Here's what you need: baby bok choys, salt, rice, water, scallions, garlic, gochugaru, fish sauce, sugar

Yield 4 servings

Number Of Ingredients 9

3 baby bok choys, (approximately 1.25 lbs)
2 teaspoons salt, separated and 1 teaspoon (Seperated)
⅓ cup rice, cooked
⅓ cup water
2 scallions, chopped in 2-inch (5 cm) lengths
2 tablespoons garlic
3 tablespoons gochugaru
3 teaspoons fish sauce
2 ½ tablespoons sugar

Steps:

  • Rinse and cut the baby bok choy into fourths. Place bok choy in a large mixing bowl and sprinkle 2 tsp salt. Toss to evenly coat. Wait 30 minutes, then rinse and drain the bok choy. Return to the mixing bowl.
  • In a small blender, blend together the rice and water until it forms a smooth paste. Pour over the bok choy and mix together.
  • Add the rest of the ingredients and continue mixing gently, making sure all the ingredients get mixed thoroughly.
  • Store in an airtight container and let sit in the fridge for 1-2 hours to help flavors meld together. Eat.
  • Enjoy!

SAUTéED BABY BOK CHOY

A perfect side dish for chicken adobo, the national dish of the Philippines, or any other meat dish.

Number Of Ingredients 8

2 tablespoons neutral cooking oil, like canola
2 garlic cloves, peeled and minced
1 ½-inch piece ginger root, peeled and minced
¼ teaspoon red-pepper flakes, or to taste
4 bunches of baby bok choy, approximately 1½ pounds, cleaned, with the ends trimmed
1 tablespoon soy sauce
1 tablespoon chicken stock or water
Toasted sesame oil for drizzling

Steps:

  • In a large sauté pan with a lid, heat oil over medium-high heat until it starts to shimmer. Add garlic, ginger and red-pepper flakes and cook, stirring constantly, until fragrant, about 45 seconds.
  • Add bok choy and stir carefully to cover with oil, then cook for approximately 2 minutes. Add soy sauce, stock or water, then cover pan and cook for approximately 2 minutes more, until steam begins to escape from beneath the lid of the pan.
  • Uncover and continue to cook until liquid is close to evaporated and stalks are soft to the touch, approximately 3 minutes more.
  • Remove to a warmed platter and drizzle with sesame oil.

  • Remove the green leaves from your bok choy (we only want the thick, crunchy stalks), but save them for later! Then cut the stalks into 2-inch pieces. Then dry off the bok choy using a kitchen towel.
  • Now spread the bok choy on a cutting board or plate and sprinkle it with salt on both sides. Let it rest for around 25 minutes. During this time, the salt will draw out water from the bok choy.
  • In the meantime, you can start blending up ingredients for your kimchi paste. Grate the carrot and apple finely. Place them in a mortar together with the garlic cloves and the ginger and crush everything up. Then add your red chili flakes, sugar, and soy sauce into the mixture.
  • Now slice up the green bok choy leaves from earlier and the spring onions. Add the onions, the white salted stalks, as well as the green leaves into your kimchi paste mixture.
