PRALINE YAMS
I cut this recipe out of the Denver Rocky Mountain News Food Section 30-some years ago. I've made it every Thanksgiving and Christmas since. It's quick and simple to prepare (right on the stove), and a nice addition to a big dinner.

Steps:
- Heat yams, in their liquid, till hot.
- Keep hot on low heat while you mix up Praline sauce.
- Mix together the brown sugar, heavy cream, butter/oleo, pecans, salt, cinnamon, and nutmeg in a saucepan.
- Stir over medium heat till mixture comes to a gentle boil.
- Keep hot on low burner while you drain liquid off yams.
- Place yams in serving bowl.
- Pour hot Praline sauce over yams.
- Serve and enjoy!

ORANGE PRALINES
Pralines with just a subtle hint of orange -a different twist to a timeless classic. I lay a piece of waxed paper on top of a kitchen towel on my table and drop the pralines by the spoonful on top of the waxed paper. I find it's easier to pick them up this way and less likely to break.

Steps:
- Preheat oven to 350 degrees.
- Spread pecans on baking sheet and lightly toast for about 7-10 minutes.
- Remove from oven and set aside.
- In large saucepan combine sugar, half and half, salt, butter and corn syrup.
- Cook over medium heat stirring constantly until mixture reaches 235 degrees on candy thermometer.
- Add orange juice and zest and cook until it again reaches 235 degrees.
- Remove from heat, add vanilla and stir for 1 minute.
- Add pecans and stir briefly.
- Working rather quickly drop by spoonfuls onto waxed paper.
- Store in covered container.

PRALINE YAM CASSEROLE WITH ORANGE SAUCE
On one of my many cookbook /recipe searches , I found a cookbook called Americana Cookery. I liked the name , but I loved some of the recipes in it even more. Thought I might place some of them here for safe keeping and to share

Steps:
- Cook yams until tender.
- Peel and quarter yams and mash in a large bowl.
- Beat in butter, brown sugar,salt and eggs.
- Turn into a 1-qt casserole dish
- Arrange pecan halves in a pattern on top of casserole.
- Sprinkle top with 1/4 cuo dark brown sugar.
- Drizzle top with 1/4 C melted butter.
- Bake at 375* for 20 minute.
- ********************************.
- Combine sugar, cornstarch, salt, orange peel, orange juice , and lemon juice in a sauce pan.
- Bring to a boil over medium heat.
- Cook until thickened, stirring constantly.
- Remove from heat.
- Stir in butter and bitters.
- Serve warm orange sauce over casserole.
ORANGE PRALINE YAMS (TNT)
I make these every Thanksgiving. So far,it's the best yam casserole I've ever tasted.

- 1. In mixing bowl, with mixer, beat yams or sweet potatoes until smooth. Mix in remaining yam casserole ingredients, beating until mixture is light and fluffy. Butter a 12 inch porcelain quiche dish or a shallow 2 quart casserole (7 x 11 inches). Pour in yam mixture, smoothing top evenly. Make praline topping by mixing all ingredients together in small bowl. Spread evenly over yams. May be refrigerated covered overnight at this point. Bake at 350 for 45 to 50 minutes or until golden brown and bubbly. Remove from oven and let stand 10 minutes before serving. Serves 10 to 12 Notes from the cookbook: The most sensational yam casserole I ever had was served to me one Thanksgiving by Alan and Barbara Shefter in Washington, D.C. Thanks to the Shefters, my family, friends and classes have been loving it ever since. The yams are fluffy and creamy, and the praline topping is sweet, nutty, crunchy, and beautifully glazed. If you want more of this delectable casserole, double the recipe but make it in two separate casseroles so that the proportions of the filling to the topping remains correct. AUNT PHYLLIS' ORANGE PRALINE YAMS
This is a delicious dish. I had this for Thanksgiving at Aunt Phyllis'. I've made it too. It's a little more sophisticated than the usual marshmallow variety of yams (but we like that kind too)! That's the problem-we like them all! So many yams, so little time.
