AUNT BETTYE'S FAMOUS CROCK POT MACARONI AND CHEESE
This is a crock-pot method for my aunt's macaroni and cheese. I use a Rival 5 Qt Crock pot, and have successfully doubled this recipe without changing the cooking time.

Steps:
- Boil macaroni for 5 minutes, should be slightly undercooked, thoroughly drained and rinsed.
- Pour macaroni into slow cooker and toss thoroughly with butter, to coat all macaroni and the crock.
- Toss macaroni with the shredded Velveeta.
- Pour in the soup, and toss some more.
- Top with shredded cheddar, but keep it away from the sides of the crock.
- Cook on 'high' for 90 minutes.

BETTY'S MACARONI SALAD RECIPE

Steps:
- Cook the macaroni in salted water according to package directions. Drain and rinse under cold water to cool. Set aside. Mix together mayo, vinegar, sugar, salt, and pepper. Taste and adjust seasonings as needed. Set aside. Place cooled macaroni in a large bowl and pour in dressing. Toss. Stir in olives, red peppers (or pimentos), relish, cheese and green onions. Chill for at least 2 hours before serving.
AUNT BETTY'S CREAMY TO DIE FOR BEEF CASSEROLE
My aunt Betty makes this amazing casserole. Though hard boiled eggs and chipped beef are hardly haute cuisine, I think you'll agree after trying this one that the flavor is outstanding. You have to mix this up and refrigerate it overnight before baking it to fully enhance the flavors. Do not add any salt--the beef and the soup are salty enough. You may want to rinse the beef before adding it to the casserole as it is quite salty. Add a green salad and "presto" dinner is ready. Prep time is minimal but you need to mix this up the day before you want to bake it.

- Put soup in a 2 quart casserole dish.
- Stir until creamy.
- Gradually add milk, stirring well.
- Add cheese, macaroni, onion and beef; blend well.
- Fold in sliced eggs.
- Cover and store in the refrigerator at least 3 hours or overnight.
- Stir briefly and bake uncovered at 325°F for one hour.

AUNT BETTY'S FRUIT SALAD
My aunt made this for years for us for the holidays, and it was always a SPECIAL treat! I know if you make it once you will have to make it again:)

Steps:
- Drain the canned fruit. Use up to 2 cups of it for 2 cups of the liquid in the jello.
- Make up the jello using 2 cups of boiling water, and 2 cups of juice from the canned fruit, mixing well.
- Put into the mold.
- Refrigerate for about 1 1/2 hrs., or until jello is partially set.
- Stir in the drained fruit and nuts, and refrigerate until set.
- When ready to serve, tip bottom of mold into hot water for a few seconds. This will help to release mold onto serving plate.
- When ready to serve, place serving plate on top of mold and invert.
- Serve.

BETTY'S SALAD
Betty's Salad is a regional, Midwest salad created by Betty Timko and featured as a menu item at her restaurant, Timko's Soup and Such, in Toledo, Ohio. The restaurant was located in a brick building at the Northwest corner of Sylvania and Douglas Roads of the Devaux Village strip mall in West Toledo. After Betty died, the restaurant closed, and her signature salad dressing is still produced and distributed at regional grocery stores.

- Layer salad ingredients in order listed below.
- Half (1/2) Package Spinach
- Six (6) Hard Boiled Eggs, sliced

Steps:
- Cook macaroni as directed on box. Mix together the mustard, mayonnaise, milk, vinegar, and salt. Cook the eggs till hard boiled. Chop the celery, onion, tomatoes and eggs. Toss macaroni, celery, onion, tomatoes and eggs together in bowl. Add mayonnaise mixture. Chill at least 2 hours before serving.
