Vegetarian Sun-Dried Tomato, Feta, and Walnut Spread image

This spread, a riff on pesto, is so yummy and versatile. Spread it on toasted baguette slices for an impromptu nibble, toss with pasta, add Greek yogurt to make it into a dip, or spread in sandwiches with your favorite cold meats or roasted veg.

5 sun-dried tomatoes packed in oil, drained and chopped
½ (6 ounce) container feta cheese
⅔ cup toasted walnuts
2 tablespoons olive oil
½ teaspoon dried oregano
½ teaspoon red pepper flakes
salt and freshly ground black pepper to taste
6 tablespoons milk, or as needed

Steps:

  • Combine sun-dried tomatoes, feta cheese, walnuts, olive oil, oregano, red pepper flakes, salt, and pepper in the bowl of a food processor; pulse until blended. Pour in milk with the processor running, 1 tablespoon at a time, until a spreadable consistency is reached. Serve immediately or chill until needed.

My husband begs me to make this dish. It is a surprisingly great mixture of flavors. You'll love it! Feel free to tailor the ingredient amounts to your taste. This is how we like it, but it is quite flexible.

1 (16 ounce) package angel hair pasta
¼ cup olive oil
4 cloves garlic, crushed
3 ounces sun-dried tomatoes, softened and chopped
1 (8 ounce) package tomato basil feta cheese, crumbled
1 cup grated Parmesan cheese
1 bunch fresh cilantro, chopped
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until done; drain. Return pasta to the pot.
  • Mix in olive oil, garlic, tomatoes, feta, and Parmesan cheese. Stir in cilantro and season with salt and pepper. Serve warm.

Spicy Sun-Dried Tomato and Feta Sauce image

A wonderful, fast sauce. This pasta dish is definitely good enough for company. Cooking time includes the time it takes to boil the pasta.

1 (8 1/2 ounce) jar sun-dried tomatoes packed in oil, with herbs, drained, 1 tblsp oil reserved
1 tablespoon minced garlic
1 (28 ounce) can crushed tomatoes
1/2 cup kalamata olive, pitted and chopped
1/2 teaspoon sugar
1 cup fresh basil, chopped
1 cup feta cheese, crumbled
3/4 cup parmesan cheese, freshly grated
1 lb of your favourite dry pasta (Rigatoni or Penne are both good)

Steps:

  • Cook pasta until al dente.
  • Meanwhile, heat oil reserved from tomatoes in heavy large skillet over medium heat.
  • Add garlic and cook 30 seconds.
  • Add sun-dried tomatoes, crushed tomatoes, olives and sugar and bring to boil.
  • Reduce heat and simmer until sauce thickens slightly, about 4 minutes.
  • Mix in basil and both cheeses and stir until cheeses melt.
  • Season to taste.
  • Remove sauce from heat.
  • Drain pasta.
  • Add to skillet; toss to coat with sauce.
  • Serve immediately.
