VEGETABLE DETOX SOUP
Vegetable Detox Soup is an easy one pot recipe perfect for getting back on track for the new year! Best of all, it's comforting, flavorful and packed with lots of healthy vegetables.

Steps:
- In a large pot, add oil and turn on the heat to medium-high. Add the onion, garlic and ginger. Sauté for 2 minutes, stirring occasionally. Add the celery, carrots, broccoli and cauliflower. Stir and cook for about 2-3 minutes, until slightly softened. Stir in the turmeric and diced tomatoes.
- Add water and bring to a boil. Reduce heat and simmer for 15-20 minutes or until vegetables are soft. Stir in the Italian seasoning, salt and pepper to taste, kale, cabbage and lemon juice near the last 2-3 minutes of simmering.
- Serve hot with chopped parsley.

ASTRAGALUS VEGETABLE SOUP (DETOX SOUP)
Broccoli and tomato is considered a great anti-oxidant pair. They are reputed to aid in cell repair, balance blood pressure and lower blood sugar. However, they are not suitable for everyone. Those with kidney problems should avoid them. This astragalus vegetable recipe tells you to remove the tomato skin because it is not easily digested. This is good for people who have digestive issues or for the elderly. If you like the skin (like me), you can skip that step. Astragalus root, known as 黄芪 huang qi in mandarin, is a common chinese herb used to boost the immune system and helps relieve fatigue. If you are new to it, add just a little so that the taste is not too strong.

Steps:
- Wash the broccoli and cut into little florets.
- Wash the mushrooms and cut in half.
- Wash the tomato, remove the skin by scoring the skin with a knife and blanch the tomato with hot water and cold water. The skin should shrink from the fruit making it easy to remove. Cut the fruit into quarters.
- Bring the astragalus and water to boil. Lower the heat and cook for 10 minutes. Strain off the root and keep the broth then add the rest of the ingredients to the broth.
- Add the tomato and mushrooms and cook a further 15 minutes.
- Lastly, add the broccoli, turn up the heat and cook till broccoli is done.
- Add salt to taste.

- In a large soup pot, heat olive oil (or water) over medium heat. Add onions, garlic, and ginger and sauté for about 5 minutes, stirring often, until onions are fragrant and translucent. Add the celery, carrots, and cauliflower and sauté for another 5 minutes until the vegetables are slightly tender.
- Add the vegetable broth, tomatoes, chickpeas. Bring to a boil. Reduce heat to a simmer, cover, and let cook for about 20 minutes, until the cauliflower is cooked all the way through.
- Remove from the heat and stir in the spinach. Season with salt and pepper. Taste and adjust seasonings. Let soup cool 10 minutes before serving.
