1 ½ teaspoons dried oregano
1 teaspoon dried thyme
½ teaspoon dried basil
½ teaspoon dried marjoram
½ teaspoon dried minced onion
¼ teaspoon dried minced garlic

Steps:

  • Combine oregano, thyme, basil, marjoram, onion, and garlic in a small bowl. Store in an airtight container in a cool, dry place up to 6 months.

From the village of Olympi on the island of Chios. Adapted from The Food of the Greek Islands. Posted for ZWT6. 1/4 cup crushed red pepper flakes and 3 tablespoons paprika may be substituted for the Aleppo pepper.

7 tablespoons aleppo pepper
1/4 cup dried oregano
2 tablespoons fennel seeds (crushed or ground)
2 tablespoons dried orange zest
1 tablespoon dried basil
1 tablespoon dried mint

Steps:

  • Combine all ingredients.
  • This will keep up to 6 months in a sealed jar in a cool dark place.

This is close to Cavendar's Greek Seasoning except without the MSG. Some discussion that MSG causes appetite increase as well as other issues so I am eliminating it, but do love the greek seasoning. I have found I like this mix better than the original so I have not tried to adjust to match the taste perfectly.

4 teaspoons salt
2 teaspoons oregano
1 1/2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons black pepper
1 teaspoon dried parsley
1 teaspoon cornstarch
1/2 teaspoon dried thyme

Steps:

  • Blend in coffee or spice grinder and store in spice bottle. Great on salads, cooked veggies (in particular summer squash), pasta with olive oil, home made pizza, etc.
