Even though she has passed on, us ladies still make this same recipe today. She loved to make this with shrimp mostly, but the shrimp can be substituted with Tuna or...

Number Of Ingredients 10

1 lb elbow macaroni, cooked and drained
3 stalk(s) celery, finely chopped
1/4 large onion, finely chopped
1/2 green, yellow, orange or red bell pepper (i prefer the orange or yellow)
1 lb large shrimp, cooked, drained and chopped
if substituting tuna use 2 cans of solid white tuna, chicken, 2 large cans of chicken breast meat
1 bottle cap full of cider vinegar (if you like a more robust taste, try adding malt vinegar)
2 sprig(s) fresh curly parsley, minced
hellmans mayonnaise
salt and pepper to taste

Steps:

  • 1. Mix the cooled elbow macaroni, shrimp, onion, bell pepper and parsley together. Add several large spoonfuls of mayonnaise, vinegar, salt and pepper. Mix well. You may have to add more mayonnaise as it will be absorbed by the macaroni. Make sure that you add enough as the salad should be moist, but not too creamy. Re-season to taste as needed. Chill until served.
  • 2. Note: You will need to add mayonnaise after this sits in the fridge for a length of time as the mayonnaise gets absorbed by the macaroni. You can also add a little more vinegar if needed.

Crisp celery, peas, and scallions punctuate this version, which is sprinkled with bits of ham and ground pepper and nutmeg in this classic macaroni salad.

Coarse salt
1 pound elbow macaroni
1 1/4 cups frozen petite peas
2 celery stalks, thinly sliced crosswise
3 scallions, white and pale-green parts plus 1 inch of dark-green part, thinly sliced diagonally
6 ounces Black Forest ham, or other dry-cured ham, cut into 1/4-inch dice
1 cup mayonnaise
1/2 cup sour cream
1 teaspoon white wine vinegar
3/4 teaspoon sugar
1/4 teaspoon ground nutmeg
Freshly ground pepper

Steps:

  • Bring a large pot of water to a boil; add salt. Add macaroni; cook until al dente. Drain. Rinse with cold water, and drain. Transfer to a large bowl. Cover with plastic wrap; refrigerate until cool.
  • Thaw peas under cold running water. Drain. Toss with celery, scallions, and ham in a bowl. Add to macaroni; toss.
  • Whisk mayonnaise, sour cream, vinegar, sugar, nutmeg, and 1/4 teaspoon salt; fold into macaroni mixture. Season with salt and pepper. Salad can be refrigerated in an airtight container, up to 3 hours.

Steps:

  • In a large bowl, combine the macaroni, celery, onion, parsley and tomato, if using. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.

Steps:

  • In a large pot of boiling salted water, cook elbow macaroni according to package instructions. Meanwhile, in a medium bowl, combine mayonnaise, sour cream, cucumber, celery, dill, and lemon juice. Drain pasta, and rinse with cold water; add to bowl with mayonnaise mixture. Season with salt and pepper; toss to combine. Serve.

8 ounces elbow macaroni pasta
1/2 small red onion, cut into 1/4-inch pieces (about 1/2 cup)
2 ribs celery, cut into 1/4-inch pieces (about 1 cup), plus 1/4 cup celery heart leaves
1/2 jalapeno, seeded if desired, and finely chopped (about 1 tablespoon)
1 (5-ounce) can solid tuna in water, drained and flaked
6 tablespoons mayonnaise, preferably Hellmann's
1/4 cup low-fat buttermilk
1 1/2 teaspoons fresh lemon juice
2 tablespoons dill relish
1 teaspoon grainy mustard

Steps:

  • In a pot of boiling, salted water, cook pasta until al dente, 7 to 8 minutes. Drain, then transfer to large bowl to cool slightly.
  • While pasta cools, soak onion in cold water. Drain, then stir into pasta along with celery, celery leaves, jalapeno and tuna. Whisk together mayonnaise, buttermilk, lemon juice, relish and mustard. Toss with pasta mixture and season to taste. Refrigerate until cold, at least 30 minutes and up to 8 hours.

This is an old family recipe. My Mother used to just add pementos and salad dressing to the macaroni. My Aunt is the one that came up with the dressing that perked it up. Not health smart but colorfull for holidays and you either love it or can't stand it. Of course our family loves it.

2 cups cooked macaroni
1 jar chopped pimiento
1 cup sugar
1 teaspoon dry mustard
3/4 cup vinegar
1/4 cup water
1 egg
1/4 teaspoon salt
1 tablespoon flour
sweet gherkin (optional)
sharp cheddar cheese (optional)

Steps:

  • Mix sugar& mustard.
  • Add vinegar.
  • bring to a boil remove from heat.
  • Mix egg& flour with a little water.
  • Slowly stir into hot mixture.
  • Be careful not to curdle, strain if you do.
  • Pour over macaroni.
  • Add pimentos.
  • cool then add a little cubed sharp cheese and cut up sweet pickles if desired.
  • Dressing ingredients may be put in blender and mixed then cook until it comes to a boil over medium heat stirring constantly.

Steps:

  • Whisk together mayonnaise, sour cream, and vinegar in a large bowl; season generously with salt and pepper. Fold in peas, onion, and parsley. Refrigerate at least 4 hours.
  • Meanwhile, cook bacon in a large skillet over medium heat until browned and fat is rendered, 8 to 10 minutes. Transfer to paper towels to drain and crisp.
