Number Of Ingredients 11

3/4 pound sliced bacon, diced
1/2 cup chopped onion
1 cup cider vinegar
2 cups water
1-1/2 cups sugar
1 jar (2 ounces) diced pimientos, drained
2 tablespoons Dijon mustard
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • In a large skillet, cook bacon until crisp; remove bacon and set aside. Drain, reserving 2 tablespoons drippings in the skillet. Add onion and saute until tender; remove from the heat. Add the vinegar, water, sugar, pimientos, mustard, salt, pepper and bacon; mix well., Combine cornstarch and cold water; stir into skillet. Cook and stir until mixture comes to a boil. Boil for 2 minutes, stirring constantly. , Serve warm over fresh spinach or mixed greens. Refrigerate leftovers and reheat before serving.

8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
  • While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

6 slices bacon, diced
1/2 cup finely chopped yellow onion (sweet onions work well)
vegetable oil
2 teaspoons cornstarch, mixed with
2 teaspoons water
1/2 cup white vinegar
1/2 cup water
1/4 cup sugar
salt and pepper

Steps:

  • Fry bacon until crisp.
  • Remove bacon from pan leaving fat.
  • Set bacon aside.
  • Add onion to bacon fat in pan and cook 5 minutes until onion is soft.
  • Remove onion from pan leaving fat.
  • Set onion aside with bacon.
  • Pour bacon fat into measuring cup and add enough vegetable oil to equal 1/2 cup.
  • Add fat/oil to cornstarch mixture and set aside.
  • Combine vinegar, water, sugar, salt and pepper in small saucepan and heat to a boil.
  • Add cornstarch mixture and cook until thickened about 1-2 minutes.
  • Remove from heat and add bacon and onion.
  • Serve while warm.

8 slices bacon
1 ½ cups white sugar
3 teaspoons cornstarch
½ teaspoon salt
¼ cup water
½ cup white vinegar

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • In a medium bowl, whisk together the sugar, cornstarch and salt, and slowly pour in water and vinegar, whisking constantly.
  • In a medium skillet, add the crumbled bacon and pour the vinegar mixture over it. Cook over medium heat, stirring constantly, until mixture thickens.

1/2 lb bacon, preferably country smoked
2 cloves garlic, finely chopped
1 medium onion, finely chopped
1 tablespoon prepared brown mustard
1 teaspoon Worcestershire sauce
2 dashes Tabasco sauce
1 1/2 tablespoons parsley, finely chopped
2 tablespoons honey
1/4 cup cider vinegar
1 1/2 cups mayonnaise
1/2 cup heavy cream
1/2 cup milk
1/2 teaspoon ground black pepper

Steps:

  • Cut bacon into julienne strips, place in a skillet and saute' until crisp.
  • Remove bacon from pan, using a slotted spoon, and place on paper towels to absorb the grease.
  • Place the garlic and onion in hot bacon fat and saute' over high heat until soft.
  • Remove from the pan with slotted spoon.
  • In a large mixing bowl, combine sauteed bacon, garlic and onions with prepared mustard, Worcestershire sauce, Tabasco sauce, parsley, and honey.
  • Whisk all the ingredients together, using a wire whisk.
  • Add vinegar, mayonnaise, cream, and milk; whisk vigorously until blended.
  • Add ground pepper.
  • Serve on salad greens.
