PULL-APART BACON GRILLED CHEESE SANDWICHES

1 tablespoon vegetable oil
10 slices bacon
1 12-pack pull-apart dinner rolls
6 tablespoons salted butter, melted
1/2 tomato, finely chopped
4 slices provolone cheese
3 slices muenster cheese

Steps:

  • Preheat the broiler. Heat the vegetable oil in a large nonstick skillet over medium heat. Add the bacon and cook, turning occasionally, until browned, about 10 minutes. Transfer to a paper towel?lined plate to drain, then crumble into small pieces.
  • Split the whole pack of attached dinner rolls in half horizontally. Place the top and bottom halves cut-side up on a baking sheet. Brush with all but 1 tablespoon of the melted butter and broil until toasted, 1 to 3 minutes. Remove the top bread piece from the baking sheet. Flip the bottom piece and continue to broil until toasted on the other side, 1 to 2 more minutes. Remove from the oven and preheat to 400 degrees F.
  • Turn the bottom bread piece cut-side up and sprinkle with the bacon. Top with the chopped tomato, then shingle the provolone and muenster on top, alternating the two. Cover with the top bread piece, then brush the roll tops with the remaining 1 tablespoon melted butter. Bake until the bread is toasted and the cheese is melted, 12 to 15 minutes.

Originally, this was a Pillsbury Bake-Off 41 (Hollywood,2004) recipe submitted by: Terri Barton of Salt Lake, Utah. It has been noted by one reviewer - that this dish should be used as a side to breakfast or brunch. Update: 07/21/2008. . . . . . . made this again for supper as I like to serve a light meal - we added more fresh mushrooms, we added more green onions, some pimentos and of course more eggs & bacon. :)

1 egg
2 tablespoons milk
1 (16 1/3 ounce) can pillsbury original flaky refrigerated biscuits
4 -6 slices crispy bacon, cooked and broken into 1/2-inch pcs
4 ounces shredded cheddar cheese
1 (4 ounce) can mushroom pieces
1/4 cup finely chopped green onion, both green and white parts (4 medium)
cooking spray

Steps:

  • Preheat oven to 350°F.
  • Spray 11x7" or 12x8" (2 quart) glass baking dish, with cooking spray.
  • In a large bowl, beat egg and milk with wire whisk until smooth.
  • Separate dough into 8 biscuits; cut into quarters.
  • Gently stir biscuit pieces into egg mixture to coat evenly.
  • Fold in bacon, cheese, mushrooms and onions.
  • Spoon mixture into sprayed dish; arrange biscuit pieces in a single layer.
  • Bake for 23-28 minutes or until golden brown.
  • Cut into squares or just apull-apart.
  • Serve warm.

12 bacon strips, diced
1 loaf (1 pound) frozen bread dough, thawed
2 tablespoons olive oil, divided
1 cup shredded part-skim mozzarella cheese
1 envelope (1 ounce) ranch salad dressing mix

Steps:

  • In a large skillet, cook bacon over medium heat for 5 minutes or until partially cooked; drain on paper towels. Roll out dough to 1/2-in. thickness; brush with 1 tablespoon of oil. Cut into 1-in. pieces; place in a large bowl. Add the bacon, cheese, dressing mix and remaining oil; toss to coat., Arrange pieces in a 9x5-in. oval on a parchment-lined baking sheet, layering as needed. Cover and let rise in a warm place for 30 minutes or until doubled., Bake at 350° for 40 minutes. Cover with foil; bake 15 minutes longer or until golden brown.

2 tubes (12 ounces each) refrigerated buttermilk biscuits
2 cups shredded part-skim mozzarella cheese
1 tablespoon Italian salad dressing mix
2 teaspoons olive oil

Steps:

  • Preheat oven to 375°. In a large skillet, cook bacon over medium heat until cooked but not crisp. Using a slotted spoon, remove to paper towels to drain. Separate biscuits; cut each biscuit into quarters. , In a large bowl, combine the cheese, dressing mix, oil and bacon. Place half of the biscuit pieces in a greased 10-in. fluted tube pan; sprinkle with half of the cheese mixture. Top with remaining biscuit pieces and cheese mixture. , Bake until golden brown, 25-30 minutes. Cool 5 minutes before inverting onto a serving plate. Serve immediately.

1 loaf frozen bread dough, thawed
2 tablespoons oil, divided
1 cup shredded mozzarella cheese
1 (1 ounce) envelope ranch dressing mix

Steps:

  • Cook bacon until half done; drain on paper towels.
  • Roll out dough to 1/2 inch thick, brush with 1 T oil.
  • Cut into 1 inch pieces, place in large bowl.
  • Add bacon, cheese, dressing mix, and remaining oil.
  • Toss to coat.
  • Arrange pieces in a 9in by 6in oval on a greased baking sheet.
  • Layer as needed.
  • Cover and let rise until doubled (30 minutes).
  • Bake at 350* for 15 minutes, cover with foil and bake 8 minutes more, until golden.
