese until melted. Stir in macaroni. Transfer to a greased 13x9-in. baking dish., In a microwave, melt remaining butter; toss with bread crumbs. Sprinkle over casserole. Bake, uncovered, until heated through, 30-35 minutes.

2 cups uncooked elbow macaroni
½ cup butter
2 (12 ounce) cans evaporated milk
1 tablespoon ground black pepper
3 eggs
1 teaspoon salt
4 cups shredded Cheddar cheese
1 pinch paprika, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Spray a 9x13-inch casserole dish with cooking spray.
  • Fill a large pot with lightly salted water and bring to a boil. Stir in the macaroni and return to a boil. Cook pasta uncovered, stirring occasionally, until it has cooked through but is still slightly firm, about 8 minutes; drain.
  • Slowly melt butter in a large pot over low heat. Stir in evaporated milk and black pepper; cook until heated through.
  • Whisk eggs in a bowl until smooth; whisk about 1/2 cup of the evaporated milk mixture into the eggs, 1 tablespoon at a time, until thoroughly incorporated. Whisk the egg mixture back into the saucepan with evaporated milk mixture. Continue to heat gently, whisking constantly, until the evaporated milk mixture almost comes to a simmer and the sauce thickens.
  • Gently mix salt and cooked macaroni into the sauce and stir to combine.
  • Spoon 1/4 of the macaroni mixture in a layer into the bottom of the prepared casserole dish and top with 1 cup shredded Cheddar cheese. Repeat layers three more times; top last cheese layer with paprika to taste.
  • Bake in the preheated oven until casserole is bubbling, about 20 minutes.

This claims to be a lower calorie version of a simple baked macaroni and cheese. The eggs in this dish are what make it more like a pie. The recipe in the book is actually called "Low Calorie Pastiere." Recipe from a Boston, Massachusetts community cookbook entitled "The North End Union Italian Cookbook."

1 lb cottage cheese
1 cup grated romano cheese
1/2 cup chopped fresh parsley
4 cups cooked elbow macaroni

Steps:

  • Preheat oven to 325*.
  • In large bowl, beat eggs well. Mix in cheeses and parsley well. Stir in macaroni.
  • Pour mixture into a generously greased 8" x 12" pyrex baking dish. Bake for 1 hour or until knife inserted in center comes out clean. Let cool at least 5 minutes before serving to allow cheese sauce to thicken slightly. May need to be seasoned with pepper just before serving.

A new twist on this old favourite - it's baked in a pie plate with bread crumbs as a crust, then served up in a slice, just like a pie. Recipe from the famous "Junior's" restaurant in Brooklyn.

1/4 cup plain breadcrumbs
1 1/2 teaspoons salt
1 teaspoon olive oil
2 cups uncooked macaroni (will yield 5 cups cooked)
6 tablespoons butter (3/4 stick)
1/2 cup onion, chopped
1/2 cup flour
3/4 teaspoon dry mustard
1/2 teaspoon white pepper
1/4 teaspoon ground nutmeg
2 1/2 cups milk
2 1/2 cups shredded sharp cheddar cheese
1 drop red food coloring (optional)
1 drop yellow food coloring (optional)
paprika

Steps:

  • Preheat oven to 375 degrees.
  • Butter a 9-inch deep-dish pie plate.
  • Sprinkle bottom and sides with the bread crumbs.
  • Cook the noodles as directed on box (al dente), adding 1/2 teaspoon salt and the teaspoon oil.
  • You will need 5 cups of cooked noodles.
  • Meanwhile, melt butter in a large skillet over medium-high heat.
  • Add the onion and saute until soft, about 5 minutes.
  • Stir in flour and remaining teaspoon of salt, dry mustard, pepper, and nutmeg and cook for about 1 minute.
  • Gradually stir in all the milk and continue to cook until the sauce simmers and thickens.
  • Add 2 cups of the cheese, the optional food coloring, and stir until completely melted.
  • Remove sauce from heat and stir in the noodles.
  • Spoon macaroni into the pie plate, mounding high in the centre.
  • Top with remaining 1/2 cup of cheese and sprinkle generously with paprika.
  • Bake until the pie is golden brown and bubbly, about 25 minutes.
  • Let pie stand on wire rack for about 15 minutes to set before cutting.

32 ounces elbow macaroni
3 eggs
3 cups milk
4 cups shredded Cheddar cheese
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
  • Beat eggs and milk together. Pour half of the cooked macaroni into 9x13 inch baking dish. Cover macaroni with half of the cheese. Pour remaining macaroni into baking dish leaving a little room at the top. Cover with remaining cheese. Pour egg mixture over macaroni. Sprinkle with salt.
  • Bake in a preheated over for an hour or until a knife inserted comes out clean.

1 lb cooked elbow macaroni
1 cup whole milk
2 (12 ounce) cans evaporated milk
3 eggs
2 tablespoons sour cream
1 cup butter, cut into small pieces
1/2 lb colby cheese
1/2 lb monterey jack cheese, shredded
1/2 lb sharp cheddar cheese, shredded
1 lb Velveeta cheese, cut in chunks
salt
1 tablespoon whiter pepper
1 tablespoon sugar
1 cup shredded American cheese or 1 cup mild cheddar cheese

Steps:

  • Preheat oven to 350°C.
  • Put pasta in 9 by 13 dish and set aside.
  • Mix milks and eggs well.
  • Add the butter, sour cream and colby, Montery jack, sharp cheddar and velveeta cheeses to the pasta.
  • Pour milk and egg mixture over the pasta.
  • Season with salt , pepper, sugar and toss.
  • Sprinkle with remaining cups of American or Cheddar cheese.
  • Bake for 30 to 45 minutes or untill top is lightly browned.

Really tasty mac n cheese but with an extra cheese crust on top and much more flavour. You can add veggies or meats if you like. This is just the basic recipe.

Number Of Ingredients 10

450 g pasta (I use macaroni or shells, about 1/2 of a big bag)
8 ounces Campbell's Cream of Chicken Soup (1 can)
3/4 cup evaporated milk (you can use 2% or skim)
1/2 cup water
2 cups shredded cheddar cheese (for sauce)
1 egg, beaten
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon seasoning salt (sometimes I use Tex-Mex seasoning, use your favourite)
2 cups shredded cheddar cheese (for cheese crust)

Steps:

  • Boil pasta in a pot of water, add oil and/or salt if you desire.
  • Preheat oven at 400°F.
  • In another pot, pour Cream of Chicken Soup, evaporated milk, and water. Mix well with a fork or whisk until soup is dissolved.
  • Slowly add the shredded cheese one handful at a time (Don't dump it all at once or it will form clumps).
  • When all the cheese has melted, slowly pour in the beaten egg while whisking it into the sauce. Make sure that the egg is properly mixed into the sauce.
  • Once the pasta is cooked, drain, and leave it in its original pot.
  • Pour the cheese sauce into the pot of pasta and mix well.
  • Add the salt, pepper, and seasoning salt. You may vary the amounts of these according to taste.
  • In a rectangular baking dish (about 13" x 8") or whatever baking dish you have that it will fit into, pour the mac n cheese and level with a spatula.
  • Lastly, sprinkle remaining cheese on top and bake in the oven at 400 F for 20 minute or until cheese is nicely golden brown.
  • Good combinations to use in this recipe are green pepper and ground beef, sausage and onion, or chicken and peas. You will have to prepare these separately and put it into the pot of pasta after the cheese sauce.
