Categories     Garlic     Herb     Vegetable     Roast     Vegetarian     Gourmet

Yield Makes 8 (hors d'oeuvre) servings

Number Of Ingredients 8

2 medium heads garlic, left whole
1 tablespoon olive oil
1 1/2 cups mayonnaise
2 teaspoons apple-cider vinegar
1/2 teaspoon black pepper
1/4 teaspoon salt
3 tablespoons chopped fresh chives
2 lb medium asparagus, trimmed

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Cut off and discard tops of garlic heads to expose cloves, then brush each head with 1/2 tablespoon oil. Wrap heads together in foil and bake until tender, about 45 minutes. Cool to warm.
  • Squeeze garlic from skins into a food processor and purée with mayonnaise, vinegar, pepper, and salt. Transfer aioli to a bowl and stir in chives.
  • Peel lower two thirds of each asparagus stalk with a vegetable peeler. Cook asparagus in a wide 6- to 8-quart pot of boiling salted water, uncovered, until crisp-tender, about 5 minutes. Drain well in a colander and rinse under cold water until asparagus is cool. Drain and pat dry with paper towels. Serve asparagus with roasted-garlic aioli.

ASPARAGUS WITH TOASTED SESAME AIOLI

Asparagus With Toasted Sesame Aioli image

Here's a great appetizer for springtime entertaining. The bold, toasty sesame oil adds depth to the classic garlic-lemon sauce. Arrange the crisp-tender asparagus spears, tips up, in a tall, clear glass, with the sesame sauce nearby, served in a radicchio leaf cup to add color. The asparagus can be cooked up to 1 day in advance. The sauce will keep for up to 1 week in a covered container in the refrigerator. Bring both to room temperature for serving.

ASPARAGUS WITH TOASTED SESAME AIOLI

ASPARAGUS WITH TOASTED SESAME AIOLI image

Categories     Vegetable

Number Of Ingredients 12

16 medium-thick asparagus spears (about 12 ounces), trimmed to even lengths (see Tips)
TOASTED SESAME AIOLI:
1/4 cup mayonnaise
1 tablespoon Asian sesame oil (see Tips)
2 teaspoons soy sauce
2 teaspoons fresh lemon juice
1 teaspoon toasted sesame seeds (see Tips)
1/2 teaspoon minced fresh ginger
1 clove garlic, minced, or 1/2 teaspoon prepared minced garlic
TO COMPLETE THE RECIPE:
1 radicchio leaf (optional)
Additional toasted sesame seeds for garnish

Steps:

  • Steam the asparagus in a covered steamer over boiling water until crisp-tender, about 4 minutes. Or, put the asparagus in a microwave-proof dish; add about 2 tablespoons water. Cover tightly and microwave on high for about 3 minutes. Drain well. Rinse with cold water and drain again. Meanwhile, make the aioli: Stir together all the aioli ingredients in a small bowl until smooth. To serve, arrange the asparagus spears in a tall, clear glass container. Spoon the sauce into a radicchio leaf or a small dish, garnish with sesame seeds, and place nearby for dipping. Toasting gives sesame seeds a slightly crispy texture and a nutty flavor. Put the seeds in a dry skillet over medium-high heat and toss constantly until they are lightly browned, about 3 to 5 minutes. Or, toast them on a jelly-roll pan in a preheated 350°F oven for about 10 minutes. Shake the pan or stir the seeds occasionally while toasting. Immediately transfer the seeds to a bowl. It takes the same amount of time to toast 1 tablespoon or 1/2 cup, so toast extra seeds, store them in an airtight container, and refrigerate or freeze for up to 6 months.

ASPARAGUS FRIES WITH GARLIC AIOLI

Asparagus Fries with Garlic Aioli image

A healthier alternative to conventional french fries, these asparagus fries are baked and offer more fiber, vitamins, and minerals.

Yield 6 servings

Number Of Ingredients 14

For the asparagus:
1 pound fresh asparagus
7 ounces panko breadcrumbs
1 teaspoon ground black pepper
¼ teaspoon salt
For the vegan egg:
2 tablespoons flaxseed meal
7 teaspoons water
For the aioli sauce:
1 cup Best Foods® Carefully Crafted Dressing and Sandwich Spread
3-4 garlic cloves, minced
2 teaspoons fresh parsley, finely chopped
1 teaspoon extra-virgin olive oil
¼ teaspoon salt

Steps:

  • In a small bowl, add the flaxseed meal and water and with a spoon, stir until combined. Let it sit until thickened, about 3-5 minutes. In the meantime, combine the aioli ingredients in a small bowl. Set aside.
  • Preheat oven to 375°. Line a baking sheet with parchment paper and set aside.
  • On a flat plate, combine the panko breadcrumbs, salt, and pepper.
  • Dip each asparagus spear in the vegan egg mixture until thoroughly coated, then dip in the breadcrumbs, pressing to secure them to the asparagus. Transfer the asparagus to the prepared baking sheet. Repeat the breading process with the remaining asparagus, spacing spears about 1 inch apart on baking sheet.
  • Bake for 15 minutes. To finish the fries, set the broiler to high and broil the asparagus for 2-3 minutes, turning once on each side until golden brown and crispy. Remove asparagus fries from oven and serve immediately with the prepared garlic aioli.
