AUNT MARY'S OLD FASHIONED SUGAR COOKIES

A classic recipe made even better with stoneground flour. Recipe can be halved or quartered.

Number Of Ingredients 8

2 cups sugar
2 cups butter
4 eggs, room temperature & well beaten
Juice of half a lemon
5 cups flour, spooned in
2 tsp baking soda
2 tsp cream of tartar
1 tsp salt

Steps:

  • Cream butter and sugar until fluffy. Add eggs, one at a time, then the lemon juice.
  • In another bowl sift together the flour, baking soda, cream of tartar and salt.
  • Gradually add the dry ingredients to the creamed mixture and mix well.
  • Gather dough into a ball, divide in half and pat into two disks. Chill for an hour or overnight.
  • Roll out dough on a floured surface ¼ to ½ inch thick. Cut into shapes. Transfer cookies to a parchment lined baking sheet and bake for about 10 minutes. (Watch closely, you don't want them to get too brown.)
  • Cool and paint with tinted icing and decorative sprinkles.

Sugar Cookies With Almond Frosting image

Number Of Ingredients 14

2 cups all-purpose flour
1/2 teaspoon baking soda
Pinch of salt
2 sticks unsalted butter, at room temperature
1 cup granulated sugar
1 large egg, at room temperature
1 teaspoon vanilla extract
1 teaspoon almond extract
1 stick unsalted butter, at room temperature
1 1/2 teaspoons almond extract
1 1/2 teaspoons vanilla extract
1/2 teaspoon salt
1 3/4 cups confectioners' sugar, sifted
Silver nonpareils or Jordan almonds, for topping

Steps:

  • Make the cookies: Whisk the flour, baking soda and salt in a medium bowl. Beat the butter and granulated sugar in a stand mixer fitted with the paddle attachment on medium speed until fluffy. Beat in the egg, then beat in the vanilla and almond extracts. Reduce the mixer speed to low; add the flour mixture and beat until combined. Cover and chill 1 hour.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Scoop 1-inch mounds of dough onto the prepared baking sheets, about 2 1/2 inches apart; flatten the mounds with your fingers. Bake until the cookies are golden around the edges, about 10 minutes. Let the cookies cool 10 minutes on the baking sheets, then transfer to racks to cool completely.
  • Make the frosting: Beat the butter, almond and vanilla extracts, and salt in a stand mixer fitted with the paddle attachment on medium speed until light and fluffy. Add the confectioners' sugar and beat until smooth and creamy. Transfer to a piping bag fitted with a small star tip. Pipe the frosting onto the cooled cookies and top with nonpareils or Jordan almonds.

This icing dries hard and shiny and the colors stay bright. Choose as many different food colorings as you desire.

1 cup confectioners' sugar
2 teaspoons milk
2 teaspoons light corn syrup
¼ teaspoon almond extract
assorted food coloring

Steps:

  • In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.
  • Divide into separate bowls, and add food colorings to each to desired intensity. Dip cookies, or paint them with a brush.

  • In a large bowl, cream together the confectioners' sugar and shortening until smooth. Gradually mix in the milk and vanilla with an electric mixer until smooth and stiff, about 5 minutes. Color with food coloring if desired.

This is my great-grandmother's sugar cookie recipe.

3 cups sifted all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
1 cup white sugar
1 cup butter
1 egg, lightly beaten
3 tablespoons cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C) .
  • Over a large bowl, sift together all-purpose flour, baking powder, salt, sugar. Cut in butter and blend with a pastry blender until mixture resembles cornmeal. Stir in lightly beaten egg, cream, and vanilla. Blend well. Dough may be chilled, if desired.
  • On a floured surface, roll out dough to 1/8 inch thickness. Sprinkle with sugar; cut into desired shapes. Transfer to ungreased baking sheets.
  • Bake for 6 to 8 minutes, or until delicately brown.

1/2 cup shortening
1 cup sugar
1/2 cup butter
3 eggs
3 1/2 cups flour
2 tsp cream of tartar
1 tsp baking soda
1 tsp salt
1 tsp almond extract

Steps:

  • 1. Mix dry ingredients and hold. 2. In mixer, blend top ingredients. 3. If adding color, add now. 4. Gradually add in flour mixture. 5. Chill for 1 hour. 6. Roll out between two sheets of parchment paper. Trim paper so fits on baking sheet. Move to baking sheet before cutting. 7. Cut out cookies, dipping cutter in flour. 8. Chill 10 minutes. 9. Remove excess dough. 10. Chill 10-30 minutes before baking (my guess is this keeps it from rising as much in the oven). 11. Bake on parchment paper at 400 for 8 minutes (check at 5 min.) No need for greasing pan if not using parchment paper.
