MINI QUICHE LORRAINE

These are delicious little quiche tarts perfect for a party, shower, or just to have on hand for fast breakfasts during the week. Try substituting different fillings to suit your own taste. Any variety of cheese can be used.

24 (3 inch) frozen tart shells, thawed
6 slices bacon, or more to taste
1 cup shredded Swiss cheese
2 green onions, diced
4 eggs
1 ¼ cups milk
1 teaspoon Dijon mustard
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ cup shredded Swiss cheese, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Arrange tart shells in 2 muffin tins; line shell each with a layer of pie weights or dried beans.
  • Bake shells in the preheated oven until edges of crusts are lightly browned and about 75% cooked, 5 to 10 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble when cooled.
  • Divide 1 cup Swiss cheese, bacon, and green onions evenly into the tart shells.
  • Whisk eggs, milk, mustard, salt, and black pepper together in a bowl. Ladle egg mixture into each tart shell about 2/3 full. Top each tart with the remaining 1/4 cup Swiss cheese.
  • Bake in the preheated oven until egg is set in the middle of each tart and shells are browned, 25 to 30 minutes.

3 eggs (or 2 eggs and 2 egg yolks)
whipping cream, half and half or milk
1/2 teaspoon salt
1 pinch pepper
1 pinch nutmeg
1/2-1 cup grated swiss cheese
1 -2 tablespoon butter, cut into pea-sized dots
8 inches pastry shells, partly cooked

Steps:

  • To partly bake the pastry shell:.
  • Bake in middle of oven at 400 degrees F. for 8-9 minutes.
  • For filling:.
  • Preheat oven to 375 degrees F. Place oven rack in upper third of oven.
  • Beat eggs.
  • Add enough cream (or milk or cream-milk combination) so that eggs and cream measure 1 1/2 cups total.
  • Add salt, nutmeg and pepper; mix through.
  • Stir in cheese. Check seasoning.
  • Pour into pastry shell and distribute butter pieces on top. Place on baking sheet.
  • Bake 25-30 minutes or til puffed and browned.
  • Slide quiche onto a hot platter and serve.

1 cup crushed butter-flavored crackers
2 tablespoons butter, melted
6 bacon strips, diced
1 cup chopped onion
2 large eggs
2 cups shredded Swiss cheese
3/4 cup sour cream
Dash pepper
1/2 cup shredded sharp cheddar cheese

Steps:

  • Combine cracker crumbs and butter; press onto the bottom and up the sides of an ungreased 9-in. pie plate. Set aside., In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 2 tablespoons drippings. Saute onion in drippings until tender. Remove from the heat. In a small bowl, combine the eggs, Swiss cheese, sour cream, pepper, onion and bacon; pour into prepared crust. Sprinkle with cheddar cheese., Bake at 375° for 20-25 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

I used to make a bunch of these and take them to work on pot-luck day. Everyone brings lunch stuff and this gets everything going first thing in the morning. Sometimes I will use muffin pans if making a large amount and add some green chilies and a mexican cheese mix.

1/2 lb breakfast sausage
1/3 cup chopped onion
5 eggs, soft scrambled
shredded cheddar cheese

Steps:

  • Spray custard cups and press biscuit to form crust.
  • Brown sausage and onions- drain.
  • Soft scramble eggs.
  • Mix sausage onion and eggs.
  • Add mixture to prepared custard cups and top with cheese.

1 sheet refrigerated pie crust
1/4 cup sliced green onions
1 tablespoon butter
6 large eggs
1-1/2 cups heavy whipping cream
1/4 cup unsweetened apple juice
1 pound sliced bacon, cooked and crumbled
1/8 teaspoon salt
1/8 teaspoon pepper
2 cups shredded Swiss cheese

Steps:

  • Preheat oven to 350°. Line a 9-in. pie plate with crust; trim and flute edges. Set aside. In a small skillet, saute green onions in butter until tender. , In a large bowl, whisk eggs, cream and juice. Stir in bacon, salt, pepper and green onions. Pour into crust; sprinkle with cheese., Bake until a knife inserted in the center comes out clean, 40-45 minutes. Let stand 10 minutes before cutting. Freeze option: Securely wrap individual portions of cooled quiche in parchment and foil; freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Unwrap quiche; reheat in oven until heated through and a thermometer inserted in center reads 165°.

1 double crust pie crust, prepared
6 ounces shredded swiss cheese
2 tablespoons finely chopped green onions
1 tablespoon chopped pimiento
2 eggs
1/2 cup milk
1/4 teaspoon salt
1 dash nutmeg

Steps:

  • Spray 24 miniature muffin cups with non-stick cooking spray.
  • Roll out half of pie crust.
  • With a floured 2 1/2-inch cookie cutter, cut out 12 rounds.
  • Press the rounds into the muffin cups, fluting the edges of the pastry.
  • Repeat with remaining crust for the other pan.
  • Place 1 tbsp cheese in each cup.
  • Sprinkle with onion and pimiento.
  • Beat eggs with milk, salt, and nutmeg.
  • Pour mixture into muffin cups, leaving 1/4-inch from the top in each cup.
  • Bake at 375F for 25-30 minutes or until set.
  • Cool for 5 minutes.
  • Remove quiches by sliding knife blade between quiche and pan and lifting.
  • Serve warm.
