ZESTY HOMINY AND CHEESE
A different sidedish using hominy, sour cream, cheese and green chilies. Friends who say they don't like hominy eat it and ask for more. It's fast and tasty. Adjust chili peppers to taste.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a 2 quart casserole dish, mix together hominy, sour cream, cheddar cheese, chilies and cayenne pepper.
- Bake for 25 minutes in the preheated oven, or until heated through.

BAKED HOMINY WITH CHEESE
The taste and texture of this dish is subtle and unusual but my BF and I think it's absolutely delicious. My apologies if you haven't found this as appealing as we do. The recipe comes from a fantastic cookbook of the midwestern region (of the U.S.) called "Hollyhocks and Radishes." The original ingredients call for 2 cups cream instead of milk and twice the butter, so if you don't mind the extra fat, go ahead. I also like to add more horseradish, at least 1 tablespoon. In my area hominy can be found in the mexican foods section of the supermarket.

Steps:
- Preheat oven to 300 degrees.
- Melt butter in large saucepan over medium heat.
- Whisk in flour and continue cooking for 1 minute.
- Slowly pour in milk, mixing constantly with whisk, until sauce thickens.
- Add horseradish, salt and pepper to taste.
- Add hominy, stir, and pour into lightly sprayed 2 quart casserole.
- Sprinkle with parmesan cheese.
- Cover and cook for 1 hour 20 minutes or until hot and bubbly.

- Combine water, milk, salt, and grits in a saucepan.
- Bring to a boil.
- Lower heat and simmer until thickened, stirring occasionally.
- Allow 5 minutes for quick-cooking grits and 30 minutes for regular grits Stir a little of the grits in eggs; return to saucepan and mix well with cheese.
- Pour into a buttered 1 quart casserole; dot with butter.
- Bake in 350 F for 40 minutes or until lightly browned.

- In a large bowl, beat egg. Add hominy, cheese, milk, onion, bacon, butter and pepper; mix well. Spoon into a greased 11x7-in. baking dish. , Bake, uncovered, at 350° for 45 minutes or until bubbly and top begins to brown. Let stand a few minutes before serving. Garnish with parsley if desired.

CHEESY BACON AND HOMINY CASSEROLE
I have been wanting to do something with hominy for awhile now, so at work today while waiting for phone calls, I concocted this recipe. I think it will be very good. Please try it and tell me what you think!

Steps:
- 1. Drain and rinse hominy; set aside.
- 2. Cook bacon and crumble; set aside.
- 3. Peel and slice shallots. Peel and mince garlic.
- 4. In a medium saucepan melt butter over medium-high heat. Add the sliced shallots, minced garlic, salt and pepper and cook for 2 or 3 minutes, stirring frequently. Stir in the flour and blend well.
- 5. Add the half-and-half or milk gradually, and stir constantly until mixture begins to thicken, about 5 minutes.
- 6. Blend in 1 cup of the cheese and stir until melted.
- 7. Add the hominy and mix thoroughly. Place the mixture into a lightly buttered 2-qt. baking dish. Bake, covered, in a preheated 350-degree oven for 30 minutes.
- 8. Remove cover and sprinkle on the crumbled bacon, followed by 1/2 cup cheese.
- 9. Continue baking, uncovered, for 15 minutes or until cheese is melted. Serve immediately.
