BAKED BEANS AND HOT DOGS WITH BREAD CRUMB TOPPING.
This is not diet food. But oh so yummy. Wonderful for pot luck meal or picnic. It is one of the few meal I make that is not from scratch but I find canned baked beans have a nice taste and bake well. I have used french fried onions on top instead of bread crumbs for variation.

Steps:
- In a crock pot put the 2 cans of beans. Cut the bacon into small pieces and add to the beans. Add the catsup, mustard, horseradish and stir well. Put on high and cook for 3 hours.
- Once the beans are cooked, put the oven on 400 deg to pre heat. In a sauce pan, melt the butter and once melted pour in the bread crumbs and stir until coated.
- Remove the bean mixture from the crock pot and put into a baking pan. Put the cheddar cheese on the top then add the bread crumb mixture. Smooth out evenly.
- Bake for about 30 minutes until the top is browned and slightly crunchy. Let it sit for 5 or so minutes before serving.

- Heat up a skillet with oil over medium heat. Add the frankfurters and saute until fully caramelized roughly 8 to 10 minutes.
- Add onions and saute until translucent.
- Add baked beans, tomato sauce, Worcestershire sauce, and molasses.
- Bring the stew to a simmer, season with salt and pepper, and continue simmering until it has reduced by at least half and thickened for roughly 15 minutes.
- While waiting, prepare your topping. In a mixing bowl, add the corn muffin mix, cheese, milk, green onions, melted butter, chili powder, egg.
- Whisk until a batter is formed and set aside.
- Preheat also your oven to 360 degrees F.
- Transfer into a baking casserole of your choice.
- Pour the batter on top and spread to cover all the spaces.
- Bake in the oven until the topping turns golden brown, roughly 15 minutes.
- Garnish with parsley and serve immediately.

BAKED BEANS WITH SLAB BACON AND BREADCRUMBS

- Drain beans and place in a large heavy pot along with halved onion, Parmesan rind (if using), halved head of garlic, bay leaves, and 2 teaspoons salt. Add water to cover by 2". Bring to a boil, reduce heat, and simmer until beans are tender, 1-1 1/2 hours.
- Meanwhile, cook bacon in a large skillet over medium heat, turning occasionally, until brown and most of fat has rendered, 8-10 minutes. Transfer to a plate with tongs or a slotted spoon.
- Add thinly sliced onion, shallot, thyme sprigs, and three-fourths of chopped garlic to pan drippings in skillet; season with salt and pepper. Cook, stirring occasionally, until onion is starting to caramelize and is very soft, 10-15 minutes. Add wine, bring to a simmer, and cook, stirring occasionally, until liquid is almost completely evaporated, about 4 minutes. Remove from heat and pluck out thyme sprigs.
- Preheat oven to 400°. Drain beans, reserving cooking liquid. Transfer beans to a large bowl and mix in bacon, onion mixture, thyme leaves, and 1 1/2-2 cups cooking liquid (this will be most of it; mixture should be consistency of stew); season with salt and pepper. Transfer beans to a shallow 1 1/2-quart baking dish.
- Mix breadcrumbs, oil, and remaining chopped garlic in a medium bowl; season with salt and pepper. Scatter over beans; bake until liquid is thickened and bubbling and crumbs are golden brown, 45-55 minutes. Let cool slightly before serving.
- Do ahead: Beans can be baked 5 days ahead. Let cool; cover and chill.
BAKED BEAN CORN DOG CASSEROLE
This is easy, cheap, and delicious! Kids and adults alike both love it. Great for Potlucks, and only takes about 10 minutes to throw together!

- Preheat oven to 350°F.
- Put beans into large baking pan.
- Slice hot dogs into 1/2 inch slices and add to beans.
- Bake for 15-20 minutes.
- While bean and hot dog mixture is in the oven,Mix cornbread mix, milk, eggs, creamed corn, and cheese in a large bowl.
- Once bean and hot dog mixture has baked for 15-20 minutes, spread cornbread mixture gently on top to cover.
- Bake for 20-30 additional minutes or until cornbread is cooked through.
- Cornbread will be moist because of corn, so don't overcook.
BAKED BEANS WITH A CRUNCHY TOPPING

- Preheat oven to 400 degrees.
- Brown bacon in cast iron skillet over medium heat until crisp. A regular large frying pan will work, but you'll need to use an oven-proof pan or transfer to casserole dish.
- Drain bacon on a plate covered with paper towel.
- Pour off bacon drippings from skillet reserving 1 tablespoon.
- Sweat onion in the tablespoon of drippings until soft.
- Add remaining ingredients (but not the bread crumbs) along with bacon pieces; stir to mix.
- Sprinkle crumbs on top of beans; bake in your preheated, 400 degree oven until nice and bubbly. I check after about 20 minutes. I put my beans in a casserole dish in lieu of the skillet.
- You may bake the beans in individual serving dishes. Simply top each with crumbs and bake as above.

- Combine green beans and 1/2 cup water in a medium pot. Cover, and bring to boil. Reduce heat to medium, and let beans cook for 10 minutes, or until tender. Drain well.
