BACON FRIES
Bacon fries are just something out of this world. If French fries weren't already perfect by themselves, now make them even more awesome by wrapping bacon around them. Garnish with parsley flakes and eat while warm, with a sriracha ketchup sauce if you like.

- Preheat oven to 475 degrees F (245 degrees C). Spray a large baking sheet with cooking spray.
- Wrap half a bacon slice around each French fry and place seam side-down on the baking sheet about 1-inch apart.
- Bake in the preheated oven until bacon is browned and crisp, about 30 minutes. Remove from oven and sprinkle with seasoned salt. Transfer to serving plate.

- Cook French fries according to package directions. Place fries on a broiler-proof dish or platter. Sprinkle with cheese, onions and bacon. Broil for 1-2 minutes or until cheese is melted. Serve with ranch dressing.

BACON CHEESE FRIES

- 1. Cut potatoes lengthwise in 1/4-inch squares. Soak cut potatoes in water for 1 hour to remove starch. Heat oil to 325 degrees F and blanch potatoes for 5 minutes until very soft but not brown. Remove from oil. Drain on paper towels.
- 2. In a medium saute pan over medium heat, cook bacon until just crisp, taking care not to overcook. Drain on paper towels.
- 3. In a 2 quart saucepan, melt butter over medium heat. Add onion and cook about 2 minutes. Add garlic and flour, whisk until smooth. Cook 2 minutes more. Add chili sauce and mustard, and slowly whisk in heavy cream. When mixture begins to simmer, add cheeses and remove from heat. Taste sauce for seasoning. If sauce is too thick, thin with more cream. If too thin, thicken with a little more cheese.
- 4. Increase oil temperature to 375 degrees F. Fry potatoes a second time until crisp and golden brown. Remove from oil and drain again, season with salt immediately. On a large plate, arrange fries in the center, drizzle with sauce, top with crumbled bacon and chives. Serve immediately.
BACON FROISE
An old English dish dating back to the 15th century, froise (or fraize) is a batter-like mixture, which was probably originally cooked in the hot fat that dripped from a spit-roasted joint. It is a tasty economical recipe, delicious served with mushrooms, lightly cooked in a little lemon juice flavoured with black pepper and grilled tomatoes.

- Sift the flour into a bowl.
- Break in the egg.
- Gradually add the milk, beating to form a smooth batter.
- Season with pepper.
- Gently cook the bacon in a frying pan until the fat runs and the bacon is crisp.
- Drain well.
- Whisk the egg white until stiff, but not dry, and lightly fold into the batter.
- Melt a little butter in the frying pan until sizzling.
- Add half the batter and spread out to cover the base of the pan.
- Cook over a moderate heat until the bottom is alight golden brown and the top is just set.
- Scatter the bacon over the surface of the batter and cover with the remaining batter.
- Cook until the top is set, then turn the cake over and brown the other side.
- Transfer to a warmed plate and cut into wedges.
- Serve accompanied by mushrooms and tomatoes.

SUNNY'S EASY BACON, PEPPERS AND CHEESE HOME FRIES

- Leave the potatoes in the bag and cook them in the microwave for 2 minutes less than the package instructions so they aren't too soft (they will cook in the pan, plus, you'll need to break them down further). Remove from the bag and let cool until cool enough to handle, then cut the larger potatoes into sixths and the smaller ones into fourths.
- In a mid-sized pan on the stovetop or on a grill on medium heat, add the bacon and cook until crispy. Remove the bacon from the pan with a slotted spoon, leaving the bacon fat in the pan. Roughly chop the bacon and set aside. Add the butter to the bacon fat. Once it has melted, add the potatoes in one layer if possible. (If not, do the potatoes in batches.) Cook the potatoes on one side until a peek beneath reveals a golden crust, 10 to 15 minutes, then toss and repeat. Do this a few times; if doing in batches, you can pile the cooked potatoes on the side of the pan while the new ones get attention. Once the potatoes are almost done, push them all to the sides of the pan.
- To the center of the pan add the peppers, onions, steak seasoning, a pinch of salt and a few grinds of black pepper. Cook the veggies, stirring, until the peppers and onions are tender but still have some crunch, about 5 minutes. Add the bacon back to the pan and toss everything together. Season with salt and pepper. Remove from the heat and stir in the cheese. Transfer to a serving bowl and garnish with the scallions.
