Baby Blts With Arugula Recipes

BABY BLT

Steps:

• Place bacon in a large, deep skillet. Cook over medium high heat for 6 to 8 minutes, or until evenly brown. Once cooled, crumble and set aside.
• In a bowl, stir together the mayonnaise, bacon, green onions, and parsley until well blended. Set aside.
• Cut a small slice from the top of each tomato. Using a melon baller or small spoon, scoop out the inside of each tomato and discard. Fill each tomato with the bacon mixture, and refrigerate for 1 hour. Serve chilled.

WILTED ARUGULA

Steps:

• Heat oil in a large skillet over medium heat. Add garlic; cook, stirring constantly, until garlic is fragrant but not browned, 2 to 3 minutes. Add arugula; cook, stirring constantly, until slightly wilted, 1 to 2 minutes. Add vinegar; cook, stirring constantly, until most of the vinegar has evaporated, about 1 minute. Stir in salt; season with pepper. Serve immediately.

BABY BLT'S WITH ARUGULA

Steps:

• Cook the bacon in a skillet until crisp then let drain and cool on a paper towel.
• Slice your english muffins in half and then toast or warm them to your liking.
• Spread mayonnaise onto both slices then add tomato slices, bacon, and then arugula.
