Some good times are spent around a good dip. It is a great way to get to eat your veggies, fruit and a few chips. Dipping, noshing, crunching all inspires good conversation, some laughter and some much needed rest.

Ingredients

for the dip:
2 avocados
2 cloves of garlic - gently grilled in skin
½ cup sour cream
juice of 1 lime
½ tsp. salt
¼ tsp. ground black pepper
¼ tsp. ground cumin

Steps:

1. To Dip: Your favorite veggies or fruit Your favorite chips Heat a small frying pan and gently let the garlic grill in the skin for a few minutes. Let the garlic cool and remove from the skin. Place all of the ingredients for the dip in a food processor and process until smooth. Prepare the veggies, fruit and chips and set up the platter.

2 ripe avocados, peeled and pitted
2 cloves garlic, minced
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ cup sour cream

Steps:

Mash the avocados in a deep bowl. Mix in garlic, salt, and black pepper. Stir in sour cream until well-blended.

"SOUR CREAM" AVOCADO DIP (VEGAN)

I made this up when I had an avocado that was getting too ripe and some leftover cilantro. It's good with chips or cut-up veggies, as a topping for mexican food or baked potatoes, etc. Totally vegan and even my husband liked it.

Ingredients

1 (12 ounce) box soft silken tofu
1 large very ripe avocado
1/2 cup bottled chunky salsa (I used Trader Joe's Garlic Salsa)
1/4 cup chopped fresh cilantro
1 tablespoon lime juice or 1 tablespoon lemon juice
1/8 teaspoon hot sauce (I used the Chipotle Tabasco)
salt and pepper, to taste

Steps:

Peel and pit avocado, put in a LARGE mixing bowl (dip is a bit splattery when blending).
Add entire block of tofu and salsa.
Combine ingredients using a hand mixer on medium speed for about 1 minute or until the mixture becomes smooth.
Add remaining ingredients, mix on low speed until all ingredients are blended together.
Chill for one hour and serve.
Store leftovers in the fridge in an air-tight container.

Steps:

Process or blend the avocado, sour cream, Parmesan, lime juice, 1 tablespoon water, cayenne and 1/2 teaspoon salt in a food processor or blender until smooth and creamy. Serve right away.
