This was my attempt to make my mom's brownie recipe lower in fat. My family loves them!

½ cup all-purpose flour
6 tablespoons unsweetened cocoa powder
1 cup white sugar
⅛ teaspoon salt
2 tablespoons vegetable oil
½ teaspoon vanilla extract
1 (4 ounce) jar pureed prunes baby food
2 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square pan.
  • In a medium bowl, stir together flour, cocoa, sugar, and salt. Pour in oil, vanilla, prunes, and eggs. Mix until everything is well blended. Spread the batter evenly into the prepared pan.
  • Bake for 30 minutes in the preheated oven, or until top is shiny and a toothpick inserted into the center comes out clean.

1/2 cup all-purpose flour
1/2 cup Dutch process cocoa
1/2 teaspoon baking powder
1/2 cup sugar
1/8 teaspoon salt
2 tablespoons canola oil
4 ounces unsweetened applesauce
2 teaspoons vanilla extract
1 egg (lightly beaten)
2 egg whites

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F. Spray an 8- by 8-inch baking pan with cooking spray.
  • Whisk the flour, cocoa, baking powder, sugar, and salt in a small bowl.
  • In a medium bowl, combine the oil, applesauce, vanilla, egg, and egg whites .
  • Gradually stir the dry ingredients into the wet ingredients just until well combined.
  • Pour the batter into the prepared baking pan and bake for 20 minutes, until the sides pull away from the edge of the pan.
  • Cool in the pan and then cut into 16 squares.
  • Enjoy.

1 can (14 ounces) fat-free sweetened condensed milk
1 teaspoon vanilla extract
1-1/3 cups all-purpose flour
1-1/4 cups sugar
3/4 cup baking cocoa
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • In a bowl, beat egg substitute for 1 minute or until frothy and slightly thickened. Stir in milk and vanilla. Combine the flour, sugar, cocoa, baking powder and salt; add to the egg mixture and mix well., Pour into a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

1/4 cup unbleached flour, plus
1 tablespoon unbleached flour
1/4 cup oat bran
1/3 cup cocoa powder
3/4 cup sugar
1/4 cup instant nonfat dry milk powder
1 pinch baking soda
1/4 cup chocolate syrup
3 egg whites
1 teaspoon vanilla extract
1/3 cup chopped walnuts (optional)

Steps:

  • Combine the flour, oat bran, cocoa, sugar, milk powder, and baking soda in a large bowl, and stir to mix well.
  • Stir in the chocolate syrup, egg whites, and vanilla extract,.
  • Fold in the nuts if desired.
  • Coat an 8-inch square pan with nonstick cooking spray. Spread the batter evenly in the pan, and bake at 325 degrees fahrenheit for 23 minutes, or just until the edges are firm and the center is almost set.
  • Cool to room temperature, cut into squares, and serve.

1/2 cup cocoa powder
1 cup granulated sugar (I use Splenda)
1 egg
3/4 cup unsweetened applesauce
2 teaspoons vanilla
1/2 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Spray an 8 inch square baking dish with nonstick cooking spray.
  • Dust with cocoa, shaking out excess.
  • In a small saucepan, melt margarine on low heat.
  • Remove from heat and stir in cocoa, sugar, egg, applesauce and vanilla, beating until smooth.
  • Gently stir in flour, baking soda and salt until well combined.
  • Pour into prepared pan and bake 25 to 30 minutes or until set.
  • Cool completely and cut in 16 squares with hot wet knife.
  • Store in the refrigerator.

1/4 cup margarine, room temperature
2/3 cup white sugar
1 teaspoon vanilla extract
1 large egg, room temperature
2 tablespoons low-fat sour cream
1 jar prune baby food (this will not affect flavour in any way - I promise!)
1/2 cup flour
1/2 cup cocoa powder (use a good quality!)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 pinch salt
1/4 cup frozen mini chocolate chip (pre-freezing allows them to melt more slowly)

Steps:

  • Pre-heat oven to 350 degrees F.
  • Spray and flour the sides of an 8" x 8" square pan.
  • Cream together the margarine, sugar and vanilla extract.
  • Add the egg and sour cream and blend well.
  • Next, beat in the prunes.
  • Sift in the flour, cocoa powder, baking powder, soda and salt.
  • Blend in well.
  • Stir in the mini chocolate chips.
  • Pour into prepared pan and bake 20 to 25 minutes.
  • Do a toothpick test for doneness at around 20 minutes.
  • Don't overbake!
  • For Skor Bits (Almond Brickle) Brownies: Substitute 1/2 cup cocoa for 1/2 cup cake and pastry flour.
  • Substitute 1/4 cup mini chocolate chips for 1/3 cup Skor bits.
  • After removing from the oven, sprinkle with extra Skor bits.
  • Cut when cool.
