These Roasted Cornish Hens will be your new favorite recipe for romantic date nights or to impress dinner party guests. They're simple, elegant, and turn out perfectly every time with my easy step-by-step instructions.

2 whole Cornish hens (about 1 1/2 lb each)
2 sprigs rosemary
4 sprigs thyme
1 large onion (cut in quarters)
6 cloves garlic
1 lemon (cut in slices)
2 tablespoon olive oil
1 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
1 tablespoon Italian seasoning
2 teaspoon smoked paprika
1 teaspoon garlic powder
¼ teaspoon red pepper flakes

Steps:

  • Combine all the dry rub ingredients together in a small bowl.
  • Pat the hens dry with paper towels and generously season with the dry rub both inside and out.
  • Preheat your oven to 425°F.
  • In a roasting pan add the rosemary, thyme, garlic, onion, and half the lemon slices. Place the hens in the roasting pan over the herbs and onions and drizzle the olive oil over the hens.
  • Transfer the roasting pan to the preheated oven and bake for 50 to 60 minutes or until an instant-read thermometer inserted into the thickest part of the breast registers at 165°F.
  • Remove the hens from the oven and let them rest for 20 minutes. Garnish with additional thyme, lemon slices and rosemary and serve over mashed potatoes.

1 tablespoon salt
2 tablespoons lemon-pepper
1 tablespoon dried basil
1 tablespoon poultry seasoning
2 tablespoons olive oil
6 Cornish game hens, about 1 1/2 pounds each, rinsed and dried thoroughly
1 green bell pepper, large dice
2 stalks celery, large dice
1 onion, large dice

Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.

This delicious easy roasted Cornish hens recipe is so easy to make. Flavored with a tangy lemon pepper seasoning.

2 Cornish hens (* see note)
4 tablespoons butter
1 clove garlic (minced)
2 teaspoons lemon pepper seasoning
1 tablespoon lemon juice
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350º F.
  • Remove the hens from their packages and be sure there are no packets of organs in the cavity.
  • Spray a small sheet pan or 9x13 pan with oil.
  • Place the hens into the pan. Optional: You can use bakers twine to tie the legs together if you like. If you plan to roast vegetables with the hens, add those to your sheet pan too.
  • Place the butter, garlic, lemon juice, and salt into a small microwave-safe dish. Microwave for 20-25 seconds until the butter is melted.
  • Brush the hens with the butter mixture. Be sure to gently lift the skin and brush the mixture under the breasts as well so the flavor bakes in nicely.
  • Sprinkle the hens with lemon pepper seasoning.
  • Bake for 30 minutes. Carefully baste more of the butter mixture over the hens.
  • Bake an additional 30-40 minutes until the internal temperature of the hens is 165º F.

1 large Spanish onion, sliced
2 Cornish hens
Cornbread Stuffing, recipe follows
Olive oil
Kosher salt
Freshly ground black pepper
4 tablespoons unsalted butter
1 cup yellow onion, chopped
2 1/2 cups cornbread
1 celery stalk, diced
1/4 cup chicken stock
2 tablespoons chopped flat-leaf parsley
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the sliced onion in the bottom of a roasting pan. Remove the giblets from the hens, and rinse them inside and out. Remove any excess fat and leftover pinfeathers and pat the outsides dry. Place the hens on top of the sliced onion.
  • Pack the cavities of the hens with the cornbread stuffing.
  • Tie the legs together with kitchen string and tuck the wing tips under the body of the hens. Rub the hens with olive oil and sprinkle with salt and pepper.
  • Roast the hens for 30 minutes, or until the juices run clear when you cut between a leg and thigh.
  • Melt the butter in a large saute pan. Add the onion and cook for 5 minutes over medium-low heat, until translucent. Break the cornbread into pieces and place the pieces in a large bowl. Add the onion mixture to the cornbread. Add the celery, chicken stock, parsley, salt and pepper, and mix together.

Steps:

  • To start, grab kitchen shears or a sharp knife. I used all-purpose kitchen scissors. Place hen or chicken breast-side down and cut along one side of the backbone. Repeat with the other side. Don't discard the backbone as you can use it later for stock. Flip the bird over and using the palm of your hand, press down on the breastbone. Use your muscles for this and you'll hear a snap. Presto, you have now spatchcocked! To barbecue the cornish hen, season to your preference and cook over a medium heat 20 to 25 minutes (turning halfway). Note: Remove wing tips if barbecuing as they tend to burn easily. If using an oven, preheat to 425 degrees and roast cornish hens 40 to 50 minutes or until thickest part of breast reaches 165 degrees, allow to rest 5 to 10 minutes. Enjoy!

2-1/4 cups reduced-sodium chicken broth
2/3 cup uncooked wild rice
1/4 cup chopped onion
1/4 cup chopped celery
1 teaspoon olive oil
1 garlic clove, minced
1/2 cup chopped dried apricots
2 tablespoons chopped almonds
1 cup apricot nectar, divided
1/2 cup sweet white wine or apple juice, divided
1/4 teaspoon plus 1/8 teaspoon salt, divided
1/4 teaspoon poultry seasoning
1/4 teaspoon pepper, divided
2 Cornish game hens (20 to 24 ounces each), cut in half
1 teaspoon white balsamic vinegar
Dash ground cinnamon

Steps:

  • In a small saucepan, bring broth and rice to a boil. Reduce heat; cover and simmer for 60-70 minutes or until rice is tender and liquid is absorbed. , Meanwhile, in a nonstick skillet, saute onion and celery in oil until tender. Add garlic; cook 1 minute longer. Stir in the apricots, almonds, 1/3 cup apricot nectar, 1/4 cup wine, 1/4 teaspoon salt, poultry seasoning and 1/8 teaspoon pepper. Stir into cooked rice. , Spoon mixture into four mounds in a shallow roasting pan coated with cooking spray; top each with a Cornish hen half. Cover and bake at 375° for 45 minutes. Uncover; bake 15-20 minutes longer or until a thermometer reads 180°. , In a large saucepan, combine remaining nectar and wine. Bring to a boil; cook for 5-7 minutes or until reduced to 1/2 cup. Add the vinegar, cinnamon and remaining salt and pepper. Reduce heat; cook and stir over medium-low heat for 1 minute. Serve with hens and rice.

2 Cornish hens (about 1 3/4 pounds each), room temperature, rinsed well and patted dry
1 bunch fresh thyme (about 1/2 ounce), plus more for garnish
2 lemons, halved, plus wedges for serving
1/4 cup loosely packed fresh flat-leaf parsley leaves
3 tablespoons unsalted butter
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 450 degrees. Place hens in a roasting pan, breast sides up. Place 2 thyme sprigs and 1 lemon half in cavity of each hen. Loosen skin from breast, and place remaining thyme and the parsley underneath. Squeeze remaining lemon halves over hens. Rub butter all over hens. Season generously with salt and pepper.

Cornish game hens stuffed with a vegetable mixture, then roasted. A Cornish game hen recipe that I found and tweaked a bit for the taste and size of our small family, but it would be very easy to adjust it to fit your needs. It goes well with oven-roasted potatoes.

2 Cornish game hens
½ cup melted butter
½ onion, chopped
½ stalk celery, chopped
¼ green bell pepper, chopped
1 (4.5 ounce) can mushrooms, drained and chopped
2 cloves garlic, minced
1 tablespoon dried basil
1 teaspoon dried oregano
1 tablespoon chopped fresh parsley
¼ cup melted butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a small bowl combine the 1/2 cup melted butter, onion, celery, bell pepper, mushrooms, garlic, basil, oregano and parsley.
  • Season hens inside and out with salt and pepper to taste, then stuff with equal amounts butter/vegetable mixture. Place stuffed birds in a 9x13 inch baking dish, breast side up. Drizzle with 1/4 cup melted butter.
  • Cover dish and bake in the preheated oven for 1 1/2 hours. Remove cover and brown at 500 degrees F (260 degrees C).

4 Hens thawed
Dash of pepper and salt
1/4 cup butter or margarine melted
1/4 cup shredded.orange peel
1 1/2 1 1/2 tbsp shredded lemon peel
3/4 cup orange juke
2 tbsp lemon juice
1 cup currant jelly
1 cup Madeira wine (ONLY AT SPECIALTY LIQUOR STORES ) 1 tsp dry mustard 1/2 tsp fresh ginger Dash of Tabasco Sauce
STUFFING: they are extra nice if they are stuffed with a mostly vegetable stuffing first

  • 1. Heat oven to 500 degrees, sprinkle inside of each hen with a dash of salt and pepper. (DON'T FORGET STUFFING ) Tie legs together and place hens in shallow roasting pan breast side up. brush with melted butter. 2. Roast, uncovered for 15 minutes. Reduce heat to 400 degrees. 3. Turn hens breast side down and pour 1/2 cup water over the hens. Cover pan with foil. Bake for 30 minutes. 4. Turn hens breast side up. Baste with pan drippings. Roast, uncovered - for 30 minutes - basting several times. 5. Meanwhile, make sauce. In small saucepan, combine orange peels, lemon peels, orange juice and lemon juice. Bring to boil and cook over medium heat, uncovered for 15 minutes or until peels become transparent. 6. Add jelly, wine, mustard, ginger and Tabasco sauce. Bring to boil, reduce heat and simmer for 20 minutes. 7. To serve ~ arrange birds on serving platter or individual plates and pour sauce over them.
