SLOW-COOKER CHEDDAR BACON BEER DIP

Steps:
- In a greased 3-qt. slow cooker, combine cream cheese, sour cream, mustard and garlic powder until smooth. Stir in beer, cheese and all but 2 tablespoons bacon. Cook, covered, on low, stirring occasionally, until heated through, 3-4 hours., In the last 30 minutes, stir in heavy cream. Top with onion and remaining bacon. Serve with soft pretzel bites.

Steps:
- Cook bacon crisply, remove from pan to drain on paper towels; reserve grease.
- In hot grease, saute green onions until bright green and soft - drain on paper towels.
- In your Crock Pot insert or microwavable bowl, combine cream cheese, Velveeta, garlic powder and pepper flakes.
- Microwave on HIGH for 3 minutes.
- Remove from oven and stir to combine and microwave again for 3 minutes or until cheese is completely melted.
- Add beer and stir to "loosen" to a dippable consistency.
- Stir in bacon and green onions and serve hot with corn chips or crackers.

- Cook bacon in large saucepan until crisp. Remove bacon from pan with slotted spoon; drain on paper towels. Add garlic and onion to drippings in pan; cook and stir on medium heat 5 min. or until caramelized. Stir in beer; bring to boil. Reduce heat to medium-low; simmer 5 min.
- Combine cheese, flour, mustard and pepper; gradually add to bacon mixture, stirring constantly. Stir in Worcestershire sauce; cook and stir until cheese is melted. Stir in cream cheese; cook and stir until cheese is melted and mixture is blended.
- Pour into serving bowl. Spoon dressing over dip; swirl gently. Top with onions and bacon. Serve warm.

- Add bacon to a large skillet over medium heat. Sauté 10 minutes until just crispy then remove and place on a paper towel lined plate. Cool and then chop or tear the bacon into rough pieces. Discard the bacon grease.
- In a medium high sided skillet or saucepan on medium heat, melt the butter. Add the onions and cook until soft, about 3-4 minutes.
- Whisk in the mustard and then add the beer, scraping up the bits from the bottom of the pan. Increase the heat and bring to a boil and cook for 5 minutes stirring occasionally.

- Preheat the oven to 350 degrees F. Spray an oven-safe dish (one that will fit 3 cups) with nonstick spray... or rub with butter.
- Add the cream cheese, sour cream, mozzarella, IPA, cheddar, cornstarch, garlic powder, paprika, chili powder and salt to a food processor or blender.
- Process on high until smooth and well-combined, about 2 minutes. Stir in most of the chopped bacon- reserving about 2 tablespoons.
- Scrape the dip into the prepared dish and top with the reserved bacon. Baked until warmed through, 15 to 20 minutes. Serve warm with crackers or baguette slices.
