CHEESY APPLE CASSEROLE
This Cheesy Apple Casserole is so versatile. It's great for breakfast or as a side dish.

Steps:
- Toss the chopped apples with the lemon juice.
- Spray a 1 1/2 quart casserole dish with cooking spray and spread the apples in the bottom of the dish.
- Mix the melted butter, sugar, salt, flour, milk, vanilla extract and one cup of the cheese together with a spoon. Pour and spread over the apples. Bake in a preheated 350 degree oven for 55 to 60 minutes adding the other cup of shredded cheese on top during the last 15 minutes.

- Cut the margarine into the sugar.
- Place grated cheese into large bowl and sprinkle the flour over the cheese.
- Mix the margarine and sugar mixture into the cheese bowl.
- Pour apples into a buttered 9 x 13 baking dish.
- Sprinkle cheese/butter/sugar mixture over the apples.
- Bake on 350 F.

- Dot with chopped butter on the top.

- In a large bowl, combine the apples, sugar, cinnamon and cloves. Transfer to a greased 13x9-in. baking dish. Dot with 2 tablespoons butter. Bake, uncovered, at 325° for 25 minutes or until apples are crisp-tender. , Meanwhile, in a small skillet, melt remaining butter. Add bread crumbs; cook and stir for 3-5 minutes or until crispy and golden brown. Sprinkle over apple mixture. , Bake 10-15 minutes longer or until apples are tender. Serve warm.

From Martha Nesbit's book, Savannah Celebrations. She says, "This recipe is not only perfect for brunch, but is also delicious with any menu featuring pork." In place of the canned apples you can use six Granny Smith apples, peeled, diced and stewed in ½ cup water for 15 minutes. I had 4 ounces cream cheese left over from a cheesecake so I substituted in this for ½ cup of the Cheddar cheese. Yum!

- Preheat oven to 325°F. Grease a 1 ½ quart casserole with vegetable spray.
