CHICKEN AND CHEESE FLAUTAS
Baked chicken flautas with a crunchy outside and a perfectly spiced cheesy chicken filling inside.

Steps:
- Whisk cream cheese till very soft. Stir in green chilies, cumin, garlic powder, chili powder, and minced onion till mixture is smooth.
- Stir in the chicken and cheese.
- Spread about 3 Tbsp of chicken mixture down the middle of each flour tortilla. Roll up and place seam side down on lightly greased cookie sheets.
- Spray each taquito with non-stick spray and sprinkle with kosher salt.
- Bake at 425° for about 15 minutes, or till lightly browned.

BAKED CHICKEN FLAUTAS RECIPE

- Preheat oven to 350 degrees F.
- Line a large baking sheet (15 x 10 x 1 inches) with aluminum foil and spray with non-stick cooking spray; set aside.
- In a large bowl, mix together chicken, salsa, cream cheese, black beans, corn, and 1 cup shredded cheese.
- Add 2-3 tablespoons of the chicken mixture and roll up, then place seam-side down on the prepared pan. Repeat this process until all the chicken mixture is used up.
- Sprinkle remaining cheese on top of tortillas and bake for 20-25 minutes or until the tortillas start to turn golden brown (the edges of the tortilla will turn golden first).
- Remove from oven and serve with your favorite toppings (salsa, guacamole, sour cream, lettuce, etc).

- Heat a medium frying pan over medium heat. Add the onion, garlic and sweet pepper. Stir and cook until onion is soft and translucent. Add the spinach. Cover and cook for about 2 minutes until the spinach is wilted. Stir.
- Add the chicken, taco seasoning mix, and cream cheese. Cook and stir until the cream cheese is melted, then add the shredded cheese and stir until cheese is fully melted. Taste and adjust seasonings as needed.
- Heat the tortillas in the microwave or stovetop to soften them. Spoon 2 – 4 Tablespoons full in a thin line down the tortilla, then roll up the tortilla tightly and seal with a toothpick.
- Fry in a frying pan over medium heat with about 1/2 inch of hot avocado oil (or other oil with high smoke point), rotating until all sides are browned and puffy … or set on an oiled baking sheet, spray generously with cooking spray and bake at 400 F. for about 20 minutes or until crispy, turning half-way.
