RICE PILAF WITH SHALLOTS



Rice Pilaf with Shallots image

Basmati rice with shallots is an aromatic backdrop to any meal.

3 tablespoons unsalted butter
2 small shallots, finely chopped (1/2 cup)
2 cups white basmati rice
1 cup homemade or low-sodium store-bought chicken stock
1 bay leaf
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Melt butter in a medium Dutch oven over medium-low heat. Add shallots, and cook, stirring often, 4 minutes. Stir in rice, and cook, stirring, 1 minute.
  • Add 2 cups water, the stock, bay leaf, salt, and pepper. Raise heat, and bring to boil. Stir once, then reduce heat. Cover, and simmer until rice is tender and liquid has been absorbed, 15 to 20 minutes. Remove from heat, and let stand, covered, 10 minutes. Fluff with a fork and discard bay leaf before serving.

5 strip (blank)s bacon strips, cooked and crumbled
2 tablespoons butter
1 cup white rice
⅓ cup broken pieces (about 2 inches) vermicelli pasta
½ cup chopped sweet onion
½ cup chopped green or red bell pepper
2 ⅓ cups Swanson® Chicken Broth
1 clove garlic, minced
1 teaspoon chopped fresh parsley
1 teaspoon onion powder
1 teaspoon granulated garlic powder
¼ teaspoon black pepper

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble. Drain bacon drippings from pan; wipe out with paper towels.
  • Heat 2 tablespoons butter in a skillet over medium heat. Stir in rice and vermicelli; cook until they turn a golden brown, about 4 minutes.
  • Stir in chopped onions and bell pepper. Saute until the vegetables begin to soften, 2 or 3 minutes. Add Swanson® Chicken Broth, garlic, parsley, onion powder, garlic powder, and black pepper.
  • Bring to a boil. Cover, and simmer on low heat until liquid is absorbed, 20 to 25 minutes. Top with cooked crumbled bacon.

2 pieces thick-sliced bacon, cut into 1/2 inch pieces
1/4 cup orzo pasta
1/4 cup chopped shallot
1/2 cup long-grain rice
1/2 cup low sodium chicken broth
1/2 cup water
1/8 teaspoon salt

Steps:

  • Cook bacon in medium saucepan over medium-high heat until browned, turning frequently; transfer bacon with slotted spoon to paper towels to drain and set aside.
  • Add orzo to saucepan, and cook and stir 3 to 4 minutes. Add shallots, and cook and stir until shallots are tender and orzo is golden, 3 to 4 minutes longer.
  • Add rice, stirring to coat with fat. Add broth, water and salt. Bring to boil, cover, reduce to simmer, and cook until liquid is absorbed, 15 to 18 minutes.
  • Remove from heat. Let stand 5 minutes. Sprinkle reserved bacon on top. Serve hot.

8 ounces slab bacon, cut into 1/2-inch strips or lardons (about 2 cups)
2 cups instant rice
1 cup frozen peas
1/2 teaspoon salt
1/4 cup grated Parmesan
2 tablespoons unsalted butter
Zest and juice of 1 lemon
Freshly ground black pepper

Steps:

  • In a skillet over medium heat, cook the bacon lardons until browned and crispy. Transfer to a paper towel-lined plate and set aside.
  • In a medium saucepan, combine the rice with the recommended amount of water on the package. Add the peas and salt and cook according to the rice package instructions.
  • Stir in the Parmesan, butter, lemon zest and juice and black pepper. Mix in the bacon and serve.

4 tablespoons olive oil, divided
1 1/2 cups chopped yellow onions (2 onions)
2 cups white basmati rice
2 teaspoons sea salt
4 cups chicken stock, heated
1/2 teaspoon saffron thread (or turmeric)
1 tablespoon chopped garlic (5 cloves)
1 (28 ounce) can diced tomatoes, drained
1 teaspoon fresh ground black pepper
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons freshly grated parmesan cheese

Steps:

  • Heat 2 tablespoons of the olive oil in a small Dutch oven or large saucepan, add the onions, and cook over low heat for 10 minutes, or until translucent but not brown.
  • Stir in the rice and 2 teaspoons of salt and cook over low heat for 5 minutes.
  • Add the hot stock and the saffron and cook, covered, over the lowest heat for 20 minutes, or until the rice is tender.
  • Optional, transfer the rice to a baking dish, add the stock and bake at 350 F for 50-60 minutes, or until liquid is absorbed and the rice is tender.
  • Meanwhile, in a medium sauté pan, heat the remaining 2 tablespoons of olive oil, add the garlic, and cook over low heat for 50 seconds. Add the drained diced tomatoes and cook for 5 minutes, stirring from time to time. When the rice is done, add the tomato mixture, 3/4 teaspoon salt, the pepper, parsley, and Parmesan, Stir with a fork, season to taste, and serve hot.

1 medium onion, chopped
1 small green pepper, seeded and chopped
1 (5 ounce) can sliced mushrooms (5-7 oz.)
6 -8 ounces diced or chopped cooked ham (I use a small package of thin sliced ham lunchmeat cut in small squares)
1 tablespoon minced garlic or 2 garlic cloves, minced
2 tablespoons butter or 2 tablespoons margarine
1 1/2 cups long grain rice
4 beef bouillon cubes
1/2 teaspoon black pepper
3 cups water

Steps:

  • In a large saucepan cook onion, green pepper, mushrooms, garlic, butter, and ham till veggies are tender but not browned.
  • Pour rice in with veggies and ham and let rice lightly brown for 1-2 minutes.
  • Pour in water.
  • Break up bouillon cubes and add to mix.
  • Add black pepper.
  • Bring to boil.
  • Reduce heat, cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed.

This is a fried rice recipe that I luckily created from practically threadbare cabinets one evening. It's the epitome of comfort food and is a breeze to make. The green beans really complement the flavors but feel free to use any veggie you have on hand. Enjoy!

6 slices bacon, cut into 1/2-inch pieces
1 cup frozen French-cut green beans, thawed
½ onion, roughly chopped
2 cloves garlic, minced
2 teaspoons sesame oil
1 egg, beaten
3 cups cold cooked rice
1 tablespoon soy sauce, or more to taste

Steps:

  • Place bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until just beginning to brown, about 7 minutes. Drain all but 1 to 2 teaspoons of bacon grease from the skillet. Add green beans, onion, and garlic; saute until bacon is crisp and green beans and onions are softened, about 3 minutes.
  • Push bacon mixture to one side of the skillet; heat sesame oil on the empty side, about 30 seconds. Pour in egg; cook until just set, about 1 minute. Stir into bacon mixture to combine.
