This recipe is from Rachael Ray's 30-minute meals television show on Food Network. It also includes green beans and smashed potatoes to serve with this main dish meal.

4 pieces boneless skinless chicken breasts
black pepper
4 -5 ounces blue cheese, crumbles
1/2 cup arugula leaf, chopped
1/2 cup baby spinach leaves, chopped
4 slices bacon
2 lbs baby potatoes, halved
salt
1 lb thin green beans
2 vine tomatoes, halved lengthwise, seeded and thinly sliced
4 fresh thyme sprigs (leaves from)
3 tablespoons extra virgin olive oil, divided
4 scallions, finely chopped, whites and greens
1/4 cup chicken stock

Steps:

  • Preheat oven to 425 degrees F.
  • Using a small sharp knife cut into the thick end of the chicken and make an incision reaching 2/3 the way down the breast.
  • Loosen up the incision with your fingers to make a hole.
  • Season the chicken with pepper.
  • Combine the cheese with arugula and baby spinach and stuff the breasts. Spiral-wrap the breasts with the bacon tightly to cover the meat evenly. Place chicken on a nonstick baking sheet and roast 20 to 22 minutes until bacon is crispy and chicken is firm.
  • Place the potatoes in a pot and cover with water.
  • Bring to a boil, season water with salt and cook potatoes 15 minutes, or until tender.
  • Bring 1-inch water to a boil.
  • Trim beans.
  • Salt water and add beans to water.
  • Simmer 5 minutes, drain and combine with tomatoes, thyme, 1 tablespoon oil, salt and pepper.
  • Place the potatoes back in the hot pot after draining.
  • Coat the potatoes with 2 tablespoons oil, the scallions, chicken stock and salt and pepper.
  • Toss for 1 minute.
  • Serve chicken with green beans and potatoes alongside.

4 poussin chickens
12 rashers dry-curled streaky bacon
1 pound potatoes, peeled
Handful fresh sage, thyme or rosemary (all are good)
12 cloves garlic, peeled
1/2 cup white wine, plus 1 cup
Sea salt and freshly ground black pepper
Olive oil

Steps:

  • Preheat your oven and an appropriately sized roasting tray to 425 to 450 degrees. Boil your potatoes in salted water until perfectly cooked (don't overcook). Drain and allow to cool. Remove any fat from inside the chicken cavity. Wash and pat dry with kitchen paper. Slice your potatoes thickly, season with salt and freshly ground black pepper, add your freshly torn herbs and enough olive oil just to coat. Toss over and then stuff your chickens with the potatoes. Place them into the tray with about 12 cloves of garlic and cook for 30 minutes. After this time the chicken should be looking as handsome as its inventor and the skin should be crisp and golden.
  • At this point lay your streaky bacon snugly over the breast meat and add a 1/2 cup of wine to the pan to get some sticky marmitey juices happening. Cook for another 15 minutes. Remove the chicken from the oven. Take them out of the tray and allow them to rest for 5 minutes while you make a quick bit of gravy. I normally remove as much fat as possible from the tray before placing on gentle heat. Splash the remaining 1 cup of white wine into it. Then boil up and scrape away all the goodness from the sides of the tray. Simmer this for a couple of minutes until tasty. It's not a thick, robust gravy, just a tasty gesture. (Another nice option at this point is to add a little cream to the gravy which works really well.) Served with something nice and green like steamed spinach and the potatoes pulled out from the chickens.

BACON AND BLUE CHEESE STUFFED CHICKEN BREASTS

8 ounces (2 sticks) unsalted butter, at room temperature
4 ounces blue cheese, crumbled (recommended: Maytag or Point Reyes)
4 slices smoked bacon, cooked until crisp and finely chopped
2 teaspoons chopped fresh chives
4 skin-on, bone-in organic chicken breasts
Pinch freshly ground black pepper

Steps:

  • In a large bowl, using a rubber spatula, mix the butter, blue cheese, bacon, and chives together until combined. Dollop half of the compound butter along the long edge of a 12-inch piece of parchment or waxed paper. Roll into a log, twisting opposite ways on both ends of the paper to create a tightly wrapped log of butter. Refrigerate or freeze for another use.
  • Preheat the oven to 425 degrees F.
  • Using your fingers, carefully loosen the skin from chicken breasts. Stuff about 1/4 of the remaining blue cheese butter under the skin of each breast; smoothing the skin to evenly distribute the butter over the surface of the breast meat.
  • Put the chicken on a rimmed baking sheet and rub any remaining butter over the skin. Season each breast with just a pinch of freshly ground black pepper.
  • Roast the chicken breasts, skin sides up, in the center of the oven until skin is crisped and chicken is cooked through, about 35 to 40 minutes. An instant-read thermometer should register 165 degrees F when inserted into the thickest part of the meat. Remove from the oven to a serving platter. Let stand 10 minutes before serving.
  • Cook's Note: This recipe makes 2 logs of compound butter; unused butter can be used to top grilled meats, burgers, or baked or mashed potatoes.

2 1/2 pounds red-skinned potatoes (4 to 5 medium), chopped
Kosher salt
4 slices bacon, chopped
1 stick salted butter, cut into pieces, at room temperature
2/3 to 3/4 cup sour cream
2 tablespoons chopped fresh chives
Shredded cheddar cheese, for topping

Steps:

  • Put the potatoes in a large saucepan and cover with cold water by 1 inch. Season generously with salt and bring to a boil. Reduce the heat to medium and simmer until very tender, about 15 minutes.
  • Meanwhile, cook the bacon in a large skillet over medium heat until crisp, 7 to 8 minutes; transfer to a paper towel-lined plate.
  • Drain the potatoes and return to the saucepan over low heat; cook until any remaining water evaporates, about 2 minutes. Add the butter, then gradually mash in the sour cream with a potato masher. Stir in the bacon and chives, reserving 1 tablespoon of each. Transfer to a serving dish; top with cheddar and the remaining bacon and chives.

I needed a new chicken recipe and it had to only use healthy ingredients. My dad had a heart attack and he is only allowed Asiago cheese and canadian bacon as substitutes for their counter fattening parts.

Salad Supreme dry seasoning
grated romano cheese
grated parmesan cheese
steak seasoning (Mrs Dash Steak Grilling Blends)
oregano
parsley
paprika
Mrs Dash's extra spicy seasoning
1 1/2 tablespoons crushed garlic
2 cups of shredded asiago cheese
1/2 cup of diced red onion
5 slices of precooked Canadian bacon, diced
5 boneless skinless chicken breasts, thawed & pounded down

Steps:

  • Preheat oven to 350 degrees, line bottom of a glass pan with olive oil and set aside at least 10 – 15 toothpicks near your workstation.
  • Mix seasoning ingredients in a shallow pan, with enough room to lay one chicken breast down in it.
  • Add as much as you want of each seasoning per your taste, I used a couple of shakes for each ingredient and a little extra of the cheeses.
  • Mix all stuffing ingredients together in a bowl.
  • Lay one chicken breast in the shallow seasoning dish to coat the outside, and then in the center of the chicken breast add a line of the stuffing mixture.
  • Roll and seal by sticking a toothpick on the top of each end to close.
  • Once all the chicken breasts are stuffed and in the glass dish, you will have left over stuffing, place the leftover stuffing on top of each chicken breast on the lip of the “seal”.
  • Bake in oven for 30 minutes, check to see if done, depending on oven you may need another 15 minute.

4 skinless, boneless chicken breast halves
½ (8 ounce) package cream cheese, sliced
4 slices bacon
1 teaspoon chopped fresh chives
1 (10.75 ounce) can condensed cream of chicken soup
½ cup mayonnaise
½ cup milk
1 teaspoon lemon juice
¼ teaspoon ground black pepper
1 pinch salt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Pound the chicken breasts until flat. Put a slice of cream cheese and 1 teaspoon chopped chives in the middle of each breast and roll up. Wrap each rolled breast with 1 slice of bacon and secure with toothpicks. Place in a 9x13 inch baking dish.
  • In a medium bowl, combine condensed soup, mayonnaise, milk, lemon juice, pepper and salt. Mix until smooth, then pour over chicken.
  • Bake in the preheated oven for 1 hour, or until no longer pink and juices run clear.
