"Here's one of my very favorite recipes for that first early-spring asparagus," writes Marie Hattrup from Sparks, Nevada. "Stir-frying keeps the texture crisp but tender; lemon and soy sauce make for a light tasty coating, and the toasted almonds add a flavorful crunch."

1 tablespoon olive oil
3 cups cut fresh asparagus (1-inch pieces)
1 small onion, sliced
1 garlic clove, minced
2 tablespoons sliced almonds, toasted
2 teaspoons lemon juice
1 teaspoon soy sauce
1/2 teaspoon grated lemon zest
1 tablespoon shredded Parmesan cheese

Steps:

  • In a skillet or wok, heat oil; stir-fry the asparagus, onion and garlic over medium-high heat until tender. Add the almonds, lemon juice, soy sauce and lemon zest; toss gently to coat. Sprinkle with Parmesan cheese.

2 tablespoons sliced almonds
4 teaspoons olive oil, divided
1 pound fresh asparagus, cut into 2-inch pieces
1/4 cup water
1 teaspoon sugar
1/4 teaspoon salt
Dash pepper
1 teaspoon lemon juice

Steps:

  • In a large skillet, saute almonds in 1 teaspoon of oil until lightly browned; remove and set aside. In the same skillet, saute asparagus in the remaining oil for 1 minute. Add the water, sugar, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 3-4 minutes or until asparagus is tender. Drain. Sprinkle with lemon juice; top with almonds.

2 bunches asparagus spears
2 tablespoons butter
1 ounce slivered almonds
1/4 cup lemon juice

Steps:

  • Wash asparagus spears and trim off about 1/2″ of the end.
  • Fill a medium sized skillet with 1″ of water. Bring to a boil over medium high heat. Add asparagus spears and cover. Cook for about 4 to 5 minutes until crisp tender. I prefer thin asparagus but if you use thicker, increase the cook time to about 7 to 8 minutes.
  • Drain asparagus and set aside.
  • Melt butter in a medium sized skillet and add slivered almonds. Cook and stir for about 3 minutes or until almonds are lightly browned. Remove from heat and stir in lemon juice.
  • Place asparagus in a serving dish and pour almond and lemon juice over. Serve warm.
  • Serves 4 to 6.

1 1/3 pounds/600 grams asparagus, woody ends trimmed
3 tablespoons olive oil
Salt and black pepper
2 tablespoons/30 grams unsalted butter
Scant 1/4 cup/20 grams sliced (flaked) almonds
3 tablespoons/30 grams baby capers, patted dry on paper towels (kitchen paper)
1/4 to 1/2 cup/5 to 10 grams roughly chopped fresh dill

Steps:

  • Heat oven to 425 degrees Fahrenheit/220 degrees Celsius. Line a baking sheet (baking tray) with parchment paper.
  • In a large bowl or on a work surface, use your hands or tongs to toss the asparagus with 1 tablespoon oil, a generous pinch of salt and a good grind of pepper. Arrange asparagus in the paper-lined pan, spaced well apart, and roast, shaking the pan occasionally, until asparagus is soft and starting to brown in places, 8 to 12 minutes, depending on thickness. Remove from oven and set aside in the pan.
  • In a small or medium saucepan, melt the butter over medium heat until foamy. Add almonds and fry, stirring frequently, until golden brown, 1 to 2 minutes (reduce heat as needed to prevent scorching). Pour almonds and butter evenly over asparagus.
  • Add remaining 2 tablespoons oil to the pan and heat over high heat. Once hot, add the capers and fry, stirring continuously, until they have opened up and become crisp, 1 to 2 minutes.
  • Using a slotted spoon, remove capers from the oil and sprinkle over the asparagus. Add dill. Using tongs or two spoons, mix gently to combine, transfer to a large plate and serve warm.

The author uses Sunkist Almond Accents Sliced Almonds to add to the flavor and noted the original recipe called for saltines, but her mother substituted Wheatsworth crackers. I think I will go with Ritz or club crackers. Do your own thing and enjoy.

3/4 cup milk
3/4 cup asparagus liquid
3/4 cup mayonnaise
3 (15 ounce) cans asparagus
5 hard-boiled eggs, sliced
3/4 cup blanched almond
3/4 cup cracker crumb

Steps:

  • Melt butter in skillet.
  • Add flour and blend.
  • Add milk and asparagus liquid.
  • Cook over low heat until thick.
  • Add mayonnaise and mix well until sauce is formed.
  • In bottom of 2-quart baking dish arrange a layer of asparagus, eggs, and almonds.
  • Cover with half of the sauce.
  • Repeat.
  • Top casserole with cracker crumbs.

1/2 cup almonds, sliced
2 tablespoons extra virgin olive oil
2 garlic cloves, finely chopped

Steps:

  • Bring a large pot of slightly salted water to a boil.
  • Snap off and discard the ends of the asparagus. Cut trimmed asparagus spears on a diagonal into 2-inch-long pieces.
  • Cook asparagus in boiling water until crisp-tender, about 4 minutes.
  • Drain and rinse under cold water. Pat asparagus dry with paper towels.
  • Heat a large skillet over medium-heat. Add almonds and cook, stirring occasionally, until toasted (abour 3 minutes). Transfer to a plate.
  • Heat oil and garlic together in a large skillet over medium heat until garlic begins to brown, about 2 minute Add asparagus and cook, stirring often, until heated through, about 5 minutes. Stir in almonds. Season with salt and pepper and serve hot.

1 lb medium to thick asparagus (don't try to use the thin stuff for this)
1/4 teaspoon salt (to taste)
1 pinch sugar
1 teaspoon sliced or slivered almonds, lightly toasted
2 scallions, thinly sliced on the diagonal
2 -3 teaspoons vegetable oil

Steps:

  • Snap off and discard the tough ends of the asparagus.
  • Slice the rest on the diagonal (or, if you know how to do it, use the Chinese rolling cut).
  • Parboil for about two minutes.
  • Rinse in cold running water to stop the cooking process and drain.
  • (Can be done well ahead of time).
  • Heat the oil and toss the scallions for 15- 20 seconds.
  • Add the parboiled asparagus and stir fry on high flame until thoroughly heated.
  • Stir in the salt& sugar, then the almonds.
  • Serve immediately.
  • (Note: this dish can also be made with many other vegetables. Green beans work particularly well).
