BAKED LEMON-PEPPER SHRIMP



Baked Lemon-Pepper Shrimp image

A quick and easy dish to put together and tastes really good, adjust your spices as needed. Serve over pasta or by itself.

2 pounds uncooked medium shrimp, peeled and deveined
1 drizzle olive oil
3 tablespoons fresh lemon juice
3 tablespoons minced garlic
1 tablespoon lemon-pepper seasoning, or to taste
½ medium lemon, zested
½ cup unsalted butter, sliced
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Place shrimp in a single layer in a glass baking dish. Drizzle with olive oil. Sprinkle with lemon juice, garlic, lemon-pepper, and lemon zest. Top with slices of butter. Sprinkle parsley on top.
  • Bake in the preheated oven until shrimp are bright pink on the outside and the meat is opaque, 5 to 10 minutes.

2 pounds large shrimp (about 30), peeled
2 sticks (1 cup) unsalted butter
1 1/2 teaspoons salt, or to taste
1 tablespoon mined garlic, or to taste
1/2 cup flat-leafed parsley leaves, washed well, spun dry, and chopped fine
2 tablespoons freshly grated lemon zest (from about 2 large lemons)
2 tablespoons fresh lemon juice, or to taste
Accompaniments:
cooked rice
lemon wedges

Steps:

  • Preheat oven to 450°F.
  • In a flameproof baking dish large enough to hold shrimp in one layer melt butter with salt over moderately low heat. Stir in garlic and half of parsley. Add shrimp and bake 5 minutes. Turn shrimp and sprinkle with remaining parsley, zest, and lemon juice. Bake shrimp until just cooked through, 5 to 10 minutes more.
  • Serve shrimp with rice and lemon wedges.
