Here's what you need: cream cheese, shredded cheddar cheese, shredded monterey jack cheese, garlic powder, dried oregano, salt, pepper, water, jalapeño, wonton wrapper, oil

4 oz cream cheese, softened
¾ cup shredded cheddar cheese
¾ cup shredded monterey jack cheese
½ teaspoon garlic powder
½ teaspoon dried oregano
1 teaspoon salt
½ teaspoon pepper
2 tablespoons water
1 lb jalapeño, tops removed, seeded, and halved
1 package wonton wrapper
2 cups oil, for frying

Steps:

  • Add the cream cheese, cheddar cheese, and Monterey Jack cheese, garlic powder, oregano, salt, and pepper to a bowl. Stir to combine. Add 1 tablespoon of water a time until the mixture is smooth enough to be a spreadable paste.
  • Fill each jalapeño half with 1 tablespoon of the cheese mixture.
  • Place a filled jalapeño on a wonton wrapper, fold over the side edges, then using the tip of your finger, wet the remaining edges of the wonton with water and continue to roll. Repeat with remaining jalapeños.
  • In a large pot, heat oil to 350˚F (180˚F).
  • Fry the egg rolls in small batches until golden brown and crispy.
  • Transfer the egg rolls to a paper towel-lined plate.
  • Enjoy!

12 jalapeno peppers, halved lengthwise and seeded
2 ounces cream cheese, softened
2 ounces shredded Cheddar cheese
¼ cup panko bread crumbs

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a baking sheet with cooking spray.
  • Fill each jalapeno pepper half with cream cheese, Cheddar cheese, and bread crumbs, respectively, and arrange peppers on the prepared baking sheet.
  • Bake in the preheated oven until jalapenos are tender and cheese melts, about 20 minutes.

I like this recipe for egg rolls because it's baked. It uses ground pork, but I have substituted ground chicken and turkey successfully. I also have added bean sprouts to the mixture (reducing the amount of meat), stirring them into the cooked mixture with the other vegetables. Base recipe courtesy of Canadian Living magazine.

1 lb ground lean pork (or ground chicken or turkey)
3 green onions, chopped
2 garlic cloves, minced
1 carrot, grated
1/2 cup water chestnut, chopped
2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon water
1 teaspoon sesame oil
1/2 teaspoon pepper
12 egg roll wraps, large size - 5 1/2-inch
1 teaspoon vegetable oil

Steps:

  • Preheat oven to 375*. In a non-stick pan, cook the pork over "medium-high" heat, breaking up with a spoon, until no longer pink. This should take about 5 minutes. Drain off the fat.
  • Add the onions, garlic, carrot and water chestnuts, cooking over "medium" heat until the onions are soft, about 3 minutes.
  • In a small bowl, whisk the soy sauce, cornstarch, water, sesame oil & pepper together. Pour over cooked mixture, stirring to mix. Let cool slightly.
  • Place egg roll wrapper on work surface and brush with water.
  • Spoon a scant 3 tablespoons of filling on bottom third of wrapper - leaving a 1/2" border on the bottom and sides.
  • Pull bottom edge over the filling and roll up, pinching ends to seal.
  • Place seam side down on parchment-lined baking sheet. Brush with oil. Bake @ 375* for 20 minutes, or until golden and crisp. Serve with plum sauce.

1 (16 ounce) package egg roll wraps
1 egg
8 ounces reduced-fat cream cheese
1/2 cup reduced-fat cheddar cheese, shredded
6 jalapenos, seeded and diced
2 green onions, sliced
4 slices bacon, cooked and crumbled
1/4 teaspoon garlic powder
kosher salt
black pepper

Steps:

  • Preheat oven to 400 degrees. Spray a non-stick baking sheet with cooking spray.
  • In a bowl, combine cream cheese, shredded cheese, diced jalapenos, sliced green onions, crumbled bacon, and spices. Stir well to combine.
  • Beat an egg with 1 T water to make an egg wash. Take an egg roll wrapper and place it on a work surface on the diagonal. Brush all 4 edges with egg wash. Use about 1-2 Tablespoons (depending on how big you want to make them) of jalapeno cheese mixture and place it in the center of egg roll wrapper. Roll up the lower corner around the mixture, fold in the left side, fold in the right side, and roll it over to the top corner. Lay them seam side down on prepared baking sheet. Brush the tops with egg wash and sprinkle with garlic powder and finely shredded cheese.
  • Bake 12-14 minutes.

  • Mix together the cream cheese, cheddar cheese, bacon, jalapenos, green onions and garlic powder until well combined. Add salt and pepper to taste.
  • Place wonton wrapper with the point towards you. Add 1 tablespoon filling on the bottom one-third of the wrapper. Brush a little water on the edge of the wrapper. (You can use your finger.) Fold the sides in and roll up making sure it is completely sealed. Repeat with remaining wrappers and filling.
  • TO BAKE: Preheat oven to 425 degrees F. Spray a baking sheet with cooking spray. Line egg rolls on the baking sheet with the seam down. Either spray with cooking spray or for extra crispy baked egg rolls, in a small bowl melt 2 tablespoons of butter and add 2 tablespoons of vegetable oil. Stir. Brush some of the butter-oil mixture on top of egg rolls. Bake for 5 minutes. Flip them and brush with more of the butter-oil mixture and bake for another 4-5 minutes. Or until golden brown on both sides.
  • TO FRY: Heat oil (350 degrees F) in a Dutch oven/deep stock pot, or deep-fat fryer, and deep fry egg rolls for 3-4 minutes, until golden brown. Turning as needed. Remove to a paper towel-lined plate, and allow to cool slightly before serving.
