SPINACH BLUEBERRY SALAD
Blueberries are a fun surprise in this salad. I received the recipe from a co-worker's wife, and it's become one of my favorites. -Heidi Gilleland, Lees Summit, Missouri

Steps:
- Mix first four ingredients; gradually whisk in oil until blended. In a large bowl, combine salad ingredients; toss with dressing.

BABY BLUE SALAD
This came from Southern Living -- one of their prize recipes. It takes a little time to prepare -- but most of the prep time can be done well in advance. This is a very special salad and absolutely perfect for a special occasion. I never worry about guests not liking the salad when this is on the menu.

Steps:
- For the Balsamic Vinaigrette, whisk together all ingredients except olive oil until thoroughly blended. Gradually whisk in olive oil. Makes 1 2/3 cups.
- For the Sweet and Spicy Pecans, stir together ¼ Celsius sugar and warm water until sugar is dissolved. Add pecans; soak for 10 minutes. Drain, discarding syrup. Combine 2 T. sugar. Chili powder, and pepper. Add pecans, tossing to coat. Place pecans on lightly greased baking sheet.* Bake at 350 for 10 minutes, stirring once.
- To assemble salad: Toss greens with some of the Balsamic Vinaigrette. Arrange on 6 plates. Arrange orange slices, berries, pecans and cheese over greens. Drizzle some additional dressing over salad and serve.
- If strawberries are not in season, I've substituted kiwi fruit -- I'm sure there are many fruits that you could use.
- *Note: I always line my baking sheet/pan with parchment paper -- the pecans get pretty sticky while baking and it sure makes the clean-up a snap.

QUICK AND EASY BABY BLUE SALAD
This is a quick version of Southern Living's baby blue salad that is already posted here. It's delicious and easy to make. The pecans are hard to resist on their own and would make a great snack. You can use more or less balsamic vinaigrette to suit your taste -- I like less.

Steps:
- Place pecans on baking sheet (I covered the sheet with parchment paper for easy clean-up). Coat pecans with cooking spray.
- Combine sugar and Creole seasoning and sprinkle over pecans, tossing gently.
- Bake at 350º for 15 minutes or until pecans are golden brown, stirring once. Cool thoroughly.
- Gently toss together greens, mandarin oranges, strawberries, balsamic vinaigrette, and crumbled blue cheese and top with pecans.

SPINACH SALAD WITH BLUE CHEESE DRESSING

- Preheat the oven to 350 degrees F. Soak the red onion in a small bowl of ice water, about 30 minutes. Drain and pat dry.
- Meanwhile, make the croutons: Mash the anchovies with a fork. Combine the olive oil, mashed anchovies, 1 grated garlic clove and a pinch each of salt and pepper in a medium bowl. Let stand 5 minutes. Add the torn bread and toss with your hands until the bread absorbs the oil. Spread on a baking sheet and bake, stirring halfway through, until golden brown and crisp, 20 to 25 minutes. Let cool.
- Whisk the buttermilk, sour cream, blue cheese, vinegar, parsley, the remaining grated garlic, 1/2 teaspoon salt and a few grinds of pepper in a large bowl until combined. Add the spinach, lettuce, cucumber, red onion and croutons; toss well.
