EGG BREAKFAST PIZZA
This recipe will make two pizzas. I came up with it by accident by throwing a bunch of ingredients together. We make it on the weekends at the lake for breakfast/brunch. You can modify toppings. I usually make one sausage and one bacon. Each pizza will serve 3 to 4 people.

- Preheat oven to 400 degrees F (200 degrees C). Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
- Place pizza crusts upside down on cookie sheets and bake for 5 to 7 minutes. Do not allow to brown.
- Beat eggs, milk, salt and pepper. Scramble eggs until firm.
- Remove crusts from oven, turn right side up, spread 1/2 can of cream of celery soup on top of each crust. Spread 1/2 of egg mixture on each crust. Sprinkle bacon bits on one pizza and cooked sausage on the other. Cover each with onions and peppers. Top each pizza with 2 cups of cheese.
- Bake in preheated oven, for 25 to 30 minutes, until cheese is golden brown.

BAKED BEAN AND EGG PIZZA
This is a delicious Pizza that has been a staple in many homes for years. It's very popular all around the world. It only requires a few ingredients which is reason enough for its popularity.

Steps:
- Combine 1 cup (125g) of flour, instant yeast, sugar, salt and garlic in a large bowl.
- Add olive oil and warm water and use a wooden spoon to stir.
- Gradually add another the remaining cup of flour. Add any additional flour as needed. Stir until the dough is forming into a cohesive, elastic ball.
- Drizzle a separate, large bowl with olive oil and use your hands to brush up the sides of the bowl.
- Lightly dust your hands with flour and form your pizza dough into a round ball and transfer to your olive oil bowl. Use chopsticks to roll the pizza dough along the inside of the bowl until it is coated in olive oil, then cover the bowl tightly with a blanket and place it in a warm place. For example on the roof (lots of sunlight, very warm).
- Allow dough to rise for 30 minutes or until doubled in size or until you can't stand to see it get any bigger (trust me it doesn't stop). preheat your oven to 425F
- Once the dough has risen, use your hands to gently deflate it (I find inhaling really close to it helps with the deflation) and transfer to a lightly floured surface and knead briefly until smooth (about 3-5 times).
- Use either your hands or those aforementioned chopsticks to work the dough into 12" circle. Your choice. Personally I find the chopsticks to be a really soothing experience.
- Transfer dough to a parchment paper lined pizza pan and either pinch the edges or fold them over to form a crust. Or better yet make a really large fold so you can stuff them with more beans.
- Drizzle additional olive oil (eye ball it) over the top of the pizza and use your hands to rub the entire surface of the pizza (including the crust) with olive oil. DON'T FORGET TO RUB THE CRUST.
- Use your fingers to poke holes all over the center of the pizza to keep the dough from bubbling up in the oven.
- Open the baked bean can of your choice and dump that baby all over that dough. Make sure you really work and spread it evenly. Trust me, you're gonna want to taste it in every bite. Then crack your 4 eggs onto the pizza. It's ok if some shell ends up on it when you put it in the oven. It can add that extra desired crunch. Now place it in the oven for some time and then take it out and enjoy. Yummy.

BAKED EGGS WITH BEANS AND GREENS
Consider this a heartier version of the classic Italian dish "eggs in purgatory," which works well for breakfast, lunch or dinner. It's also very forgiving. If you'd rather keep this a vegetarian meal, skip the sausage. No chickpeas? No problem. Any white bean will work well in its place. Same with the greens. Use what you have (anything that wilts works). Sprinkling the dish with grated cheese before serving is not required, but it sure does taste good. Serve with thick slices of toasted sesame bread slathered with plenty of softened butter.

- Heat the oven to 375 degrees. Heat the olive oil in a 12-inch ovenproof skillet over medium heat. If using the sausage, add to the pan and cook, breaking it into 1/2-inch pieces, by pressing with the back of spatula or wooden spoon until crisp and cooked through, about 8 minutes. Remove with a slotted spoon and set aside.
- Add the onion to the skillet and cook until softened, about 3 to 5 minutes. Add the chickpeas and the garlic and cook until the garlic is fragrant, about 1 minute. Season with salt. Add the sausage back to the pan along with the tomatoes and stir to combine. Bring to a simmer and gradually add in the chopped greens by the handful, tossing together until wilted. Season with salt.
- Using a spoon, create hollows in the sauce and gently crack the eggs into each, and season the eggs with salt and pepper. Transfer to the oven and cook until the eggs are set, about 7 to 9 minutes. Scatter the herbs on top along with a tablespoon or two of grated cheese, if using.

- Unroll crescent roll dough into one long rectangle.

BACON AND EGG PIZZA
If you've ever had a hankering for pizza for breakfast, this recipe is exactly what you need. With a topping of creamy ricotta, runny eggs and plenty of crisp bacon, this white pizza doesn't need tomato sauce to give it pizazz. The flavors are a little like a carbonara, with the mozzarella and ricotta making it extra creamy.

- Heat the oven to 450 degrees, and arrange racks in top and bottom thirds. Place a pizza stone on the top rack.
- Arrange bacon in a single layer on a rimmed baking sheet, and bake on bottom rack until browned and crisp, 7 to 11 minutes. Using tongs, transfer bacon to paper-towel-lined plate to cool, then slice into bite-size pieces.
- Raise oven temperature to 500 degrees. In a small bowl, stir together ricotta, garlic and salt.
- On a rimmed baking sheet, stretch dough into an 11-inch circle, about 1/8-inch thick. Sprinkle with mozzarella, leaving a slim border around edges. Scatter bacon on top, add red pepper flakes, then dollop tablespoons of ricotta mixture all over pie. Arrange basil leaves on top, then sprinkle with pecorino.
- Place baking sheet on top of pizza stone, and bake for 4 minutes. (Edges of dough should be cooked but not browned.) Remove from oven; use the back of a large spoon to make 2 divots on either side of pizza, and crack eggs into the divots. Return to oven and bake until egg whites are almost but not quite set, about 4 minutes. Set oven to broil, and broil until crust is charred and eggs are cooked but yolks are runny, 30 seconds to 1 minute. (If your broiler is in a separate drawer, transfer baking sheet to your broiler drawer and broil to finish cooking the eggs and brown the crust.)
- Slide pizza onto a cutting board. Top with more basil, flaky sea salt and more red pepper flakes. Drizzle with oil and serve immediately.

- Heat the oil in a wide, shallow pan and cook the onion for 8-10 mins until softened. Add the pepper and cook for another 5 mins, stirring regularly, until softened. Stir in the garlic, paprika and ketchup, then tip in the tomatoes, cover and leave to simmer gently for 10 mins. Remove the lid and cook for a few more minutes to thicken, then add the beans. Can be cooled and frozen in portions at this stage.
