Bacon, Cheese and Tomato Strata image

Hosting a brunch is a breeze when you make a do-ahead egg bake.

7 cups lightly packed 1-inch cubes French bread (8 oz)
2 cups shredded Cheddar cheese (8 oz)
2 cups chopped roma (plum) tomatoes (6 medium)
6 eggs
1 1/2 cups milk
1 teaspoon Dijon mustard
1 teaspoon dried basil leaves
1/2 teaspoon salt
6 slices bacon

Steps:

  • Spray 13x9-inch glass baking dish with cooking spray. Spread bread in baking dish. Sprinkle evenly with 1 1/2 cups of the cheese; mix lightly with bread. Sprinkle with tomatoes.
  • In medium bowl, beat eggs, milk, mustard, basil and salt with fork or wire whisk; pour over bread mixture. Cover tightly and refrigerate at least 2 hours but no longer than 24 hours.
  • Heat oven to 350°F. Bake uncovered 40 to 45 minutes or until knife inserted in center comes out clean. Meanwhile, in 10-inch skillet, cook bacon over medium heat 8 to 10 minutes, turning occasionally, until crisp; drain on paper towel.
  • Crumble bacon. Sprinkle bacon and remaining 1/2 cup cheese over strata. Let stand 10 minutes before serving.

12 thick slices white bread, cut into 1 inch cubes
¼ cup crumbled cooked bacon
2 cups shredded Cheddar cheese
1 ½ cups chopped fresh mushrooms
12 eggs
2 ½ cups half-and-half
1 teaspoon Dijon mustard

Steps:

  • Toss cubed bread with bacon, cheese, and mushrooms, and pour into a 9x13 inch baking dish. Whisk together eggs, half-and-half, and mustard until smooth, then pour evenly over cubed bread. Cover dish with plastic wrap, and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove plastic wrap from the baking dish, and bake strata in preheated oven until the top is golden brown, and the eggs are set, about 1 hour. Let stand for 10 minutes before serving.

1 pound bacon strips
1 medium sweet red pepper, finely chopped
8 green onions, thinly sliced
1/2 cup chopped oil-packed sun-dried tomatoes
8 slices white bread, cubed
2 cups shredded cheddar cheese
6 large eggs, lightly beaten
1-1/2 cups 2% milk
1/4 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon pepper

Steps:

  • In a large skillet, cook bacon in batches until crisp; drain on paper towels. Crumble into a small bowl. Add red pepper, onions and tomatoes. In a greased 13x9-in. baking dish, layer half each of the bread, bacon mixture and cheese. Top with remaining bread and bacon mixture., In another bowl, combine eggs, milk, mayonnaise and seasonings. Pour over top. Sprinkle with remaining cheese. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, covered, 40 minutes. 3 slices bacon
1 cup vertically sliced onion
2 cloves garlic, minced
2 ¼ cups milk
6 large eggs
¼ cup thinly sliced fresh basil
¾ teaspoon chopped fresh thyme
¼ teaspoon salt
¼ teaspoon ground black pepper
cooking spray
8 cups cubed Italian bread, divided
2 cups shredded Cheddar cheese, divided
12 (1/2 inch thick) slices tomato, seeds removed

Steps:

  • Cook bacon in a large nonstick skillet over medium heat until crisp, about 10 minutes. Remove bacon from pan, reserving drippings in the skillet. Crumble when cool enough to handle.
  • Add onion to drippings in the skillet; saute for 4 minutes. Add garlic and saute for 1 minute. Remove from heat; combine onion mixture and bacon.
  • Whisk milk, eggs, basil, thyme, salt, and pepper together in a bowl until well combined.
  • Spray a 9x13-inch baking dish with cooking spray and arrange 1/2 of the bread cubes in the bottom.
  • Top bread cubes with 2/3 cup Cheddar cheese, 1/2 of the onion mixture, and 6 tomato slices. Pour 1/2 of the milk mixture over tomatoes. Top with remaining bread cubes and 2/3 cup Cheddar. Top with remaining onion mixture, tomato slices, and milk mixture. Cover and place in the refrigerator to chill at least 8 hours or up to 24 hours.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • Bake strata in the preheated oven, uncovered, for 55 minutes. Sprinkle with remaining Cheddar cheese and bake until cheese melts, an additional 5 minutes. Let stand 5 minutes before serving.

A strata is a layered bread and egg casserole, usually served as a brunch. This version is studded with diced tomato and crumbled bacon. Prepare it before you go to bed so that the eggs can soak into the bread, then bake it in the morning for a no-fuss brunch.

8 cups French bread cubes
2 cups shredded cheddar cheese
6 slices bacon, cooked and crumbled
1 1/2 cups diced tomatoes
1/2 cup sliced green onions
6 large eggs
2 cups milk (2%)
1/2 tsp salt
1/2 tsp freshly ground pepper
1/2 tsp basil, crumbled
1/4 tsp thyme, crumbled

Steps:

  • Place half of bread cubes in a greased shallow 3 quart casserole dish. Sprinkle with half each of cheese, bacon, tomatoes and onions. Repeat layers with remaining bread, cheese, bacon, tomatoes and onions.
  • Whisk together eggs, milk, salt, pepper, basil and thyme. Pour mixture evenly over casserole. Cover and refrigerate overnight.
  • Remove from refrigerator and let stand for 20 - 30 minutes. Meanwhile, preheat oven to 350°F.
  • Bake, uncovered, until a knife inserted in centre comes out clean, about 55 - 60 minutes. Let stand 5 minutes before serving.

1 tablespoon bacon grease
1 (1 pound) loaf day-old bread, cubed
12 large eggs
2 teaspoons kosher salt
½ teaspoon freshly ground black pepper
1 pinch cayenne pepper
1 pinch freshly grated nutmeg
2 ½ cups heavy cream
1 pound sliced bacon, cut crosswise into 1/2-inch strips
1 pound fresh spinach, wilted, squeezed dry
12 ounces shredded extra-sharp Cheddar cheese, divided

Steps:

  • Oil bottom and sides of a 9x13-inch baking dish with about a tablespoon of bacon fat.
  • Place bread cubes in a large mixing bowl.
  • Crack eggs into a separate mixing bowl. Season with salt, pepper, cayenne, and nutmeg. Add cream and whisk mixture thoroughly.
  • Pour egg/cream mixture over the bread cubes and mix to distribute ingredients evenly. Allow bread mixture to sit about 15 minutes to absorb the liquid.
  • Transfer half of the bread mixture to the baking pan; spread evenly over the bottom and press mixture down a bit. Top with half of the grated Cheddar cheese. Add cooked bacon pieces in an even layer over the cheese. Place the cooked spinach over the bacon; top with half of the remaining cheese. Finish with the rest of the soaked bread cubes, spread evenly and pressed down slightly. Sprinkle with the rest of the grated cheese. Cover and let strata sit at room temperature for 1 hour before baking.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake strata in preheated oven until set, about 45 minutes. Optionally, you can broil the strata for a minute or two to brown the top.

My mother-in-law asked her friend for the recipe and here it is! I couldn't believe how easy it is to make. This is great when you have company staying over and you don't want to be in the kitchen first thing in the morning cooking. You put this together in the evening the night before. Try changing the cheese and toppings with your favorites! Very versatile dish! Enjoy.
