12 or 16 slices pepper-crusted bacon (about 8 ounces)
8 slices rustic bread
2 tablespoons plus 2 teaspoons mayonnaise
1 1/3 cups radish sprouts
1 Hass avocado, sliced
1 large tomato, sliced
Coarse salt

Steps:

  • Cook half the bacon in a large skillet over mediumheat, turning occasionally, until crisp, 7 to 9 minutes.Transfer to a paper-towel-lined tray to drain. Repeat withremaining bacon.
  • Lightly toast bread, and spread 1 teaspoon mayonnaiseonto 1 side of each slice. Pile on sprouts, avocado, bacon,and tomato. Season with salt, and top with remaining bread.

This bacon Swiss burger is smashed and cooked in a cast-iron skillet on the grill to achieve a crispy crust and juicy interior. Topped with bacon, Swiss cheese, and all the fixings, it's our newest go-to burger.

2 pounds 80/20 lean ground beef
Kosher salt and freshly ground black pepper
12 strips bacon (cooked crisp)
6 slices Swiss or American cheese (or you can use a shredded cheese blend)
6 store-bought or homemade hamburger buns
mayonnaise
Leaf lettuce
Tomato slices
Dill pickle slices

Steps:

  • If using a charcoal grill, open the bottom vent of a charcoal grill completely. Light a charcoal chimney starter filled with charcoal. When the coals are covered with gray ash, pour them onto the bottom grate of the grill. Adjust the vents as needed to maintain an internal temperature of 400°F (204°C).If using a gas grill, preheat to medium-high (400°F | 204°C).
  • While the grill is heating, loosely form the beef into six 1/3-pound (151 g) patties, about 1-inch (25-mm) thick. Season each patty with salt and pepper.
  • Once the grill reaches 400°F (204°C), place a large, seasoned cast-iron skillet on the grill grate over direct heat and let the skillet heat for 2 minutes.
  • Add 3 of the patties to the skillet and gently smash each once with a spatula. You should hear a sizzle. Cook undisturbed and uncovered, until they develop a sear, 3 to 3 1/2 minutes, depending on how well done you like your burgers.
  • Flip the patties, and cook to the desired doneness, 2 to 3 1/2 minutes for medium-rare.
  • Divvy half of the bacon and cheese among the patties, cover the grill, and cook just until the cheese has melted, 30 to 45 seconds. Transfer the patties to a plate and keep warm while repeating with the second batch.
  • If desired, add the buns to the hot skillet, cut-sides down, working in batches again, and toast in the pan drippings until lightly browned, about 1 minute.
  • Generously spread some of the mayonnaise on the cut sides of each toasted bun, add the burgers, and top with your desired toppings. Sandwich 'em up and serve immediately.

For the Tomato Jam:
2 pounds cored tomatoes (chopped)
1/2 cup sugar
1/2 lemon (juiced)
1 tablespoon fresh ginger (finely chopped)
1 pinch ground cumin
1 pinch ground cinnamon
1/4 tsp curry powder
1 teaspoon salt
For the Sausage-Infused Burger Patty:
1/4 pound grass-fed beef
2 tablespoons spicy sausage
Cooking spray
Salt (to taste)
Ground black pepper (to taste)
For the Breakfast Burger:
2 tablespoons tomato jam
1 sausage burger patty
2 tablespoons shredded gouda
1 everything bagel (toasted)
3 to 4 slices bacon (cooked with grease saved)
1 egg (cooked sunny side up)
1/4 avocado (sliced thin)
1 tablespoon tomato jam

Steps:

  • Gather the ingredients.
  • Add the tomatoes, sugar, lemon juice, ginger, cumin, cinnamon, curry powder, and salt to a stainless steel pot and turn the heat to medium-high.
  • Once the mixture begins to boil, reduce the heat to medium-low and continue to simmer, stirring often, until the mixture reduces and thickens into a jam-like consistency; about 1 hour.
  • While this is reducing, make the sausage-infused patties.
  • Gather the ingredients.
  • Meanwhile, add your beef and sausage in a bowl and gently mix together, being sure not to overwork the meat and form into a patty shape and season with salt and pepper.
  • Set aside and heat up your grill or cast iron to medium-high heat.
  • Spray the surface of whatever you're using to cook the patty and add the meat, allowing it to cook for a few minutes on each side until it's cooked all the way through.
  • Turn the heat off and add the gouda on top.
  • Then prep the remaining ingredients for assembling the burger.
  • Gather the ingredients.
  • Toast the everything bagel until crispy on the outside and smear both sides with the homemade tomato jam.
  • Add the cooked cheeseburger sausage patty, then top with egg, bacon, and avocado.
  • Serve and enjoy!

8 slices bacon
1 pound ground beef chuck or sirloin
1 teaspoon Worcestershire sauce
1 or 2 dashes Tabasco sauce
1/4 teaspoon dried thyme leaves
Salt and freshly ground black pepper, to taste
Vegetable oil, for grilling
4 slices Swiss cheese
4 hamburger buns, toasted, for serving
Thinly sliced ripe tomato, for garnish
Thinly sliced red onion, for garnish
Sliced ripe avocado, for garnish

Steps:

  • 1. If you will be grilling the burgers, preheat a barbecue grill to medium-high.
  • 2. While the grill is heating up, cook the bacon on the stovetop in a large skillet over medium-low heat until it is just crisp, 6 to 7 minutes. Transfer the bacon to a plate lined with paper towels and set it aside to drain. (If you prefer to panfry the burgers, reserve 2 tablespoons of the bacon fat in the skillet.)
  • 3. Place the beef, Worcestershire, Tabasco, thyme, and salt and pepper in a bowl, and toss lightly with a fork to combine. Form the mixture into 4 patties, each about 3 inches in diameter and 1 inch thick.
  • 4. When you are ready to grill the burgers, oil the grill grate well. Add the burgers and grill for about 3 minutes for rare, 4 minutes for medium-rare meat. Turn them over and grill for another 3 or 4 minutes, topping the burgers with the cheese in the last minute of cooking. (Or panfry the burgers in the hot bacon fat over medium heat for 3 minutes per side for rare meat, adding the cheese as described.)
  • 5. Place the burgers on the toasted buns, and top them with the bacon, tomato, onion, avocado, and lettuce. Cover with the tops of the buns and serve immediately.

3 tablespoons salted butter, softened
4 hamburger buns, split
8 slices thick-cut bacon
1 ½ pounds lean ground beef
2 tablespoons Worcestershire sauce
1 tablespoon steak seasoning
4 slices Cheddar cheese
4 large eggs
4 large lettuce leaves
½ red onion, thinly sliced
2 avocados - peeled, pitted, and thinly sliced

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Butter each half of hamburger buns.
  • Place bacon in a heavy skillet and cook over medium-high heat, turning occasionally, until crisp, 10 to 12 minutes. Drain bacon slices on paper towels. Set the skillet aside, reserving grease.
  • Mix ground beef, Worcestershire sauce, and steak seasoning together in a large bowl; do not overmix. Form into 4 patties. Make a thumbprint in the middle of each patty to keep it from shrinking as it cooks.
  • Grill patties on the preheated grill until preferred doneness, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Top each burger with 2 slices bacon and a Cheddar cheese slice; close the grill lid until cheese is melted, about 1 minute. Remove patties from the grill.
  • Place buns on the grill, buttered-side down, and cook until browned, about 1 minute. Remove from the grill. Place 1 patty on the bottom half of each bun.
  • Reheat the bacon grease in the skillet over medium-high heat. Crack eggs into the hot skillet and fry until whites are cooked but yolk is still runny, about 4 minutes. Immediately place 1 egg on top of each patty. Top with lettuce, onion, avocado, and remaining buns.

½ cup mayonnaise
3 tablespoons herbes de Provence
2 teaspoons Worcestershire sauce
1 teaspoon lemon juice
8 Ball Park® Hamburger Buns
½ pound thick-cut smoked bacon
½ pound button mushrooms, sliced
1 tablespoon soy sauce
2 pounds lean ground beef
2 teaspoons garlic granules
Salt and pepper to taste
16 slices Swiss cheese
Burger trimmings as desired, including lettuce, tomato, onion and pickles

Steps:

  • To prepare herbed mayo: In a medium bowl, combine mayonnaise, dried herbs, Worcestershire sauce and lemon juice, mixing well. Cover and refrigerate.
  • Cut each strip of bacon in half and cook in a skillet over medium heat until crisp.
  • Remove and drain on paper towels. Pour off all but 1 tablespoon bacon drippings from the pan.
  • Add mushroom slices and soy sauce to the pan.
  • Over medium heat, saute mushrooms until browned and soft, about 5 to 10 minutes. Drain on paper towels.
  • Preheat grill for medium heat and lightly oil the grate.
  • To prepare burgers, mix ground beef, garlic granules, and salt and pepper together in a bowl. Form into patties. Place on prepared grill and grill 3 to 5 minutes per each side. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C).
  • During last 2 minutes of cooking, top with cheese and cover to melt cheese.
  • Meanwhile, heat oven to 400 degrees, arrange hamburger buns on a foil-lined cookie sheet and lightly toast hamburger buns in the oven on each side.
  • When toasted, remove buns to serving plates and spread some of the herbed mayonnaise on each bun.
  • To serve, put cheese-topped patties on each bun, add desired hamburger trimmings, finish with the top bun and enjoy.
