MOIST BANANA MUFFINS
This recipe was given to me by my aunt. Everyone loves these moist muffins!

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
- Stir the flour, baking soda, baking powder, and sugar together in a bowl. Add the bananas, mayonnaise, and chocolate chips; stir until well combined. Pour into prepared muffin cups to about 3/4 full.
- Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes.

AUNT KELLY'S BANANA MUFFINS
I got this recipe from my sister, Kelly. Light and eggy, delicious and moist. Perfect every time. Easy to toss in an extra banana, a handful of chocolate chips or some flax seeds. Works just fine with Whole Wheat Flour and brown sugar. I have even replaced salt with sodium ascorbate crystals. THE BEST banana muffins you have ever tasted!

Steps:
- Preheat oven to 350F (also possible to save energy and just turn on heat when you've begun the baking.)
- Grease and flour and loaf pan (a spray of Pam, without the flour is sufficient).
- Cream butter with sugar.
- Add eggs and bananas and combine.
- Separately, sift together flour, baking soda and salt, then add to creamed mixture.
- Add vanilla.
- Spoon into muffin tins and bake until the tops spring back when you lightly press them. (Very) Aprox 15 minutes.

Steps:
- Heat the oven to 190C/170C Fan/gas 5. Line a 12-hole muffin tin with paper cases. Sift together the flour, baking powder, bicarbonate of soda and caster sugar with a big pinch of salt. In a separate bowl mix the melted butter, vanilla extract, eggs, mashed bananas and buttermilk.
- Make a well in the centre of the dry ingredients and pour the wet ingredients in. Roughly mix together with a fork, being careful not to over-mix. Scatter in the chopped pecans, if using, then spoon the mixture into the muffin cases. Top with pecan halves, then bake for 20-25 mins, until golden brown. Cool on a wire rack.

KITTENCAL'S BANANA-ALMOND MUFFINS WITH ALMOND STREUSEL
To save some time prepare the topping in advance and refrigerate. You should get around 10-12 muffins depending on the size of bananas you use, the yield is only estimated, 1 cup of sugar will give you a sweet muffin you may reduce the sugar if desired --- these bake out high and moist with lots of flavor and are one of my family's all-time favorite muffins, you will love these!

- Set oven to 350 degrees F.
- For the topping; in a bowl mix together the flour, brown sugar and cinnamon; blend in the soft butter using your fingertips, then add in the finely chopped almonds; set aside.
- Line 12 regular muffin tins with paper liners.
- In a medium or large bowl, sift together flour, baking powder, baking soda, salt and cinnamon.
- In another bowl beat the melted butter with sugar, egg and vanilla extract until well blended (about 2 minutes) add in the mashed bananas, mix until just blended.
- Using a wooden spoon mix in the flour mixture until JUST blended (the batter will be lumpy).
- Mix in the chopped almonds.
- Divide the batter evenly between 12 muffin tins, then sprinkle the topping mixture on top of each muffin.
- Bake for about 20 minutes, or until muffins test done.

- Whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a medium bowl. Set aside. In a large bowl or in the bowl of your stand mixer, mash the bananas. On medium speed, beat or whisk in the melted butter, brown sugar, egg, vanilla extract, and milk. Pour the dry ingredients into the wet ingredients, then beat or whisk until combined. If adding nuts or chocolate chips, fold them in now. Batter will be thick.
- Spoon the batter into liners, filling them all the way to the top. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 16-18 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 21-23 minutes, give or take.
